BREAKFAST BISCUITS
The homemade version of fast food breakfast biscuits. You can exchange toppings to fit your taste buds. My kids love them!

- Preheat oven to 400 degrees F (200 degrees C).
- Place biscuits 2 inches apart on an ungreased cookie sheet. Bake in preheated oven for 8 to 11 minutes or until golden brown.
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and set aside.
- In a large bowl, beat together eggs and milk. Heat a lightly oiled skillet over medium heat. Scramble eggs to your liking.
- Cut open biscuits, lightly butter, layer with eggs, bacon, and cheese.

- For the biscuits: Preheat the oven to 450 degrees F.
- Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
- On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
- For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.
- Now make a sandwich by cutting a biscuit in half. Put a sausage patty on the bottom half. Top with an egg, some hot sauce and a slice of cheese. Cover with the top and eat, or wrap in foil to keep warm.

Special enough that guests will think that you've really gone all out for them and easy enough that you can make then frequently for the family. It makes 12 biscuit squares but the men and teens will eat 2.

Steps:
- Heat oven to 425 degrees.
- Mix marmalade and butter.
- Spread in 8 inch x 8 inch baking pan.
- Stir baking mix and water to a soft dough.
- Knead about 5 times on floured surface.
- Roll dough into an 8 inch square, place on marmalade mixture.
- Pat dough into the corners and cut into 12 squares. Bake 15 to 20 minutes (or until golden and tester comes out clean).
- Invert pan on serving plate and serve warm.

- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Grate in the frozen butter and toss the mixture together with a spoon, pastry cutter, or your hands until the butter is coated in flour and the mixture resembles coarse crumbs. Pour in the buttermilk and stir a few times until it starts to come together into a dough. Add the cheese, bacon, eggs and spinach and continue stirring until it comes together into a rough ball and everything is evenly dispersed through the dough. Try to mix it as little as possible.
- Turn the dough out onto the prepared baking sheet and form the dough into an 8 inch disc with your hands. With a sharp knife, cut the disc into 8 wedges. Spread the wedges out a bit with your hands (not completely necessary, I just like the crisper edge this gives to all the biscuits, you can leave them touching if you prefer). Bake for 18-20 minutes or until golden brown.
- These are best warm, the same day they are baked, but keep well in a sealed container in the refrigerator for up to 3 days, reheat in the microwave for 20-30 seconds.

- In a large bowl, add the flour, sugar, baking powder, and ½ teaspoon salt. Whisk to combine. Add in the shredded cheddar and mix until coated in the flour. Set aside.
- In a small bowl, add the egg and lightly beat the egg. Add in the milk and ¼ cup of the cooled melted butter, mix to combine. Add the wet mixture to the dry and stir until just combined, a few lumps is okay, but make sure there are no dry patches.
- Evenly dollop 12 portions of the biscuit mix on the baking sheets, about 3 inches apart. Each biscuit equals about ¼ cup of biscuit mix. I like to use a ¼ cup scooper for this.
