- Combine potatoes, 2 cups olive oil, and 3 teaspoons salt in a large cold skillet. Heat on low and cook until potatoes are softened, 12 to 15 minutes. Increase heat to high and fry until golden, 5 to 6 minutes. Drain on paper towels.
- Heat 3 tablespoons olive oil in a large saucepan over medium heat. Cook and stir onion with 1 teaspoon salt in the hot oil until onion has softened, 3 to 4 minutes. Add garlic, chile, and smoked paprika; simmer for 1 to 2 minutes. Stir in tomatoes and return to a simmer. Transfer tomato mixture to a blender, cover, and puree until tomato sauce is smooth.
- Serve patatas bravas with tomato puree and and mayonnaise for dipping.

TURKISH KEBABS
This is my version of Turkish kebabs which I made 'off the cuff' after searching unsuccessfully for a recipe online. The original sandwiches are made from meat that is pressed into a loaf and grilled on a rotating spit. The meat is shaved off as it gets crispy and then put into a pita sandwich. My recipe calls for thin slices of meat to be marinated and then broiled to get the same effect without a huge rotating grill. Serve in a warmed pita with goat cheese, tzatziki sauce, lettuce, tomatoes, onions, and pepperoncinis.

- Place the chopped onions in a large ceramic bowl and crush with the bottom of a glass until juice is rendered and onions look translucent. Stir in 2 crushed garlic cloves, 1/2 cup olive oil, 2 tablespoons lemon juice, oregano, 1 teaspoon black pepper, turmeric, curry powder, and 1 teaspoon salt. Mix well; add the sliced beef and toss to coat. Cover the bowl with plastic wrap, and marinate in the refrigerator overnight.
- Combine the sour cream, 2 tablespoons olive oil, 1 tablespoon lemon juice, 1/2 teaspoon salt, 1/2 teaspoon black pepper, dill, and 1 crushed clove of garlic. Mix well; cover the bowl with plastic wrap and refrigerate overnight.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Remove the meat from the marinade mixture, brushing off extra onions. Spread the slices on a baking sheet without overlapping, and salt to taste. Broil about 3 minutes per side or until browned and crispy, turning halfway through cooking.
- Divide the cooked meat between the pita breads, and drizzle with tzatziki sauce to serve.

- Cook pasta according to package directions; drain. Toss with butter; add grated Parmesan cheese. Transfer to a greased 13x9-in. baking dish., Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles; drain. Add garlic; cook 2 minutes longer. PASZTECIKI (POLISH PASTIES)
Pronounced pahsh-teh-CHEE-kee; just one is a pasztecik. Great peasant food dating back to the 1700's. Paszteciki are hot, savory, hand-held pastries usually served with clear soup, especially barszcz, typically filled with meat and/or mushrooms or sauerkraut & mushrooms. There is also a vegetarian version filled with rice, eggs, and onion and seasoned with dill.

Steps:
- Sift flour and salt into a large mixing bowl.
- Use a spoon to push the egg yolk through a fine sieve into the flour.
- Add the raw egg and mix well.
- Beat in butter 1 tablespoon at a time.
- Place dough on a floured surface and knead until smooth and elastic, then wrap in waxed paper and refrigerate until firm (at least 30 minutes).
- In a heavy skillet, melt 2 tablespoons butter over medium heat; saute the onion and rutabaga until the onion is soft and transparent (5 minutes).
- Put the onions, rutabaga, and beef through a meat grinder twice if you have one, if not just chop them up as fine as possible.
- Melt the remaining 4 tablespoons butter over medium heat, and add the meat mixture.
- Cook over low heat, stirring occasionally, until all of the liquid has evaporated and the mixture is thick enough to hold its shape.
- Remove from heat and let cool, then stir in 1 egg, and season with salt and pepper.
- Preheat oven to 350°F.
- On a lightly floured surface, roll the dough out into a 13x8" rectangle (1/8" thick).
- Spoon the filling down the center of the rectangle lengthwise, leaving about an inch of space on each end.
- Lightly brush the long sides with cold water, then fold one of the long sides over the filling and the other side over the top of that.
- Brush the short ends with cold water and fold them over the top, enclosing the filling.
- Place pastry seam side down on a baking sheet and brush the top evenly with the remaining scrambled egg.
- Bake in preheated oven until rich golden brown (30 minutes).
- Slice pastry diagonally into 1.5" long pieces and serve as an appetizer or with soup.

BöREK - TURKISH PASTIES
Delicious savoury pasties with a Turkish twist! Great as a snack, a side for soups or salads or as a small meal on their own! There are two filling options, each makes enough for 8 pasties. The dough recipe is for 16 pasties, so if you want to make just e.g. 8 feta pasties, cut the dough recipe in half. Use the amount of flour listed only as a guideline as the amount of gluten will vary. You can use dried yeast instead of fresh if you prefer, just adjust the temperature of the dough accordingly and add the yeast with the flour. Recipe adapted from Maku magazine.

- To make dough: Melt butter. Add milk, sugar and salt. Check the temperature (it should be 35-37 C) and crumble yeast into the mixture. Add eggs and egg whites, stir. Gradually add flour; knead the dough for about five minutes or until it is smooth and elastic and starts to pull away from the edges of the bowl. Cover and let rise for 30-60 minutes.
- To make cheese filling: Finely chop onion and garlic. Heat oil in a pan and cook onion and garlic until softened. Let cool. Crumble feta in a bowl with a fork and mix all ingredients together into a paste.
- To make ground beef filling: Finely chop onion and garlic. Heat oil in a pan and cook onion, garlic and ground beef until browned. Add all remaining ingredients except for egg. Check the taste: the filling should taste fairly strong and salty. Let cool and finally mix in egg.
- Preheat oven to 225°C Line a baking sheet with parchment paper. Oil the baking board and turn the dough on it. Divide the dough in half and cut each half into 8 pieces.
- Roll each piece out into an oval about ½ cm thick. Divide the fillings between the 16 ovals. Turn a few centimetres of the dough on top of the filling on each side and pinch the ends together tightly, so you have a boat-shaped pasty. (You can bring the sides quite close together, as the pasties "open" a bit as they bake). Carefully transfer the pasties on the baking sheet. Brush the sides with egg yolk and bake in the preheated oven for 10 minutes.
- Serve warm or at room temperature.
