SAUSAGE GRAVY
Grandma's own! Adjust the milk to the thickness you like. Works with bacon, too. Serve hot over freshly baked biscuits!

Steps:
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

- Add flour; stir until absorbed by the mixture. Add milk and pepper. Increase heat and stir until heated through and thick, about 5 minutes.

I received this recipe from an elderly Southern Lady that worked for me 20 years ago, long before Sausage Gravy became popular around here. I have received many compliments when I serve this. I would definitely use a sage sausage. We like Bob Evans the best.

- Add flour and brown.
- Add milk and water.
- Simmer until it is the thickness you desire.

SOUTHERN HOMESTYLE SAUSAGE GRAVY
This is my mother's recipe. She made this my whole life. It's wonderful. My daddy used to always say he ate it in the army but they use to call it something a little different. When I got a little older I found out it was called "sh.. on a shingle". I'm sure you've all heard of this before. Anyways it made me laugh, still does. I hope you enjoy this.

- Fry sausage until golden brown.
- Add bacon grease, then flour to the grease and cooked sausage.
- Stir until blended.
- Cook until raw flavor of the flour cooks out (about 2 or 3 minutes, not too brown though).

- Spray a waffle iron with cooking spray; preheat according to manufacturer's instructions.
- Mix Cheddar cheese, eggs, baking mix, milk, coconut flour, and salt together.
- Cook in 1/2 cup batches in the preheated waffle iron until waffle is golden brown and the iron stops steaming, about 5 minutes.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. I received this recipe at a cooking show that was being sponsored by Rhodes Bread. I've made a couple of tweaks to the original recipe & it's a real hit in my house. Due to the mushrooms & basil, it's perfect for when you want breakfast for dinner. It's best served hot over your favorite freshly baked biscuits. I also prefer to make it in an iron skillet, being a Southerner it just seems to make it taste better!

Steps:
- In a large skillet or pan over medium heat, cook sausage, mushrooms, onion, and garlic until sausage is no longer pink.
- Drain fat off of sausage mixture (if you use a chicken or turkey sausage there may be very little or no fat at all to drain off).
- Stir in flour and sugar until sausage mixture is well coated.
- Gradually add milk, stirring constantly.

OTORO'S ULTIMATE SAUSAGE GRAVY
This is classic Southern-style sausage gravy; two thumbs up from my relatives in Tennessee and Kentucky. I'm very proud. It's quick, easy and delicious. Besides the sausage, all other measurements in this recipe are approximate, I don't measure the flour or milk. And a note on the milk: do not use skim, it won't come out right. Spoon this gravy over biscuits, toast or just about anything.

Steps:
- Heat a 10" to 12" skillet over medium high heat and add sausage.
- Break up sausage with a wooden spoon. Add onion after a minute or two.
- Once the sausage is cooked, use a teaspoon to heavily dust the sausage with flour.
- Stir to incorporate the flour, you want it to coat the sausage and soak up the grease.
- Once the flour has turned a very light brown (about 2-3 minutes) add the milk and bring to a boil.
- Turn the heat down to medium and continue to stir, it should thicken up quite quickly. If the gravy seems to thick, add more milk.
- Add the hot pepper sauce (I like Frank's) and 8-10 grinds of coarse black pepper. Stir and serve immediately. Bon Appetito.
