Here's what you need: large russet potatoes, olive oil, salt, pepper, unsalted butter, all-purpose flour, beef stock, worcestershire sauce, cornstarch, water, cheese curd

3 large russet potatoes, scrubbed
3 tablespoons olive oil
1 ½ teaspoons salt, divided
1 teaspoon pepper, divided
6 tablespoons unsalted butter, 3/4 stick
¼ cup all-purpose flour
2 ½ cups beef stock
2 teaspoons worcestershire sauce
3 tablespoons cornstarch
2 tablespoons water
1 ½ cups cheese curd

Steps:

  • Preheat the oven to 450˚F (230˚C). Line 2 baking sheets with parchment paper.
  • On a cutting board, slice the potatoes into matchsticks by quartering lengthwise. Cut the quarters lengthwise into ¼-inch slices, then cut into ¼-inch (6 mm) matchsticks.
  • Place the potatoes in a large bowl. Drizzle with the olive oil and sprinkle with 1 teaspoon of salt and ½ teaspoon of pepper. Toss to coat.
  • Arrange the fries evenly in 2 rows on each baking sheet so they are not touching.
  • Bake for 25 minutes, flipping halfway through, until golden brown.
  • In a medium saucepan over medium heat, add the butter and flour. Whisk until the mixture is a golden brown. Add the beef stock, Worcestershire, remaining ½ teaspoon of salt and remaining ½ teaspoon of pepper. Bring to a boil, whisking continuously.
  • Add the water to the cornstarch in a small bowl and mix until dissolved. Add the cornstarch slurry to the gravy and stir until thickened. Remove from the heat and cover to keep the gravy hot.
  • Transfer the baked fries to a large bowl, add the cheese curds, and pour the hot gravy over the top. Toss to coat.
  • Transfer to a dish and serve immediately.

1 32 oz bag tater tots
1 lb breakfast sausage
1/4 cup flour
3 cups milk
1-2 cups shredded Cheddar cheese
1/4 cup bacon bits (or 1-2 slices cooked chopped bacon)
1 Tbs chives (diced)
4 eggs

Steps:

  • Bake tater tots according to package directions.
  • Meanwhile in large skillet, brown your sausage, once browned add in your flour and stir to coat sausage pieces, add in your milk and stir until thickened.
  • In another large skillet make your sunny side up eggs by adding about 1/2 cup oil to pan and heating on medium. Crack your eggs over the oil and let sit for a few seconds.
  • Once eggs just start to turn white, with spoon drizzle oil over the whites of them until cooked through and no longer slimy.
  • Once white are cooked seal in the yolk by drizzling a little of the oil over tops of that as well. Remove from pan onto paper towel lined plate.
  • Once tater tots and gravy are done, add about 1/4 of your tots to a bowl, sprinkle with cheese and let sit a minute.
  • Drizzle your sausage gravy (as much or as little as you like, I like a lot so I drizzle a lot) over the tops of your tater tots.
  • Top with a sprinkle of chive and bacon bits and gently lay your egg on top, repeat for each serving.

4 cups tater tot
7 eggs
½ cup bacon bits
½ avocado
½ cup shredded cheddar cheese
½ cup shredded mozzarella cheese
butter
pepper, to taste

Steps:

  • Pour the tater tots in a large mixing bowl. Microwave for one minute and forty-five seconds (or until soft)
  • Add one egg to the softened tater tots and mix.
  • Grease a cast-iron pan with butter, then pour the tater-tot mixture into the pan and spread it out to create a crust.
  • Bake the crust for 15 minutes at 400˚F (200˚C).
  • Remove from the oven, then add ½ of the cheddar cheese, ½ of the mozzarella cheese, and ½ of the bacon bits to the base of the crust.
  • Crack the rest of the eggs evenly over the top of the crust, then top with the rest of the cheese and bacon bits.
  • Bake for 15 more minutes at 400˚F (200˚C).
  • Top with avocado slices and pepper.
  • Enjoy!

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking sheet and spread potato nuggets onto sheet.
  • Bake in the preheated oven, stirring halfway through cooking, until golden brown and crispy, 25 to 35 minutes.

Steps:

  • In a bowl, beat the eggs with milk, salt, and pepper. Set aside.
  • Spread the sausage over the bottom of a glass 9×13-inch (35 cm x 25 cm) baking dish. Pour on the onion soup, and mix with the sausage.
  • Sprinkle the cheddar cheese evenly over the top.
  • Cover with the lined up tater tots, and pour the egg mixture over everything.

1 cup salted butter, melted
1 tablespoon fresh lemon juice
¼ teaspoon salt
cayenne pepper, pinch
1 tablespoon hot water
7 cups cooked tater tots
4 sausages, mild or hot Itallian
6 bacons, strips
2 cups cheese curds
¼ cup green onion, finely chopped
3 eggs, sunny-side or poached
salt and pepper, to taste

Steps:

  • In a high-speed blender jug, add egg yolks, freshly squeezed lemon juice, salt, and cayenne pepper.
  • Melt butter in a microwave or on stove top, until completely melted and very hot to the touch.
  • Using high speed, blend the yolk mixture for 3-4 seconds, then gradually in a thin stream pour the hot melted butter into the blender jug, while it is still running on high speed. Check for desired consistency and taste, adding more salt, cayenne pepper as needed. The sauce will begin to thicken as the hot liquid begins to emulsify with the yolk mixture.
  • Start by making a base with the tater tots, then layer on the shredded cheddar cheese, crumbled Italian sausage, crumbled bacon, sunny-side up or poached egg. Season with salt and pepper to your desired preference, then top with hollandaise sauce and a garnish of green onion.
  • Serve while hot and enjoy.
