SAUSAGE-HASH BROWN BREAKFAST CASSEROLE



Sausage-Hash Brown Breakfast Casserole image

If you're feeding a large crowd for breakfast or brunch, look no further than this crowd-pleaser, made with hash browns, sausage, and plenty of cheese. Two types of pork sausage make this hash brown casserole extra flavorful and hearty. Drain the cooked sausage well, and blot with paper towels so the finished dish won't be greasy.

1 pound pkg. ground pork sausage with sage (such as Jimmy Dean)
1 pound pkg. hot ground pork sausage
1 (30-oz.) pkg. frozen shredded hash browns
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
6 ounces sharp Cheddar cheese, shredded (about 1 1⁄2 cups), divided
6 large eggs, lightly beaten
1 cup whole milk
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 350°F. Coat a 13- x 9-inch baking dish with cooking spray. Cook sage ground sausage and hot ground sausage in a large skillet over medium-high, stirring often, until they are crumbled and browned, about 10 minutes. Remove from heat; drain well on paper towels.
  • Working in batches, cook hash browns in a large nonstick skillet according to package directions; omit salt if called for on package. Sprinkle with 1 teaspoon of the salt and 1⁄2 teaspoon of the pepper.
  • Stir together sausage, hash browns, and 1 cup of the cheese in a bowl. Spoon into prepared baking dish. Whisk together eggs, milk, and remaining 1 teaspoon salt and 1⁄2 teaspoon pepper in a medium bowl. Pour over sausage mixture. Sprinkle with remaining 1⁄2 cup cheese. Bake in preheated oven until set, about 30 minutes. Sprinkle with parsley and chives.

This recipe is from Southern Living Magazine but tweaked a bit by me. It's great for an early-morning breakfast or brunch for a crowd, because you can do most of the work ahead of time and just throw it in the oven the morning you want to serve it.

1 lb pork sausage or 2 cups cubed cooked ham
6 cups cubed bread (French bread or a chewy, rustic white bread is good)
1/4 lb medium cheddar, shredded
1/4 lb swiss cheese, shredded
6 eggs
2 cups milk
1 teaspoon salt
1/8 teaspoon pepper
3/4 teaspoon dry mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes in a lightly greased 9" X 13" baking pan.
  • Sprinkle bread evenly with cheese, and top with sausage (or ham).
  • Whisk together eggs, milk, salt, pepper, dry mustard and Worcestershire sauce and pour evenly over sausage mixture.
  • Cover and chill casserole for 8 hours (may be frozen at this point, and thawed before cooking).
  • Let stand at room temperature 30 minutes.
  • Bake at 350 degrees for 45-50 minutes, or until set.
  • Let stand 5 minutes before serving.

1 teaspoon olive oil
8 ounces hot ground pork sausage (such as Jimmy Dean)
½ cup thinly sliced scallions (about 3 scallions)
4 large eggs
¾ cup whole milk
1 tablespoon hot sauce
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
2 tablespoons chopped fresh cilantro leaves, divided
1 small russet potato, peeled
4 ounces extra-sharp Cheddar cheese, shredded (about 1 cup)

Steps:

  • Select SAUTÉ setting on a programmable pressure multicooker (such as Instant Pot). (Times, instructions, and settings may vary according to cooker brand or model.) Select HIGH temperature setting, and allow to preheat 2 to 3 minutes. Add oil and sausage to cooker; cook, stirring to crumble, until browned and no longer pink, about 5 minutes. Add scallions, and cook, stirring occasionally, until softened, about 2 minutes. Press CANCEL. Transfer sausage mixture to a plate lined with paper towels to drain.
  • Whisk together eggs, milk, hot sauce, salt, pepper, garlic powder, paprika, and 1 tablespoon of the cilantro in a medium bowl. Set aside.
  • Shred potato using the large holes on a box grater, and squeeze dry in a kitchen towel. Stir shredded potato and drained sausage into egg mixture.
  • Place a trivet in cooker; pour in 1½ cups water. Spray a 6- to 7-inch baking pan with cooking spray. Pour egg mixture into prepared pan; top with cheese. Place in cooker on top of trivet. Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position. Select MANUAL/PRESSURE COOK setting. Select HIGH pressure for 25 minutes. (It will take 5 to 10 minutes for cooker to come up to pressure before cooking begins.)

Steps:

  • Cook sausage in skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes evenly in 6 lightly greased 8 oz. individual baking dishes or ramekins; sprinkle bread evenly with cheese, and top with sausage.
  • Whisk together eggs and next four ingredients; pour evenly over sausage mixture. Cover and chill casseroles for 8 hours. Let stand at room temperature for 30 minutes.
  • Bake at 350 for 45 minutes or until set. Let stand 5 minutes before serving.

Using a slotted spoon, transfer ham to a large bowl, reserving drippings in skillet. Add remaining 1 tablespoon oil to skillet; stir in onions. Cook, stirring occasionally, until deeply browned, about 30 minutes. Add spinach; cook, stirring often, until wilted, 1 to 2 minutes. Transfer onion mixture to bowl with ham; let cool 10 minutes.
  • Whisk together eggs, milk, mustard, salt, and pepper. Add egg mixture and 1 cup of the cheese to bowl with onion mixture, and stir to combine. Arrange croissants, slightly overlapping, in 2 rows in a lightly greased 11- x 7-inch baking dish. Pour mixture over croissants. Sprinkle with remaining 1⁄2 cup cheese. Cover with aluminum foil, and chill 8 hours or up to overnight.
  • Preheat oven to 375°F. Uncover casserole, and place on a large rimmed baking sheet. Bake in preheated oven until golden brown and center is set, about 1 hour. Shield with foil after 25 minutes, if needed to prevent excess browning.
