FAVORITE OLD FASHIONED GINGERBREAD
This is everyone's holiday favorite, even the busy cook's, because it is so easy to make.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

Steps:
- In a medium mixing bowl beat sugar and shortening together until fluffy.
- Add egg and molasses; beat until combined.
- Combine the flour, baking soda ginger, 1/2 teaspoon cinnamon, salt, and cloves.
- Add to sugar mixture; beat until smooth.
- Stir in the hot water.
- Pour 1 to 1/4 cups batter onto grids of a preheated, lightly greased waffle baker.
- Close lid quickly;do not open until done.
- Bake according to manufacturer's directions.(Do not overbake.).
- When done,use a fork to lift waffle off grid.
- Repeat with remaining batter.
- If desired serve warm with with sweeten whipped cream and additional cinnamon.
- Makes eight 4-inch waffles.

- Serve with whipped cream, lemon curd, and maple syrup.

- Beat eggs and sugar until thick and foamy.
- Stir in buttermilk and molasses.

- Cook until done.

- In a mixing bowl, sift together flour, brown sugar, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In another mixing bowl, combine eggs, buttermilk, and molasses. Beat in melted butter.

MEMO'S MOLASSES COOKIES
Delicious, soft, melt-in-your-mouth cookies. This is actually a vintage WWII Brer Rabbit "Molasses Sugar Cookie" recipe from when sugar was rationed. As odd as it seems, DO use butter-flavored SHORTENING and NOT butter, the taste is buttery anyway and shortening will give you that perfect texture. Chilling the dough is also a must. Original recipe says "yields 4 dozen", but we only end up with 2 dozen. Prep time doesn't include chilling time. Family Note: Memo is Mom-Mom's mother: Verdis Pierce Reasoner.

Steps:
- Melt shortening, cool. Add sugar, molasses and egg; beat well.
- Sift dry ingredients, add to first mixture and mix well.
- Chill thoroughly (for at least a few hours, we chill overnight).
- Form into 1" balls, roll in granulated sugar and place on greased cookie sheet 2-3 inches apart.
- Bake at 375 degrees for 7-8 minutes. Cookies should be light, pillowy and soft, not dark and crispy.
