FRENCH TOAST WAFFLES
Tired of plain old waffles? Do you love French toast, but don't like the hassle? Then try this recipe that combines the ease of waffles with the taste of French toast!

- Preheat waffle iron. In a large mixing bowl, combine waffle mix, sugar and cinnamon. Stir in milk, eggs and vanilla extract.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

FRENCH TOAST WAFFLES
Steps:
- In a large bowl, whisk the first 6 ingredients until blended. Dip both sides of bread in egg mixture. Place in a preheated waffle iron; bake until golden brown, 4-5 minutes. If desired, cut waffles into thirds. Serve with syrup. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. Reheat frozen waffles in a toaster on medium setting.

APPLE PANCAKES
The thing that brings this recipe full circle is the addition of cinnamon into the batter. It's lightly spiced and perfectly balanced inside one soft and dense apple-topped hotcake.

- Peel and chop apples into slices. You can do cubes as well if desired.
- Place chopped apples in a medium pot. Add water, sugar, and butter. Cook it over the stovetop for 15 minutes, occasionally stirring to prevent apples from burning or sticking in the base. Once apples are soft and caramelized, remove them from heat. Set them aside, covered, while making the hotcakes.
- To make the hotcakes, beat the eggs in a medium bowl. Add sugar, vanilla extract, baking powder, salt, and ground cinnamon. Whisk to combine. Add milk and whisk again.
- Add flour and stir well to combine. Mix to break any lumps the batter could have.
- Cook hotcakes in a heated non-stick skillet with some melted butter on it. Cook them on both sides until they lift and turn slightly golden on top.
- Serve hotcakes with the caramelized apples on top. Enjoy when still warm!

APPLESAUCE WAFFLES
These Belgian-style waffles are crispy on the outside, but the applesauce keeps them moist and almost muffin-like on the inside. Even better, you can make them when you are out of milk and eggs.

- Preheat the waffle iron. Preheat the oven to 200 degrees F if you plan on holding the cooked waffles in the oven. Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
- Whisk the evaporated milk, applesauce, brown sugar, oil, vanilla and 3/4 cup water in a large bowl.
- Fold the dry ingredients into the wet, and stir until combined. (Don't mix too much-some lumps are OK-just make sure the flour is coated.) Allow the batter to rest at room temperature for 5 minutes before baking.
- Ladle enough batter into the waffle iron to fill it to the edges, and cook until crispy and brown, 6 to 7 minutes. (You can tell the waffles are ready when very little steam comes out of the waffle iron.) Continue in batches until all the batter is used. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Sprinkle with powdered sugar and cinnamon, and serve with maple syrup.
APPLESAUCE WAFFLES
These waffles make a yummy breakfast treat! The recipe was clipped from the Houston Chronicle - not sure how old but the clipping is pretty-well yellowed!

- In a medium bowl mix flour, baking powder, sugar and salt.
- In a smaller bowl, combine egg yolks and milk and beat well. Stir into dry ingredients. Add the applesauce and stir well.
- Beat the egg whites until stiff. Carefully fold into batter (don't overmix).
- Pour about 2/3 cup batter onto a preheated waffle iron. Close and bake about 3 minutes. These waffles are fairly soft, so if you like them crisper cook about 1 minute more.
- Serve topped with a dollop of whipped cream and a couple of peach slices.
BREAKFAST APPLESAUCE FOR PANCAKES, FRENCH TOAST OR WAFFLES
My grandpa made us kids pancakes and waffles whenever we'd visit. And he'd serve this apple sauce on the side - we'd eat it as is or top our waffles. Good!
