HEALTHY BREAKFAST COOKIES

Healthy Breakfast Cookies image

Whip up the ultimate grab-and-go morning meal with a recipe for soft and chewy Healthy Breakfast Cookies loaded with fiber and protein.

Provided by Kelly Senyei

Time 25m

Number Of Ingredients 9

1 cup creamy peanut butter (or other nut butter)
1/4 cup honey
1 teaspoon vanilla extract
2 medium ripe bananas, mashed
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 1/4 cups quick oats
1/2 cup dried cranberries or raisins
2/3 cup chopped nuts, such as almonds, walnuts or pistachios

Steps:

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper or a Silpat.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter, honey, vanilla extract, mashed bananas, salt and cinnamon.
  • Add the oats, dried cranberries and nuts and mix until combined. Scoop about 1/4-cup mounds of the cookie dough onto the baking sheet, flattening each cookie slightly. (The cookies will not spread while baking, so you can space them relatively close together.)
  • Bake the cookies for 14 to 16 minutes until they're golden brown but still soft. Remove the cookies from the oven then allow them to cool for 5 minutes on the baking sheet before transferring them to a rack to cool completely.

MONSTER BREAKFAST COOKIES

Monster Breakfast Cookies image

These are a perfect treat when on the go, or first thing in the morning before a run/walk, or in the middle of the night while nursing a hungry infant! Walnuts are a great add (try 1/2 cup raisins and 1/2 cup walnuts), but they do make the cookies a bite drier. You can use white flour or a mixture of white and whole-wheat.

MONSTER COOKIES RECIPE

Monster Cookies Recipe image

Provided by Shiran

Time 26m

Number Of Ingredients 12

3/4 cup plus 2 tablespoons ((125 g/4.4 oz) all-purpose flour)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick/115 g) unsalted butter, at room temperature
1/2 cup (100 g/3.5 oz) light brown sugar (dark is fine, too)
1/4 cup (50 g/1.7 oz) granulated sugar
½ cup (125 g/4.4 oz) creamy peanut butter
1 large egg (, at room temperature)
1 teaspoons pure vanilla extract
1 and 1/4 cups ((120 g/4 oz) old-fashioned rolled oats)
3/4 cup multi-colored candies (, such as M&M's)
1/2 cup (85 g/3 oz) bittersweet or semi-sweet chocolate chips, optional

Steps:

  • Preheat oven to 350°F/180°C. Line two baking sheets with parchment paper and set aside.
  • In a large bowl, sift together flour, baking soda, and salt. Set aside. In a standing mixer fitted with the paddle attachment, beat butter and sugars for 2-3 minutes, until fluffy. Beat in peanut butter, vanilla, and egg, and beat well until combined. Add flour mixture and beat on low speed just until combined. Don't over mix. Add in oatmeal, candies, and chocolate chips, and keep mixing on low just until combined. The less you mix, the softer the cookies will be.
  • Drop rounded balls of dough onto prepared baking sheets, the size of 2 tablespoons each (I use an ice cream scoop), spacing them 2 inches apart. Bake for 9-12 minutes, until cookies just begin to brown at the edges and center is still soft. Cookies will appear undone and moist in the center, but will continue to bake on the warm baking sheet. Leave to cool for 10 minutes, then transfer to a wire rack to cool completely.
  • Store cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months. To thaw, leave on counter, still covered, or overnight in the fridge.

MONSTER COOKIES RECIPE

Monster Cookies Recipe image

This Monster Cookies recipe combines peanut butter, oats, chocolate chips and M&M's for a giant, chewy cookie that will become a family favorite. Use different colored M&M's to make these giant monster cookies for any holiday or occasion!

Provided by The Wanderlust Kitchen

Categories     Cookies

Time 1h20m

Number Of Ingredients 12

6 eggs
2 1/3 cups firmly packed brown sugar
2 cups white sugar
2 sticks of butter (1/2 pound, softened to room temperature)
1 Tablespoon light corn syrup
1 teaspoon vanilla
4 teaspoons baking soda
2 1/4 cups peanut butter (you can use smooth or crunchy)
1 1/2 cups flour
7 cups quick 3 minute oats
1 1/3 cups semi-sweet chocolate chips
1 1/3 cup M&M's candies (standard size, any color combination you want)

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Spray cookie sheets with nonstick spray or line with parchment paper or silicone mats. Use 4 cookie sheets to allow one set to cool while the next set is baking.
  • Set aside 1/3 cup of the M&M's for adding to the top of the cookies later.
  • In a large mixing bowl combine the peanut butter, butter, white sugar, brown sugar and corn syrup. Use an electric mixer to mix until it is well combined.
  • Mix in the eggs, vanilla, baking soda and flour.
  • Mix in the oats.
  • Stir in the chocolate chips and M&M's (just 1 cup, keep the other 1/3 cup for later)
  • Make large dough balls and pat them out into rounds that are about 3 1/2 inches in diameter and 1/2 inch tall. Place them on a cookie sheet with space around them to grow. You should only put 6 per cookie sheet. For the 60 minute cook time, you will need to cook 2 cookie sheets at a time.
  • Add a few of the saved M&M's to the top of the cookies to make them pretty.
  • Bake for 10-12 minutes until they turn golden brown around the edges. Make sure that you do not over bake them.
  • Let the cookies cool for 5 minutes on the cookie sheets.
  • Transfer to wire racks and allow them to cool completely before storing in an airtight container with wax paper between the layers of cookies to keep them from sticking together.
  • Optionally, freeze some for later.

If you are in a hurry in the morning you can make these ahead, though we like them warm, or you can mix the dry ingredients before and then just add the applesauce just before baking. BREAKFAST COOKIES

Breakfast Cookies image

These healthy breakfast cookies are so wholesomely delicious!

Provided by Chocolate Covered Katie

Categories     Breakfast     Dessert

Time 15m

Number Of Ingredients 9

1/2 cup rolled oats
scant 1/2 cup applesauce or mashed banana
1/4 cup almond or cashew butter OR allergy-friendly sub
1/2 tsp pure vanilla extract
1/16 tsp salt
2-3 tbsp mini chocolate chips or sugar free chocolate chips
2 1/2 tbsp freeze-dried raspberries OR 2 tbsp dried fruit or more chocolate chips
optional 2 tbsp sugar or pinch stevia ((see note below))
optional add-ins, (such as chia seeds, shredded coconut, etc.)

Steps:

  • *Especially if using banana, you can easily omit the added sweetener entirely for a wholesomely delicious taste that's like eating mini muffins in the form of a cookie. If you'd prefer more of a dessert taste, add extra sweetener as desired, starting with the listed 2 tbsp and going from there - if you want to use a liquid sweetener, just cut back on the banana or applesauce.Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter until smooth, then stir in all other ingredients until well-combined. Shape into cookies-I used a mini cookie scoop-and bake on a greased cookie sheet for around 15 minutes. Let cool 10 minutes before removing from sheet. This makes 18 mini cookies (as shown in the photos), or 10-12 bigger cookies.View Nutrition Facts

  • Gluten-Free Cranberry Walnut Oatmeal Cookies. Cookies have a reputation as a not-so-great treat for those with gluten allergies, but times are changing.
  • Protein-Packed Monster Breakfast Cookies. Why stick to breakfast shakes when you can get protein from cookies? Made with sunflower-seed spread (though any nut butter would work), flax meal, chocolate chips, hemp seed, and shredded coconut, this power breakfast provides as many healthy fats as flavor bursts.

  • Peanut Butter Banana Oat Breakfast Cookies. Combining peanut butter and banana is a breakfast no-brainer. Whether using the duo as a toast topper, smoothie addition, or oatmeal mix-in, peanut butter and banana make any breakfast food taste better.
  • Carrot Cake Breakfast Cookies. This recipe isn’t just a cookie—it’s a cookie that’s flavored like a cake. Twice the treat power! But don’t let the name fool you.
