SOFT SCRAMBLED EGGS WITH BRIE

Steps:
- Freeze the cheese about 10 minutes, then cut off the rind and slice the cheese into 1-inch cubes. (Freezing makes it easier to cut.)
- Whisk the eggs, milk, parsley and chives in a bowl; season with salt and pepper.
- Heat a large nonstick skillet over medium-high heat, then add the butter. When the foam subsides, add the egg mixture and cook, undisturbed, until the edges set, about 30 seconds. Using a rubber spatula, pull the set egg around the edges into the center of the pan. Repeat, drawing the spatula around the edge of the pan, until most of the eggs are set, about 5 minutes.
- Scatter the cheese on top and let melt slightly, then fold the eggs over the cheese. Remove from the heat and let sit until the cheese melts, about 1 more minute.

- In 12-inch nonstick skillet, melt butter over medium heat. Add Canadian bacon and spinach; cook and stir 1 minute, just until spinach begins to wilt.
- Pour egg mixture over spinach mixture; add cheese. Cook 3 to 5 minutes, stirring occasionally, until eggs are set but slightly moist. Spoon 1/2 cup egg mixture onto each muffin half.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. add the potatoes, water, salt and pepper. Cover and simmer for 20 minutes or until potatoes are tender. , Add tomatoes; cook for 5 minutes. Pour eggs over mixture. Cook and stir until eggs are completely set. Top with cheese. - Pre-heat the oven to 350FPlace butter in a small cast iron pan or small baking dish and place in the oven to melt.
- Crack eggs into a bowl, salt and pepper them and scramble with a fork.Cut the 1/4 of an apple into bite size pieces.
- Open the oven and pull out the rack that has the pan with the melted butter. Add in the apple pieces, cover with scrambled egg and break brie off into bite size chunks and scatter around in the eggs. Close oven and bake for 18-22 minutes, until eggs are set and it's starting to become golden.
- Remove from oven and place on a heat safe serving surface. Allow to cool for a minute and dig in.

Crisp bacon, softly-scrambled eggs, French brie, and fresh, fragrant rosemary -- this breakfast or supper dish is a treat for both the nose and the taste buds.

- In a skillet set over medium-low heat, fry the bacon until crisp. Drain on paper towels. While the bacon is cooking, break the eggs into a bowl, add a pinch each of salt and pepper, and whisk to combine. Tip the beaten egg mixture into the hot skillet, and while slowly stirring with a heat-proof whisk, scramble the eggs just until done -- about 30 seconds. Do not overcook the eggs!
- Quickly wipe out the skillet, add a glug of good olive oil, and set the pan over medium heat. Add the slice of sourdough boule, and let it fry until crisp and golden -- about 1 minute per side.
- Put the bacon, eggs,and bread on a plate, and sprinkle the eggs with a big pinch of the chopped rosemary. Place the sliced brie over the eggs, and garnish with an additional pinch of rosemary. Enjoy with coffee for breakfast, or with champagne or prosecco for dinner.
