SAUERKRAUT WITH POLISH SAUSAGE
This is our favorite sausage and sauerkraut dish ever. It's very filling and smells wonderful while it's cooking. From the Orbit Restaurant (Polish) in Chicago.

Steps:
- Preheat oven to 300ºF.
- Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
- Saute until onion is tender but not brown, about 5 minutes.
- Squeeze as much liquid as possible from sauerkraut.
- Add sauerkraut to Dutch oven.
- Add wine, stock, caraway seeds and juniper berries.
- Bring to simmer.
- Cover tightly, place in oven and bake 1 hour.
- Add kielbasa to Dutch oven, pushing into sauerkraut.
- Cover and bake 1 hour.
- Season to taste with salt and pepper.
- (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring frequently).

- In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut and pepper. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally.

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling, about 1 hour.

- In a medium bowl, combine the sauerkraut and brown sugar. then place in slow cooker. Arrange the sausage and onion over the sauerkraut.
- Cook on high for two hours, check for dryness, adding some water if necessary, then reduce to low setting, and cook on low for two more hours.

This recipe was belonged to my grandmother and when I was an teenager and she was cooked those polish sausage with sauerkraut and I haven't eat sauerkraut before and she wanted me to tried to tasted it so I did and it is so delicious and tasty. I fixed some and my famliy and I love it.

- In a large saucepan, cover the potato cubes with water and boil until just slightly tender, 5-7 minutes. Drain the potatoes and set aside.
- In a large, non-stick skillet, add the Polish sausages and 1/2 cup of water. Cook the sausages over medium heat until the water evaporates. Then pan-fry the sausage until golden. (7-10 minutes total) Remove the sausages from pan.
- If the sausages did not release much grease, heat 1 tsp of butter in the pan.
- Add the onions and sauerkraut and saute until dry and golden, 3-5 minutes. Push onion mixture to one side of the pan.
- Add the remaining 2 tsp of butter to the empty side of the pan and add the boiled potatoes. Gently toss the potatoes in the hot butter before mixing all the ingredients in the pan together.
- Let mixture fry, stirring every 1-2 minutes, until the potatoes are golden and begin to crisp, 4-5 minutes.
- Taste the hash and season with salt and pepper, as desired.
- Return sausage to the pan and heat for 1-2 minutes. Serve hot!

SAUSAGE AND KRAUT

- Soak the sauerkraut in a bowl of warm water. Cover the potatoes with water in a small saucepan and simmer over medium heat until tender, about 10 minutes. Drain and keep warm.
- Meanwhile, heat the vegetable oil in a large pot over medium-high heat. Prick the sausages with a fork and add to the pot along with the pork; cook until browned on one side, about 4 minutes. Turn the meats and add the onion, garlic, coriander, juniper berries, and salt and pepper to taste. Cook until the onion is golden brown, about 6 minutes. Add the apple and cook 2 more minutes.

BRENT'S POLISH SAUSAGE AND SAUERKRAUT

- - Peel potatoes. - Boil potatoes in large pot for 15 minutes or until tender. - Drain potatoes and leave in pot. - Cut slices of apples and onion. - Melt half a stick of margarine in a pan. - Place sauerkraut, apples, and onions in buttered pan. - Add brown sugar on top. - Mix everything and sautee until sauerkraut is browned and onions clear. - When about halfway done, melt the other half of the margarine stick into the sauerkraut mix. - Cut kielbasa sausages into small slices. - Brown kielbasa slices while sauerkraut mix is sauteeing. - Once sauerkraut mix and kielbasa slices are done, mix them all in the pot with the potatoes. - Continue cooking entire mix on medium for about 5-10 minutes and mix everything together.

- Drain sauerkraut and pour in a large pot with bay leaves and peppercorns. Add just enough water to cover. Boil over low heat for half an hour.
- Add the dried mushrooms to a half cup of water in a small saucepan, bring it to a boil, cover with lid, turn off heat, and let them soak until ready to add to the sauerkraut.

- Ingredients! Nothing too fancy in this one: 4 large or 8 small sausages of the kielbasa or bratwurst variety. two good handfuls of sauerkraut (about 2 cups, I would guess)
- Brown the Sausages! Heat a pan over medium heat, add a tiny bit of oil if you like, and cook the sausages for about five minutes or so. Stir them often so they get brown all over.
- Add Onions and Cook Until Softened. Cook them until they begin to get translucent and soft. :) This will take another five minutes or so... make sure to stir them around quite often.
- Add the Sauerkraut. How you process the sauerkraut in this step is up to you. Some people like to rinse then squeeze their sauerkraut, and some people choose to just squeeze out the excess liquid.
- Add Water and Vinegar and Simmer. Add about 1/3 cup of water and the vinegar to the pan and mix well. Let cook on low heat, stirring often, until the water is mostly evaporated.
- Serve! I especially like this with mustard and boiled potatoes. Would also be good as a filling for a sandwich! :D It also keeps well for a few days, so you could have a delicious but stinky lunch at work.
