PROSCIUTTO AND PROVOLONE CROISSANT BREAD PUDDING

Prosciutto and Provolone Croissant Bread Pudding image

Leftover croissants may seem like a stretch, but there's an easy work around to ensure you can enjoy this savory bread pudding. Some bakeries offer 2-for-1 deals on pastries after 4:00 p.m., so stock up on them then.

Provided by Jennifer Perillo

Time 3h

Yield 6 servings

Number Of Ingredients 7

Butter or cooking spray, for greasing
3 eggs
1 cup milk
1/4 teaspoon sea salt, optional
2 ounces prosciutto, cut into strips
2 ounces provolone, shredded
4 day-old croissants, cut or torn into 1/2-inch pieces

Steps:

  • Grease an 8-inch loaf pan, and then set aside.
  • In a deep bowl, beat together the eggs, milk and salt if using with a fork. Add half of the prosciutto and provolone, and all of the croissant pieces. Use a rubber spatula to stir until well mixed. Pour into the prepared pan. Press the croissants down with the spatula to help them absorb the milk mixture. Sprinkle the remaining cheese and prosciutto on top. Cover with foil, and refrigerate at least 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Bake for 20 minutes. Remove the foil, and bake until puffed and the cheese is golden, 30 minutes more. Serve hot.

TOMATO-BASIL BREAD PUDDING

Tomato-Basil Bread Pudding image

Your family will love this fresh tomato, basil, bread pudding. I make it with fresh tomatoes from my garden when in season & the rest of the time I use cherry/grape tomatoes. There is a huge difference in taste between the two. You can serve this as an appetizer, a side dish, or for breakfast.

Provided by Jim Frigyes

Categories     Vegetable Appetizers

Time 50m

Number Of Ingredients 17

butter, for greasing baking dish
FILLING
8 oz bread, cut into 3/4-inch cubes. (depending on the bread, it's almost 1/2 a loaf - i prefer ciabatta).

1 large (or 2 small) shallots, thinly sliced
3 clove garlic, minced
12 oz cherry or grape tomatoes, halved
kosher salt & black pepper to taste
1 c packed, chopped fresh basil leaves
1 1/2 c parmesan or romano cheese, freshly grated
CUSTARD
1 c whole milk

1/2 tsp onion powder or granulated onion

Steps:

  • 1. Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
  • 2. FILLING: Butter a 9x13x2-inch glass baking dish. Add the bread cubes & set aside.
  • 3. In a large skillet, heat the olive oil over medium-high heat. Add the shallots & garlic - cook, stirring constantly until fragrant, about 1 minute. Add the tomatoes & season w/salt & pepper to taste. Cook until slightly soft, about 2 minutes.
  • 4. Remove the pan from the heat & stir in the basil. Pour the tomato mixture & the cheese over the bread cubes & combine well.
  • 5. CUSTARD: In a large bowl, beat the eggs, sat, pepper, garlic powder, onion powder, & milk together until smooth. Pour the custard over the bread mixture & gently toss to coat.
  • 6. Bake until slightly puffed & golden, about 25 to 30 minutes. Remove the pudding from the oven & let cool for 5 minutes. Cut into wedges & serve. Serve warm or at room temperature.
  • 7. Notes: *You can substitute red or green onions for the shallots. *You can substitute fresh diced tomatoes from the garden in place of cherry/grape tomatoes. Will taste even better with garden tomatoes.

SKILLET FRESH PROSCIUTTO, TOMATO AND BASIL PASTA

Skillet Fresh Prosciutto, Tomato and Basil Pasta image

This is a wonderfully fresh pasta that is perfect for summer. You can't beat the flavors of the fresh tomatoes and basil mixed with the simpleness of the prosciutto.

Provided by Kathi Hamill

Categories     Pasta Sides

Time 45m

Number Of Ingredients 8

1/2 lb prosciutto, cut into shreds
1 onion, chopped
2-3 garlic cloves, minced
3-4 large tomatoes, sliced into thin wedges
1/2 c fresh basil leaves, chopped (or more, if you like basil)
1 Tbsp dried parsley
1/2 c dry red wine (merlot, burgundy, etc.)
1 lb spaghetti, cooked al dente

Steps:

  • 1. In a large frying pan, toss prosciutto in butter until browned.
  • 2. Add onion and garlic and sauté briefly, until just tender.
  • 3. Add sliced tomatoes, basil, parsley and wine and simmer for 15-20 minutes.
  • 4. Pour over pasta, toss, and serve!
  • 5. NOTE: This is a simple recipe that can be adjusted to your individual tastes. You can add more prosciutto or tomatoes as you like, but I would increase the red wine a little as you increase the other ingredients.
  • 6. NOTE: when you buy your prosciutto at the deli, they will try to put pieces of paper/plastic in between the slices. Tell them not to do this, as you are going to roll up the prosciutto and cut it up. It makes it a lot harder if you have to peel the slices off the paper/plastic first.

  • Bring a large saucepan of water to a boil and fill a large bowl with ice water. Using a sharp knife, make a shallow X in the bottom of each tomato. Plunge the tomatoes into the boiling water for 10 seconds, then immediately transfer them to the ice water. Peel and core the tomatoes and halve them horizontally. Set a strainer over a medium bowl and scoop the seeds and pulp from the tomatoes into it. Press the pulp to extract as much of the juice as possible; there should be 1 cup. If not, add enough of the tomato juice to make 1 cup.
  • Arrange the tomatoes, cut side up, on a large plate, sprinkle with the garlic and season with salt and pepper. Drizzle with 2 tablespoons of the olive oil and let stand for 30 minutes. Add any juices that accumulate on the plate to the strained tomato juice.
  • Preheat a cast-iron grill pan or preheat the broiler. Brush the baguette slices on both sides with the remaining 1/4 cup of olive oil and grill until golden, about 1 minute per side. Transfer the toasts to a large plate. Add the tomatoes, cut side down, to the grill and cook just until lightly charred, about 1 minute. Return the tomatoes to the plate and flatten slightly with a spatula.
  • Preheat the oven to 350°. Lightly oil a shallow 8-by-11-inch baking dish and arrange half of the tomatoes on the bottom. Sprinkle the tomatoes with 2 tablespoons each of parsley and basil and season with salt and pepper. Top with half of the toasts; repeat with the remaining tomatoes, 2 tablespoons each of parsley and basil and the remaining toasts. Pour the tomato juice over the toasts. Lightly oil a sheet of parchment paper and place it directly on the toasts. Cover the bread pudding with foil, pressing slightly to compact it.
