Individual Ham Casseroles image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 40m

Yield 24 servings

Number Of Ingredients 9

Cooking spray
20 large eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
8 ounces thinly shaved ham, diced
1 1/2 cups freshly grated Cheddar
1 large green bell pepper, cut into small dice
1 large onion, finely diced

Steps:

  • Preheat the oven to 350 degrees F. Generously spray 24 muffin cups (2 standard muffin tins) with cooking spray.
  • Crack the eggs into a bowl; add the salt, black pepper and chili powder. Whisk until combined. Add the ham, Cheddar, bell peppers and onions and stir.
  • With a measuring cup, scoop the mixture into the muffin cups. Bake for 20 to 22 minutes, until puffy and just barely set.
  • Within a minute or two, the casseroles will start to flatten just a little bit -- this is normal! Run a knife along the edges of each muffin cup and lift the casseroles out of the pan. Serve warm or at room temperature.

BREAKFAST ON THE RUN

Breakfast on the Run image

I got the idea from a friend who brought store bought microwaveable breakfast meals in to work. Hey, I can make it myself and know exactly what is in it. You can easily add different veggies, asparagus or broccoli come to mind. Whatever you have handy or like. It is a very flexible recipe. Add some cheese after it is...

Categories     Eggs

Time 1h30m

Number Of Ingredients 6

1 lb mushrooms, fresh
1 bell pepper
10 oz spinach, fresh
10 eggs
2 Tbsp olive oil
1/2 lb ham or sausage, cooked

Steps:

  • 1. Clean and slice the mushrooms. Clean and dice the bell pepper. (You can use any color you like)
  • 2. Add mushrooms and pepper to some hot oil in a large skillet. add a bit of salt & pepper. Saute until they become soft.
  • 3. Add the cooked meat & spinach. Cover so the spinach will wilt. Stir every few minutes to get the spinach cooked. ***Once all the veggies are cooked, remove the mixture to a strainer and let all the liquid drain off. This is very important.
  • 4. I make these for quick morning breakfast. I measure out about 1/4-1/3 cup and put it into a baggie. Then I put the baggies into a freezer container and freeze. In the morning, I scramble 2 eggs into a microwave safe bowl, and add the baggie. Microwave for 1 minute, then stir. Microwave for 30 to 60 seconds more, depending on your microwave.

  • Frittatas (and other baked egg dishes) Eggs are a perfect source of healthy fat and protein, not to mention all kinds of micronutrients – and with a frittata, you’ve got your vegetables conveniently included in one finger-friendly package.
  • Meatballs. Meatballs are a great breakfast food: they’re portable, easy to eat, good hot or cold, and endlessly versatile so you don’t get bored. Here’s a recipe for meatballs in tomato sauce, but if the typical beef, tomato, and oregano-style meatballs sound too heavy, why not try a lighter, more summery version with ground chicken or turkey, maybe with some coconut milk, fresh herbs, or green onions?
  • Hard-boiled Eggs. Hard-boiled eggs might be the most dead-simple breakfast you could come up with. Boil a dozen at a time and grab 3 or 4 for breakfast every day with a piece of fruit or some leftover vegetables, or a cold baked sweet potato if you like a little more starch in the morning.
  • Breakfast Peppers. Stuffing anything inside a pepper makes it so much easier to haul around with you, and the pepper “shell” helps you get in a serving of vegetables, to boot!
  • Breakfast Meatloaf. The classic meatloaf recipe involves a lot of heavy beef and ketchup, and there’s nothing wrong with that, but it’s not always what you want for breakfast.
  • Breakfast Carnitas. Bacon is not your only option for starting the morning with a big plate of delicious fatty pork! Carnitas also hit that crispy sweet spot, and they’re great reheated.
  • Breakfast Casserole. If you read “casserole” and your mind went straight to noodles and bread crumbs, it’s time to rethink. Casseroles can be perfectly healthy, and they’re great for baking in advance and then stashing in the fridge for quick meals later.
  • Chicken Drumsticks. You won’t see them on the menu at IHOP, but chicken drumsticks are actually perfect for breakfast. They’re good hot or cold, they’re easy to grab and eat, and you can do almost anything with them in terms of flavor.
