CLASSIC PATTY MELT
A quick, easy, and basic recipe for patty melts. I used Jewish rye bread but any bread will work as long as it's rye. I double the cheese but feel free to use 1 slice per patty melt.

Steps:
- Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
- Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.
- Meanwhile, spread 1 teaspoons mayonnaise on one side of each slice of bread.
- Place bread mayonnaise side-down in the skillet. Top with 1 slice of cheese, 1 beef patty, 1/3 of the onions, a second slice of cheese, and another slice of bread, mayonnaise side up. Cook bread until golden brown and cheese has started to melt, 3 to 4 minutes. Flip each sandwich over and cook an additional 3 to 4 minutes.

BREAKFAST GRILLED CHEESE MELT

Steps:
- Preheat a griddle or skillet to medium low heat.
- Take two slices of bread and spread 1/2 Tablespoon of the Chipotle Aioli Mayo on each piece.
- Place two pieces (or one, depending on how big your sour dough bread slices are) of provolone cheese, and pepper jack cheese, and place two slices, on each piece of sauced bread.
- Place a scoop of scrambled eggs and two slices of bacon on one of the slices. Top with green bell pepper and salt and pepper.
- Place your other slice of bread with cheese on sauce, on top, completing the sandwich.
- Spray your griddle or skillet with a butter or oil based spray, and place your sandwich on top.
- Grill each side for about 2-3 minutes, or until golden brown and the cheese begins to melt.
- Flip and do the same on the other side.
- Remove from the heat, once both sides are cooked, cut into triangles, and dig in.

MURRAY'S BREAKFAST MELT
Named one of the top breakfast sandwiches in New York, this melt from Murray's Cheese is simply a delight.

Steps:
- Place cheese in freezer until well chilled, about 10 minutes. Meanwhile, place bacon on a griddle over medium-high heat; cook until crisp. Transfer to a paper towel-lined plate to drain.
- Remove cheese from freezer, cut two slices, and grate remaining cheese on the largest holes of a box grater; set aside.
- Place English muffin split-side down in skillet; cook until toasted. Turn and top each half with a slice of cheese. Reduce heat and cook until cheese is melted. Remove from heat and set aside.
- Melt butter on griddle; crack egg onto melted and fry until whites are set; turn and top egg with grated cheese; continue cooking until yolk has reached desired degree of doneness.
- Carefully transfer egg to large muffin half. Top egg with bacon and sandwich with remaining muffin half; serve immediately.

My husband loves these, they are nice for a brunch with the girlfriends or a quick warm treat that can be reheated all morning!

Steps:
- Cut bread into 20 1/4-inch slices. Arrange slices on a baking stone.
- Cook Bacon and crumble.
- Chop onion, bell pepper, mushrooms & Sun Dried Tomatoes and put in small bowl. Add 1/8 c of cheese and bacon.
- In another bowl, crack eggs and add whipping cream and whisk. Spray Pam on frying pan and heat on medium for 1 minute.
- Add chopped ingredients to egg mixture and whisk again. Add to pan. Cook "making scrambled eggs".
- Divide egg mixture (after cooked) evenly among bread slices. Divide 2 cups of cheese evenly over the 20 pieces.
- Bake 15-18 minutes or until golden brown. Serve hot.
