1 package (20 ounces) refrigerated Southwest-style shredded hash brown potatoes
6 large eggs
1/2 cup 2% milk
1/8 teaspoon salt
1 tablespoon butter
10 thick-sliced bacon strips, cooked and crumbled
1-1/4 cups shredded cheddar-Monterey Jack cheese, divided

Steps:

  • Preheat oven to 400°. Divide potatoes among 12 greased muffin cups; press onto bottoms and up sides to form cups. Bake until light golden brown, 18-20 minutes., Meanwhile, in a small bowl, whisk eggs, milk and salt. In a large nonstick skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Stir in bacon and 3/4 cup cheese. Spoon into cups; sprinkle with remaining 1/2 cup cheese. , Bake until cheese is melted, 3-5 minutes. Cool 5 minutes before removing from pan.

30 ounces Hashbrowns (Frozen)
2 Tablespoons Vegetable oil
½ teaspoon salt
½ teaspoon pepper
6 eggs
2 Tablespoons milk
¾ cup bacon (cooked and crumbled)
¾ cup cheddar cheese (shredded)
½ cup spinach (chopped)

Steps:

  • Preheat oven to 400 degrees F.
  • Grease a muffin tin, or line with foil cupcake liners.
  • Mix together hash browns, oil, salt, and pepper.
  • Divide hash brown mixture between the 12 cups.
  • Bake for 35-40 minutes or until hash browns turn golden.
  • While they are baking, mix together eggs, milk, bacon, cheese, and spinach.
  • Divide and pour evenly over cooked hash browns. Bake for 10-13 minutes or until eggs are fluffy and cooked through.
  • Let them cool for a few minutes.

3 cups frozen country style shredded hash brown potatoes, thawed
3 tablespoons butter, melted
⅛ teaspoon salt
⅛ teaspoon pepper
6 eggs, lightly beaten
2 cups shredded 4-cheese Mexican blend cheese
¼ cup chopped red bell pepper
chopped fresh chives or green onion

Steps:

  • Prepare sausage according to package directions. cool slightly and cut into 1/2-inch pieces; set aside.
  • In a bowl, combine hash browns, butter, salt and pepper; divide evenly into 12 greased muffin cups. Press mixture onto sides and bottom of muffin cups.
  • Bake at 400 degrees F for 12 minutes or until lightly browned. Remove from oven; divide sausage pieces into muffin cups.
  • In a bowl, combine eggs, cheese and bell pepper. Spoon mixture evenly into muffin cups. Sprinkle with chives or onion. Return to oven, bake 13-15 minutes or until set. Serve.

This is yummy and filling. Great for a brunch or a house full of company. Easily cut in 1/2. I have even ran out of the patties and subbed with a package of shredded hash-browns. I just cook the bottom layer longer and then the overall dish an extra 10-15 minutes.

1/2 cup melted butter
1 lb breakfast sausage, cooked and drained
2 cups shredded monterey jack cheese, and mild cheddar blend
8 eggs
1 1/2 cups milk
1/2 cup cream
1/2 teaspoon salt

Steps:

  • Grease the bottom of a 9 by 13 pan.
  • Layer with hash-browns and pour melted butter evenly over the tops.
  • Bake at 350 for about 20 minutes.
  • Remove from oven and sprinkle the sausage evenly over the top.
  • Then sprinkle cheese.
  • In a large bowl whip eggs, milk, cream, and salt.

6 slices bread
6 slices bacon
6 eggs
¼ cup chopped onion
¼ teaspoon garlic powder
salt and ground black pepper to taste
¼ cup shredded Cheddar cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 6-cup muffin tin with cooking spray.
  • Press circles into the bread slices using a small juice glass. Place 1 circle into each muffin cup.

6 to 8 medium russet potatoes
Salt and ground pepper
Nonstick cooking spray
24 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Bake the potatoes until tender, 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.
  • Adjust the oven temperature to 450 degrees F. Spray two 12-hole muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin hole. Use your fingers to gently press down the sides and bottom in each muffin hole to make a nest. Spray again with cooking spray. Then bake for 15 to 20 minutes. Watch and make sure they do not burn.
  • Allow the nests to cool and lower the oven temperature to 400 degrees F. Then crack an egg into each nest. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.

Steps:

  • In a bowl, combine hash browns, one cup of cheddar (100 g), salt, pepper, and olive oil.
  • Divide hash brown mixture into the cups of a 12-cup muffin tin. Press the hash browns down firmly along the shape of the cups. Bake at 400°F (200°C) for 20 minutes to set the cups.

Steps:

  • Take your bag of hash browns and mix in the salt, pepper, oil and 1/3 cup shredded cheese. Divide amongst the cups in your muffin tin, making sure to grease tin beforehand. Bake hash browns at 425 degrees for 15-18 minutes or until toasty. Once they're finished, take them out and lower the temp of the oven to 350 degrees. Crack an egg into each of the cups Top with bacon and a sprinkle of extra cheese Bake at 350 degrees for 13-16 minutes (or until the eggs are as firm as you like them).
