1 pound pork sausage
1 ½ cups packed brown sugar
1 ½ cups white sugar
2 eggs, beaten
3 cups sifted all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon pumpkin pie spice
1 cup cold, strong, brewed coffee
1 cup raisins
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) grease and flour a 9 inch Bundt pan. Pour boiling water over raisins and let stand 5 minutes. Drain well and dry raisins with a cloth towel.
  • In large bowl, combine sausage, brown sugar and white sugar. Stir until mixture is well blended. Add eggs and beat well.
  • In a separate bowl, sift together flour, ginger, baking powder and pumpkin pie spice.
  • Stir baking soda into coffee.
  • Add flour mixture and coffee alternately to sausage mixture, beating well after each addition. Fold raisins and walnuts into cake batter.
  • Pour batter into greased and floured 9 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until toothpick inserted into cake comes out clean. Cool in pan 15 minutes, then turn out onto wire rack.

1 pound Maple Sausage
1/2 Yellow Onion (diced)
1 1/2 Cups Red and Yellow Peppers (chopped)
2 Cups Flour
1 Tablespoon Baking Powder
2 Tablespoons Shortening
1/4 Teaspoon Pepper
3/4 Teaspoon Salt
1 Cup Mexican Shredded Cheese Blend
1 Egg (beaten)
3/4 Cup Buttermilk
1/4 Cup Sour Cream
1/4 Cup Maple Syrup
1/4 Cup Butter

Steps:

  • Preheat the oven to 350 degrees.
  • Spray an 8x9" baking pan with nonstick spray.
  • In a skillet over medium heat, add the sausage and cook until browned, stirring occasionally to break up the meat, about 3-5 minutes.
  • Remove to a mesh strainer in the sink to allow the grease to drain off.
  • Place the skillet back on the burner, no need to wash it first, add a drizzle of oil and the onions and peppers.
  • Cook, stirring occasionally for 3 minutes or until the onions are soft and translucent.
  • Remove to a plate to cool.
  • In a bowl, add the flour, baking powder, shortening, pepper and salt.
  • Using a pastry cutter or fork, blend the shortening into the flour.
  • Add the cheese and mix.
  • In a small bowl, whisk the egg, buttermilk and sour cream.
  • Create a well in the middle of the dry ingredients and add the egg, buttermilk and sour cream.
  • Add the sausage and peppers on top and stir until just combined.
  • Spread the very thick, sticky batter into the baking dish and bake for 40-45 minutes or until set in the middle and golden brown.
  • Meanwhile, melt the butter and maple syrup together and set aside.
  • Remove the cake from the oven and allow to cool for a few minutes then pour the sauce all over the top and serve immediately.

1/2 cup onion (diced)
1/2 cup red bell pepper (diced)
1 cup pepper jack cheese (shredded)
1/4 cup Parmesan (grated)
1 large egg (lightly beaten)

1 teaspoon baking powder
½ teaspoon baking soda
1/2 teaspoon dried sage
1/4 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cup milk
1/4 cup mayonnaise

Steps:

  • Preheat the oven to 400 degrees. Grease an 8 by 8-inch baking dish.
  • Heat a skillet over medium-high heat. Cook the sausage while breaking into small pieces. Add the onion and bell pepper to the sausage and cook until the vegetables are soft and the sausage is no longer pink. Remove to a paper towel-lined bowl or plate and let drain and cool slightly.
  • In a medium-size bowl whisk together the flour, baking powder, baking soda, dried sage, garlic powder, salt, and pepper. Add the milk and mayonnaise stir to combine.
  • In a separate bowl mix the cooled sausage mixture with the pepper jack cheese, and parmesan cheese. Toss to combine. Add the egg and stir to combine.
  • Pour half of the batter into the prepared pan and spread to cover the bottom. Spread the sausage mixture evenly over the first layer of batter. Carefully spread the remaining batter over the sausage mixture. It's not necessary to make the batter completely cover the sausage. It will spread some while baking.
  • Bake for 20-25 minutes, or until firm and golden brown.

Steps:

  • Preheat the oven to 350 degrees. Brown the sausage and vegetables in a skillet over medium heat. Drain off excess oil. Add the cheeses, egg, hot sauce and seasoning mix. Make a batter with the biscuit mix, milk and sour cream. Gently fold the sausage mixture into the batter and put into a greased 9x9 inch baking tin. Bake until light brown, about 45 minutes. Remove from the oven and cool to room temperature. At this point, it can frozen for later use. To serve, cut into squares.

1/2 pound fat back, diced into 1/4-inch pieces

2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds.
