1 pound bulk pork sausage
1 pound ground beef
1 small onion, chopped
3/4 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1 to 1-1/2 teaspoons salt
1/4 to 1/2 teaspoon pepper
2 tablespoons butter, melted
2 cups shredded cheddar cheese, divided
12 large eggs, lightly beaten
2/3 cup heavy whipping cream

Steps:

  • In a large skillet, cook the sausage, beef, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. Stir in salt and pepper; set aside., Pour butter into an ungreased 13x9-in. baking dish. Sprinkle with 1 cup cheese. Pour eggs over cheese. Top with sausage mixture. , Pour the cream over sausage mixture. Sprinkle with remaining cheese. Cover and refrigerate for 8 hours or overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

For the Crunchwrap
4 frozen hash brown patties
5 large eggs
1 tbsp. whole milk
1 tbsp. butter
kosher salt
Freshly ground black pepper
2 tbsp. finely chopped chives
4 large flour tortillas
6 slices cooked bacon, chopped
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Vegetable oil, for pan
For the creamy jalapeño sauce
1/3 c. sour cream
Juice of 1/2 lime
1 jalapeño, minced
1/4 tsp. paprika
kosher salt
Freshly ground black pepper

Steps:

  • Bake frozen hash brown patties according to package instructions.
  • Make creamy jalapeño sauce: In a small bowl, whisk together sour cream, lime juice, jalapeño and paprika, then season with salt and pepper. Set aside.
  • Meanwhile, make scrambled eggs: In a large bowl, combine eggs and milk and whisk until frothy. In a medium nonstick pan, melt butter over medium heat. Pour egg mixture into the pan. Let set slightly then reduce heat to medium-low. Drag the eggs with a spatula or wooden spoon to create curds. When the eggs are almost cooked to your liking, season with salt and pepper. Fold in chives and remove from heat.
  • Assemble crunchwrap: Spread the jalapeño sauce onto the center of each flour tortilla, then top each with a hash brown patty, scrambled eggs, bacon, cheddar and Monterey Jack. Fold tortillas around the center, creating pleats. After wrapping, quickly invert crunchwraps so the pleats are on the bottom and they stay together.
  • Cook crunchwraps: In a medium nonstick pan over medium heat, heat a very thin layer of vegetable oil. Working one at a time, add crunchwrap seam-side down and cook until tortilla is golden on the bottom, 3 to 5 minutes. Flip crunchwrap and cook until the other side is golden, 3 to 5 minutes more.
  • Repeat with remaining crunchwraps. Cut each in half and serve warm.

Tortilla chips
Chopped sweet onion
Black or pinto beans, cooked, drained
Shredded Mexican blend of cheeses
Scrambled eggs
Cooked breakfast sausage and/or bacon
Sweet corn, frozen/thawed (or cooked)
Jalapeno slices
For the top: Fresh cilantro, avocado, tomatoes
Serve with: your favorite salsa or guacamole

Steps:

  • Preheat the oven to 400 F. Cover the bottom of your pan with tortilla chips, sprinkle with cheese, then some onion, beans, scrambled eggs, bacon and/or sausage, and corn. Top with a bit more cheese and some jalapeno slices.
  • If you want, repeat to make a second layer of nachos. Bake at 400 for about 10 - 15 minutes or until the cheese is good and melty. Top with cilantro and/or avocado and/or chopped tomato and enjoy with your favorite salsa and/or guacamole!

This quiche recipe is the best! It is easy to make and tastes SO delicious! Freezes well after it is baked. Use ham, bacon or sausage, or any combination thereof!

2 (9 inch) deep dish frozen pie crusts
1 tablespoon finely chopped green bell pepper
1 small onion, finely chopped
1 (4.5 ounce) can mushrooms, drained and chopped
6 eggs
2 cups heavy cream
8 ounces shredded Monterey Jack cheese
8 ounces shredded Swiss cheese
12 ounces cooked ham, chopped
½ teaspoon vinegar
⅛ teaspoon dried tarragon
1 pinch garlic powder
1 pinch ground nutmeg
1 pinch dried parsley
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and pre-bake crusts for 10 minutes. Set aside to cool on racks.
  • In a large skillet, saute green pepper, onion and mushrooms until onions are soft and translucent. Remove from heat and set aside.
  • In a large bowl, mix eggs and cream together. Stir in the shredded Jack and Swiss cheese, chopped ham and sauteed vegetables. Stir in vinegar and season with tarragon, garlic powder, nutmeg, parsley, salt and pepper. Divide filling into the 2 baked pie crusts.
  • Bake in the preheated oven for 55 to 60 minutes, or until filling is set and crusts are golden brown.

1 avocado

  • Melt butter in a small skillet over medium-high heat. Crack eggs in and fry on both sides, about 4 minutes.

Steps:

A different version of Taco Bell's famous Crunchwrap Supreme, this is a healthy but delicious on-the-go breakfast

3 to tortillas
3 eggs
1 chicken sausage (diced (or pork per preference))
2 cloves garlic
4 cups kale (stems removed)
½ cup Monterey Jack cheese
½ onion (diced)
1 cup tater tots or hashbrowns
Butter

Steps:

  • Bake the kale with a touch of olive oil and salt on a baking sheet at 425 degrees for 15 minutes, flipping once.
  • Meanwhile, saute the tater tots/hashbrowns until golden and set aside. In the same pan, saute the onion, sausage, and garlic with a sprinkle of black pepper.
  • Cut a tortilla into two squares. With another tortilla, scoop half the tater tots/hashbrowns, then half the kale, then half the egg/sausage mixture, and top with half the cheese. Place one of the tortilla squares on top. Then, gently fold over the bottom tortilla onto the top, forming an ~octagon. You can add some extra cheese under the folded sides to help it stick to the tortilla square on top. Repeat this process for the other tortilla.
  • Carefully lower it, folded-side down, into a hot pan with butter. Gently press it down with a spatula to help seal in the sides. When it is golden, flip to the other side and cook until golden. Repeat for the second crunchwrap.
  • Serve warm and with salsa or guacamole.

1 teaspoon butter
1/4 cup chopped sweet onion
3 oz. frozen broccoli, thawed and chopped into small chunks
3 oz. fresh sweet cherry tomatoes, halved or quartered
2 very thin slices of lean ham, chopped (I used black forest thin sliced ham from Aldi)
2 eggs
1 oz. shredded Italian cheeses
Red Robin Seasoning (or your favorite seasoned salt) & freshly ground pepper

Steps:

  • Heat a small frying pan over medium heat and smear the bottom of the pan with butter. I like to take a stick of butter and just lightly rub it all over the bottom of the pan, so you use about 1 teaspoon total butter.
  • Add the onion and saute for a few minutes until the onion is soft and translucent.
  • Add the broccoli, tomatoes, and ham. Crack the eggs over top. Sprinkle with cheese and then the seasoned salt and the pepper.
  • Use a spatula to break the eggs and mix together the ingredients. Cook for a few minutes, stirring frequently, until the eggs are cooked.
  • Remove from heat and enjoy!
