Steps:
- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

- Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. , In a large bowl, combine biscuit mix and cheese; stir in sausage. Add water and toss with a fork until moistened. Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake until puffed and golden brown, 12-15 minutes. Cool on wire racks.

SAUSAGE ROLL RECIPE WITH PUFF PASTRY
These sausage rolls are made with ground pork seasoned with herbs, then rolled in puff pasty for a light crust. Delicious addition for a brunch or enjoy as an appetizer.

- Pre heat oven to 425 degrees.
- In a large bowl add pork, onion flakes, basil, oregano, salt and pepper and two eggs. Mix until combined.
- Unroll the puff pastry and with a sharp knife cut dough in half (lengthwise).
- Divide meat into four even portions and place meat in the center of each piece of puff pastry.
- In a small bowl and the remaining egg and whisk together with 1 tablespoon of water.
- Dip a pastry brush in the egg wash and paint the outside of the pastry. Roll the pastry to seal in the pork ingredients.
- Slice into 1 1/2 - 2-inch pieces and cut a small notch on top of each piece (optional).
- Brush the top of each roll with the egg wash.
- Place on a baking sheet with the parchment paper the puff pastry came with (it may brown while cooking).
- Bake for 20-25 minutes.

- Roll out puff pastry to 12-inch square. Brush maple syrup over entire surface.
- Cut dough into thirds in each direction and then cut each square in half diagonally, ending with 18 triangles. Place a breakfast sausage link on the lower third of each triangle and roll up, making sure to place each tip-side down on a parchment-lined baking sheet.
- Whisk egg and 1 teaspoon water in a small bowl until lightly beaten. Brush each puff with egg wash and bake for 16 to 18 minutes until golden brown.

Breakfast puff pastry pockets with sausage, egg and apples, are an easy and quick savory breakfast made with frozen puff pastry that will melt in your mouth. Bakes in just 20 minutes!

- Preheat oven to 425º and line a baking sheet with parchment paper.
- Add sausage to a skillet and cook over medium heat until cooked through, breaking it apart as it cooks. Drain any excess grease.
- Beat the eggs with a fork and add to the skillet stirring until the eggs are softly cooked. Add salt if needed. Add 1/2 cup of cheese and stir to combine.
- In a small skillet heat butter over medium heat and add thinly sliced apples. Cook until the apples are soft.
- Roll out the puff pastry into a square and then divide the square into 6 equal squares. Place the sausage egg mixture in the center of each square and top with remaining 1/2 cup of cheese. Add a slice or two of apple. Bring the corners to the center and pinch the sides together.
- Combine 1 egg with 1 tablespoon of water and beat with a fork. Brush the egg wash over the pastry and bake for 18-20 minutes until the pastry is golden brown.

- In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.
- In same skillet brown and crumble the sausage. Drain well on paper towels.
- In a large bowl, combine the flour, baking powder and salt.
- In another bowl, combine eggs and cheeses.
- Melt remaining butter; add to egg mixture.
- Stir into dry ingredients along with, sausage crumbles, and mushroom mixture.
- Fill greased muffin cups three-fourths full.
