4 large eggs
1 cup egg substitute
6 whole wheat tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese
3 turkey bacon strips, diced and cooked
6 tablespoons salsa
6 tablespoons fat-free sour cream

Steps:

  • In a small bowl, whisk eggs and egg substitute. Coat a large skillet with cooking spray. Add egg mixture; cook and stir over medium heat until completely set., Heat another large nonstick skillet coated with cooking spray; add one tortilla. Top with 1/3 cup cheese, scant 2 tablespoons bacon, 1 cup egg mixture and one tortilla. Cook over medium heat for 2-3 minutes on each side or until lightly browned., Repeat with remaining tortillas, cheese, bacon and eggs, spraying pan as needed. Cut each quesadilla into six wedges. Serve with salsa and sour cream.

1 Italian sausage link, casing removed
1/2 small red onion, sliced
1/2 small sweet red pepper, julienned
2 teaspoons canola oil, divided
1/3 cup frozen corn, thawed
1/4 teaspoon chili powder
1/8 teaspoon salt, optional
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon pepper
1/2 medium tomato, seeded and diced
2 flour tortillas (8 inches)
Sour cream and salsa, optional
3/4 to 1 cup shredded Monterey Jack cheese

Steps:

  • Crumble sausage into a large skillet; cook over medium heat until no longer pink. Drain; set sausage aside. In the same skillet, saute onion and red pepper in 1 teaspoon oil for 5 minutes. Add corn and seasonings. Cook and stir for 5 minutes or until vegetables are tender. Stir in tomato and sausage; heat through., Spoon over one side of each tortilla. Sprinkle with cheese; fold over. Cook in remaining oil over medium heat for 1-2 minutes on each side or until cheese is melted. Cut each into three wedges. Serve with sour cream and salsa if desired.

Burritos seem to have bullied quesadillas out of the running for Mexican-inspired breakfast foods. Well, not anymore, I say! Fold your favorite ingredients inside a flour tortilla for a scrambled spin on breakfast. Inside my quesadilla you'll find smoky, charred poblanos and creamy Monterey Jack cheese. For a double dose of heat, go for spicy sausage and jalapeños. For milder palates, opt for the sweet links instead.

2 poblano peppers (about 3 ounces each)
2 tablespoons olive oil
Kosher salt and coarse black pepper
4 fully cooked maple breakfast sausage links (about 1 ounce each)
6 large eggs
1 1/2 tablespoons unsalted butter
2 burrito-size flour tortillas
1 cup packed baby spinach (see Cook's Note)
1 cup shredded Monterey Jack cheese
2 tablespoons neutral oil (such as vegetable, grapeseed or sunflower)
1/2 cup plain Greek yogurt or sour cream
Chopped cilantro or flat-leaf parsley, for garnish, optional
Hot sauce, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • On a baking sheet, drizzle the poblano peppers with 1 tablespoon olive oil and season them with salt and pepper. Roast for 15 minutes, flipping them once halfway through so they are charred side up for the last half. When the peppers are cool enough to handle, slice off their tops, split them down the middle, scrape out the seeds, and roughly chop the flesh.
  • Reduce the oven temperature to 250 degrees F.
  • In a small skillet, heat the sausages in the remaining 1 tablespoon olive oil over medium heat until fully warmed through and lightly browned on all sides, 5 to 8 minutes. Roughly chop the sausages.
  • In a bowl, season the eggs with a pinch of salt and pepper and whisk until they are light and airy.
  • In a large nonstick skillet, heat the butter over medium-high heat. When the butter begins to foam and sizzle, pour in the eggs. As the outside begins to cook, lift up the eggs with a heatproof spatula so that the runny center flows to the side of the pan. When the bottom is cooked-about 30 seconds-carefully flip the eggs so that they're now top-side down. If you're not comfortable flipping the eggs, scramble them with a spatula until they're soft and fluffy, 15 to 20 seconds after the bottom is cooked. Immediately remove the eggs from the heat and split them down the middle so you have two half-moons.
  • On one half of each tortilla, layer the poblanos, eggs, sausage, spinach, and Monterey Jack cheese, and sprinkle with salt and pepper. Fold the tortillas over to make a quesadilla shape.
  • In a large skillet, heat 1 tablespoon of the neutral oil over medium heat. Add one quesadilla and cook until golden brown and crispy, 2 to 3 minutes per side. Place it on a baking sheet to keep warm in the oven. Prepare the second quesadilla with the remaining ingredients.
  • When both quesadillas have been cooked, slice them into triangle and serve with the Greek yogurt or sour cream. Drizzle with hot sauce and sprinkle with cilantro or parsley if desired.

1/2 cup yellow onion (diced)
1/4 cup red bell pepper (diced)
1/4 cup green bell pepper (diced)
1/2 cup mushrooms (sliced (I used pre-sliced mushrooms))
8 large eggs (whisked)
1 (15 oz) can black beans (drained, rinsed, and seasoned with salt)
1 1/2 cups shredded cheddar cheese (I used non fat)
8 whole grain burrito sized tortillas
Cilantro
Green onion
non fat plain greek yogurt
hot sauce
salsa
tomato
avocado

Steps:

  • In a large skillet, cook sausage over medium heat, breaking it up as you go along, until it's no longer pink. Remove and set aside.
  • Spray the same pan with cooking spray and cook onions, peppers, and mushrooms until tender. Season with salt and pepper and set aside.
  • Again, spray the same pan with cooking spray and lower heat to medium/low.
  • Use a rubber spatula to cook scrambled eggs until just a little shine remains. Season with salt and pepper and set aside.

1/2 lb pork sausage (breakfast bulk)
1 cup cheddar cheese, shredded
6 flour tortillas (6 inch)
2 teaspoons butter
sour cream
salsa

Steps:

  • Fry sausage until browned and crumble into small pieces.
  • Melted butter on a griddle or skillet. Place tortillas on top of melted butter on low heat.
  • Place crumbled sausage by teaspoonfuls on one-half of tortillas. Sprinkle cheese on top of sausage. Fold tortilla in half.
  • Press with fork to allow heat to melt cheese inside and cook approximately 3 minutes for on each side until light brown. Lift to a serving dish.
  • Serve with sour cream and salsa while hot. For OAMC: When cool, place in ziploc bags and place in freezer. Remove later and microwave.

1 Pinch salt and pepper
1/4 cup shredded cheese ((1 oz) Mexican cheese, medium cheddar or mozzarella)
3 oz breakfast Sausage (2 patties)
2 slices ham ((2 oz) chopped)
2 slices bacon ((2 oz), sliced)

Steps:

  • Heat a non-stick pan over medium heat. Cook Sausage or Bacon until browned and cooked through then remove to a plate. If using cooked ham, you can heat it up or just add it over the cheese in step 4. Wipe excess oil from skillet if needed. Reduce heat to low.
  • In a measuring cup, add 2 eggs with a pinch of salt and pepper, or add seasoning to taste. Beat with a fork. Add beaten eggs and swirl to spread evenly over the bottom of the pan. Cook over low heat until When eggs are nearly cooked through (if you tilt the pan they shouldn't run).
  • Sprinkle the top with 2 Tbsp shredded cheese then cover with a tortilla. The cheese will make the tortilla stick to the egg. Use a large spatula to get under the egg and quickly flip over.
  • Sprinkle another 2 Tbsp of cheese or add cheese to taste. Sprinkle your cooked protein (sausage, bacon or ham) over half of the surface and fold the tortilla in half. Sautee on both sides until golden brown.* Remove from skillet and use a pizza cutter to cut quesadilla into wedges and serve warm.
