These easy, mini baked omelets are perfect to make ahead for the week.

9 large whole eggs
1/4 teaspoon kosher salt
black pepper
3 strips cooked chopped bacon
3 tablespoons thawed frozen spinach (drained)
3 tbsp diced tomatoes
3 tbsp diced onion
3 tbsp diced bell pepper
2 oz shredded cheddar

Steps:

  • Preheat the oven to 350F. Spray the muffin tins with cooking spray.
  • In a large bowl whisk the eggs, season with salt and pepper.
  • Mix in the remaining ingredients.
  • Fill and place tins on a cookie sheet and bake 20 to 25 minutes, until set.

1 bunch green onions, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
8 large eggs
2 ¾ ounces fully-cooked bacon pieces (such as Oscar Mayer®)
¼ cup whole milk
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
salt and ground black pepper to taste
½ (8 ounce) package shredded mild Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.
  • Pour mixture equally into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool slightly before serving.

12 eggs
3 tablespoons milk or half and half
2 cups fillings sausage, ham, green onions, peppers, tomatoes etc.
2 cups cheese, shredded
2 teaspoons seasonings of your choice

Steps:

  • Preheat your oven to 375°F. Spray a regular 12 cup muffin tin with nonstick spray or use liners. Chop all your fillings and place a bit of each, including the cheese, into the bottom of the cups. Fill them about 2/3 to 3/4 of the way full. Beat eggs with the milk (you can skip the milk if you prefer), and season to your liking. Pour egg mixture into each cup, level with the pan edge. Bake 25 to 30 minutes. Muffins will puff up a little bit and brown around the edges. Cool before removing from muffin tin.

1 onion, chopped
10 eggs, or more to taste
¼ cup milk
1 (6 ounce) package fresh spinach, chopped
1 (8 ounce) package shredded Colby Jack cheese
1 tablespoon hot pepper sauce
1 teaspoon Italian seasoning
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 muffin tins. Line a baking sheet with aluminum foil.
  • Lay bacon strips in a single layer on the baking sheet. Bake in the preheated oven until browned and crisp, about 30 minutes. Reserve grease. Drain bacon slices on paper towels. Chop into small pieces.
  • Transfer bacon grease to a skillet. Cook onion in the skillet over medium heat until transparent. Drain on paper towels.
  • Whisk eggs and milk together in a bowl. Add bacon, onion, spinach, Colby Jack cheese, hot pepper sauce, Italian seasoning, salt, and pepper. Scoop mixture into muffin pans using an ice cream scoop, filling cups 3/4 full.

Healthy Breakfast Egg Muffins. Easy, low carb and freezer friendly, these egg muffin cups are easy to store and reheat. Add spinach, sausage or hash browns! You can make them cheesy or keep them dairy free for a Paleo and Whole30 breakfast.

1 cup lightly packed baby spinach (chopped)
3/4 cup finely diced red bell pepper (about 1 small pepper)
3/4 cup finely diced green bell pepper (about 1 small pepper)
3/4 cup quartered cherry tomatoes ( or grape tomatoes, about 1 cup whole tomatoes)
6 large eggs
4 large egg whites
1/4 teaspoon kosher salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Pinch ground black pepper (or cayenne pepper if you like a little kick!)
1/4 cup crumbled feta cheese (plus additional to sprinkle on top)
Optional toppings: avocado (salsa, hot sauce, freshly chopped parsley)

Steps:

  • Place a rack in the center of your oven and preheat to 350 degrees F. Lightly coat a standard 12-cup muffin tin with nonstick spray. Divide the spinach, red bell pepper, green bell pepper, and tomatoes among the cups (they will be about two-thirds of the way full).
  • In a large bowl or large measuring cup with a spout (my favorite because it makes the mixture easy to pour), briskly whisk together the eggs, egg whites, salt, basil, oregano, and pepper until well combined. Carefully fill each muffin cup three-quarters of the way to the top with the egg mixture. Sprinkle the feta evenly over the tops of the cups.
  • Bake for 24 to 28 minutes, until the egg muffins are set. Let cool for a few minutes, and then run a butter knife around the edges of each muffin to loosen it. Remove them from the pan and enjoy immediately, or let cool on a wire rack and refrigerate or freeze for later (see notes for more details).

1/2 pound bulk pork sausage
12 large eggs
1/2 cup chopped onion

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink; drain., In a large bowl, beat eggs. Add onion, green pepper, salt, garlic powder and pepper. Stir in sausage and cheese., Spoon by 1/3 cupfuls into greased muffin cups. Bake until a knife inserted in the center comes out clean, 20-25 minutes.Freeze option: Cool baked egg muffins. Cover and place on waxed paper-lined baking sheets and freeze until firm. Transfer to freezer container; return to freezer. To use, place in greased muffin pan, cover loosely with foil and reheat in a preheated 350° oven until heated through. Or, microwave each muffin on high 30-60 seconds or until heated through.

8 large eggs
1/2 cup milk (I use skim or low fat, but whole milk also works)
1 cup shredded cheddar cheese
1 cup bell peppers (diced (I used a mix of red, orange and green))
1/2 cup baby spinach (roughly chopped)
1/4 tsp salt
2 scallions (thinly sliced)

Steps:

  • Preheat oven to 350°F. Grease the interior of a nonstick muffin pan.
  • In a medium bowl, add eggs and milk. Whisk until uniform. Stir in cheese, bell peppers, spinach, salt, scallions and any other omelet ingredients you are adding.
  • Scoop batter into muffin tin, filling them almost to the rim. You should have enough batter for 12 muffins.
  • Bake for about 20-25 minutes, or until eggs are cooked. The muffins will initially be very puffy, but will sink back down when they cool.
  • Use a thin spatula to loosen edges of muffins to remove them from the pan. Eat while warm. Store uneaten muffins in fridge or freezer.

3 tablespoon(s) butter
1 teaspoon(s) garlic salt
1 teaspoon(s) onion salt
6 - eggs
1/3 cup(s) milk
1 1/2 cup(s) shredded cheddar cheese
1 1/2 cup(s) french's french fried onions

Steps:

  • Preheat oven to 350 degrees. Melt butter in a frying pan & add vegetables (in this case I used broccoli, cauliflower & carrots). While frying veggies, add garlic salt & onion salt. Stir until veggies until they start to become golden brown.
  • In a medium bowl, add eggs & milk. Stir until well blended (you may add a little salt if desired).
  • In a GREASED muffin pan, fill each cup with vegetables about 1 big spoonful. Then, pour egg mixture into cups with veggies.
  • Bake for about 15-20 minutes. About half way through cooking, top each omelette muffin with shredded cheese & french fried onions.
  • When finished, let cool for about 5 minutes & enjoy.
