Breakfast Greek Yogurt Popsicles with Berries & Granola image

Meet my Breakfast Popsicles - These easy Yogurt Popsicles with crunchy granola, Greek yogurt, honey and berries are a fun and healthy way to start your day.

Provided by Marie

Categories     Dessert     Snack

Time 6h15m

Number Of Ingredients 6

2 cups Greek yogurt (plain or vanilla)
2 1/2 tablespoons honey
2 1/2 tablespoons milk
1/2 cup berries (fresh or frozen (or your favorite fruit - chopped in small pieces))
3/4 cup granola (store-bough or homemade - click to see my easy healthy recipe)
4 teaspoons honey

Steps:

  • In a medium bowl, mix together yogurt, honey (2 1/2 tablespoons) and milk. Set aside.
  • Heat 4 teaspoons honey a few seconds in the microwave to make it runnier. In another bowl, mix together granola and honey until sticky. Set aside.
  • Fill popsicles mold with the yogurt mixture 2/3rd full. Using a small kitchen funnel makes it super easy but if you don't have one, a spoon works just as well.
  • Push the fruits into the yogurt mixture using a chopstick, a skewer or a small spoon.
  • Top with granola mixture, pushing into yogurt mixture lightly.
  • Add popsicle sticks, leaving 2 inches or so for a handle. Freeze for at least 6 hours to set. Before serving, defrost for about 5 minutes (or run the mold under warm water), then serve immediately.

  • Greek yogurt and granola bowl. Even in Italian, we use the word ‘bowl’ for this recipe – the classic combination of granola, yogurt, and fresh fruit. On its own, the bowl serves as a full meal and it’s a great way to start the day.
  • Oatmeal. We’ve covered it many times by now, so you probably know how many different varieties of oatmeal are out there already. There’s the classic oatmeal that cooks for a few minutes.
  • Chia pudding. Chia pudding, if you’re unfamiliar, is a delicate light pudding that’s very easy to make since no cooking is necessary. Just like with oatmeal, we suggest making the base from skim milk or water, greek yogurt, and fruit.
  • Greek yogurt and granola. It might be nothing special if the granola is pre-packaged from the supermarket, but have you ever tried making homemade granola?
  • Yogurt cake. A breakfast classic? Our healthy, light cake recipe – that the whole family will love! To make what we like to call the Seven Jar cake made using a 175 g greek yogurt jar for serving (even though the classic recipe uses the 125 g regular white yogurt jar).
  • French toast. French toast is made with two bread slices that are filled with jam like a sandwich, then breaded in the beaten egg with milk. Brown the breaded toast slices in a pan with butter.
  • Yogurt bruschetta. Also about sandwiches and sandwiches, we can not fail to mention the sweet bruschetta. A breakfast, or even a snack, to be composed in many ways.
  • Pancakes. Pancakes can be made with yogurt in the batter or just with yogurt as an accompaniment! We suggest the latter because it’s always better to consume natural greek yogurt fresh.
  • Instant donuts. These aren’t the donuts you’re used to – they’re made in just a few minutes with only two ingredients. We’re talking about instant donuts!
  • Magic yogurt focaccia. Another super clever recipe is yogurt focaccia, which is also made with the same ingredients as above: self-rising flour and yogurt.

  • Use a sharp paring knife to score an X on the bottom of each peach. Grab the point of the skin between the flat side of the knife and the thumb on your dominant hand to remove the skin of the peach. Discard the peach skins.
  • Use a larger chef's knife to cut one of the peach halves into thick slices; lay the peach slices on their sides and cut them, lengthwise, in half again. Cut the peach slices into tidbits, or smaller pieces. Place these small pieces into a smaller bowl and set aside.
  • Stir the honey in to the yogurt to sweeten it. Start with a 1/4 cup of honey. If you, or your family, prefer a sweeter taste, you can add up to a 1/2 cup of honey.
