Here's a dish that has it all-sweet potatoes, eggs, ham and cheese-for a powerful start to the day. -Annie Rundle, Muskego, Wisconsin

Number Of Ingredients 8

1 package (20 ounces) frozen sweet potato puffs
8 large eggs
1/3 cup 2% milk
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup cubed fully cooked ham
1 tablespoon butter
Shredded cheddar cheese and sliced green onions

Steps:

  • Bake potato puffs according to package directions. In a large bowl, whisk eggs, milk, salt and pepper. Stir in ham., In a large nonstick skillet, heat butter over medium heat. Add egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Serve with potato puffs; sprinkle with cheese and green onions.

4 large baking potatoes, hot
salt and pepper
1/2 cup cheddar cheese or 1/2 cup gruyere cheese, shredded
8 eggs
fresh parsley or chives, finely chopped, for garnish

Steps:

  • Cut potato in half lengthwise. Scoop out about half of the pulp from each potato half. Reserve potato flesh for another use - maybe mashed potatoes for dinner.
  • Remove a thin slice of potato from the bottom to stabilize the potato, if necessary. Set potato shells in a shallow baking dish. Sprinkle each cavity with salt, pepper and 1 tbsp cheese. Break an egg into each cavity.
  • Bake at 350°F for 15 to 20 minutes or until eggs are cooked as desired. Sprinkle with parsley or chives and pepper. Serve immediately.
