Yield 12

Number Of Ingredients 9

1 pound sliced fresh mushrooms
1 tablespoon vegetable oil
1 quart half-and-half
12 eggs
1 teaspoon salt and several grinds of pepper
12 slices fluffy white bread
1 pound cubed fully cooked ham
12 ounces extra-sharp cheddar cheese, grated
½ cup thinly sliced scallions

Steps:

  • Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
  • Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.

BREAKFAST STRATA: EASY RECIPE FOR A BRUNCH CROWD image

Categories     Egg     Brunch

Yield 6-10 people

Number Of Ingredients 11

1 loaf italian bread (9x5 inches), cut into 1/2 inch slices
6-8 eggs
21/2 c. milk
1/2 c. heavy cream
Herbs to taste (dried oregano or thyme, fresh basil or parsley)
1/2 cups parmesan or romano, grated
1 lb (16 oz) spicy vegetarian sausage, sliced
2 large shallots or 1 bunch scallions, finely chopped
1 red or green pepper, thinly sliced
2-3 c. cheddar (or similar) cheese, grated
1/2 pint cherry tomatoes, sliced in half

Steps:

  • Butter a standard (9x13) casserole dish. Combine eggs, milk, cream, herbs and parmesan or romano thoroughly (If you're using whole milk you don't need the cream--just replace it with more milk). Heat a tablespoon or so of oil in a medium skillet. Sauté the sausage over medium-high heat until browned. Remove from pan. Add a little bit more oil and the shallots or scallions and the pepper. Sauté until slightly softened. Combine with sausage. Assemble the strata. Place a layer of bread slices on the bottom of the dish. Tear little bits off extra slices to fill in gaps. Cover with half the sausage/pepper mixture. Pour half the egg mixture over and than sprinkle on half the cheese. Repeat. Top with cherry tomatoes. Cover and refrigerate until needed, at least 20 minutes. Uncover and bake at 350 degrees 45 minutes to 1 hour. Variation Ideas: Mediterranean strata: Use a combination of artichoke hearts, olives, sun-dried tomatoes, feta cheese and other Mediterranean ingredients. Swiss strata: How about onions, mushrooms, spinach and Swiss cheese? Simple strata: Steamed broccoli and tomatoes.

HOW TO MAKE BREAKFAST STRATA WITHOUT A RECIPE | EPICURIOUS

From epicurious.com
Estimated Reading Time 6 mins
  • Start With a Buttered Baking Dish, and Fill it With Bread. Choose an oven-proof baking dish that's about the right size to feed however many people you're planning on serving.
  • Use half the volume of milk and eggs as bread. A mixture of equal parts eggs and milk is what forms the quiche-like filling of the strata. Whatever volume the bread yielded, use half of that measurement for your milk as well as your eggs.
  • Flavor your liquid base. Season your egg and milk mixture with some salt and pepper and whatever else you want it to taste like: a spoonful of mustard, a splash of hot sauce, a pinch of paprika, or a whisper of nutmeg.
  • Use About the Same Volume of Shredded Cheese as Milk. You need some cheese in there to get everything cheesy and delicious, right? Your strata can hold up to equal parts cheese as milk and eggs.
  • Add Some Extras. If you want your strata to have more going on in it than eggs and cheese (you might not), you can add up to equal parts add-ins as cheese.
  • Assemble your Strata, and Let it Sit. Pour the milk and egg mixture over the top over the mix of bread, cheese, and add-ins. Press the bread down with your hands to make sure it's covered in liquid.
  • Bake your Strata. Before you bake it, cover your strata tightly with foil, and bake it for about 20 minutes at 350°F. Open up the oven, uncover the strata, and continue baking until the cheese is melted on top and the egg custard is set, 15 to 30 minutes more depending on the depth of your strata.

  • Mexican breakfast casserole. It’s hard to hate on Mexican food. The flavor is a crowd-pleaser, and this recipe basically turns your Chipotle order into a loaded breakfast.
  • Sweet potato, sausage, and kale casserole. We know, we know. Kale first thing in the morning is intense. How can you process so much excitement this early?
  • Cheesy breakfast casserole. Ooooh, boy. This one’s a beast. While it’s a little on the heavier side, this smorgasbord of morning loveliness will fill your guests right to the brim.
  • Slow cooker banana overnight oats. A slow cooker is all you need to make oatmeal an easy crowd-pleaser. It’s time for your own “Breakfast Club,” starring Oatmealio YEStevez.
  • Chocolate pumpkin sheet pan pancakes. Sheet pan pancakes are kind of a game changer, we have to say. They take all that pesky flipping out of the equation, and you won’t end up with a few burnt ones and a few perfectly golden ones to divide among hungry guests.
  • Cinnamon monkey bread. This combines two of our favorite things in the world: monkeys and bread. It’s the best combo since chimpanzees and Segways.
  • Brown sugar banana French toast. Like pancakes, French toast would be annoying to make for a crowd in its usual form.
  • Breakfast enchiladas with poblano sauce. Breakfastizing Mexican food is one of our favorite hobbies, clearly. To make these b’fast enchiladas, stuff corn or flour tortillas with scrambled eggs, chili potatoes, spicy ground turkey, and cheese, and place ’em in a pan on top of the poblano sauce.
  • Broccoli quiche with bacon. Quiche doesn’t have to be complicated, but it will impress your guests. Turn that quiche into a quickie.
