HASH BROWN BREAKFAST PIZZA
Shouldn't the most important meal of the day take a turn at being the most delicious? We think so; and with this crispy, cheesy breakfast pizza, it can. Utilizing frozen hash browns for the crust, this morning pie is easy to make, ridiculously tasty, and totally portable. You can even prep the pizza ahead of time and simply reheat portions as you need them throughout the week. Customize with your family's favorite toppings and it's sure to be a fast favorite.

- Preheat oven to 450 degrees F. Coat a 15 1/2- x 10 1/2-inch jelly roll pan with oil.
- Arrange potatoes in a single layer in pan. Bake in preheated oven 10 minutes.
- Remove potatoes from oven. Use the back of a wooden spoon to flatten potatoes until the rounds touch and cover the entire pan. Continue baking until crisp, about 20 minutes.
- While potato crust bakes, cook eggs in a nonstick skillet over medium-low, stirring often, until very soft-scrambled. Set aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble once cool.
- Top crust evenly with 3/4 cup cheese. Top with scrambled eggs and bacon. Sprinkle remaining cheese over breakfast pizza. Bake until cheese is melted and bubbly, 8 to 10 minutes. Garnish with chives.

Steps:
- 1. PREP/PREPARE
- 2. THE HASH BROWN CRUST
- 3. Gather your ingredients.
- 4. Place a rack in the upper position, and preheat the oven to 400f (205c).
- 5. In a small bowl, whisk the egg, and add a bit of salt and pepper, to taste.
- 6. Add to the hash browns, and toss to combine.
- 7. Shape the hash browns into a disk on a parchment-lined baking sheet.
- 8. Place into the oven and bake until golden brown, about 20 minutes.
- 9. Remove from the oven, and reserve.
- 10. THE TOPPINGS
- 11. Gather your ingredients.
- 12. Add the breakfast sausage to a skillet over medium heat.
- 13. Cook, breaking up with a wooden spoon, until no longer pink.
- 14. Add the eggs into the skillet, and lightly scramble with the sausage
- 15. Add the sausage/egg mixture to the hash brown crust.
- 16. Top with the cheese.
- 17. Add the sliced cherry tomatoes to the top.
- 18. Place in the preheated oven for an additional 5 to 7 minutes, or until the cheese has melted.
- 19. Chef's Tip: If you want the crust to be a bit more crispy, place it on a raised wire rack.
- 20. PLATE/PRESENT
- 21. Cut into wedges, and serve while still nice and warm.
- 22. If you really want to be decadent, serve with some hollandaise sauce. Enjoy.

- For the crust: Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
- In a bowl, mix together the hash browns, pepper jack, Cheddar, butter and eggs. Season with a good pinch of salt and pepper. Add the cayenne. Mix well.
- Spray the parchment with cooking spray and add the hash brown mix. Shape into a large rectangle. Bake until the edges are golden brown, about 25 minutes.
- For the toppings: Remove the hash brown crust from the oven. Top with the pepper jack, Cheddar, scallions and red and green bell peppers. Add the bacon, tearing it into pieces as you go. Return the pizza to the oven until the cheese is melted and the veggies are roasted, 12 to 14 minutes.
- Using a pizza cutter, cut the pizza into slices and serve with salsa, sour cream, cilantro and sliced scallions.

- Heat 2 tablespoons of the oil in a 10-inch heavy-bottomed pan or cast-iron skillet. Mix the potatoes with the eggs and flour.
