- Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
- In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
- Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
- Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

- Preheat oven to 450 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.
- Place potatoes in a mound in center of baking sheet. Drizzle with olive oil.
- Sprinkle potatoes with salt, pepper, garlic powder, paprika and onion powder. Toss well to evenly coat in oil and spices.
- Spread potatoes even into a single layer. Bake in center of preheated oven 15 minutes.
- Remove from oven, toss and continue to bake until just tender, about 15 minutes longer.
- Move oven rack about 5-inches from broiler.
- Broil potatoes about 2 - 3 minutes until slightly browned (keep a close eye on them and don't walk away they can brown quickly!).
- Remove and toss, continue to broil until golden brown and crisp on opposite side a minute or two longer. Serve warm.

- Preheat oven to 350.
- In a large skillet, cook slices of bacon until crispy. Remove cooked bacon from pan, drain excess grease on paper towels and cool before crumbling. Set crumbled bacon aside.
- In the same pan with the bacon grease, add chopped onion, tiny diced potatoes, and chopped up green and red peppers. Heat all together for about 5 minutes on medium heat until onion is tender.
- Add water and cover pan.
- Heat vegetable mixture for 10-12 minutes, stirring occasionally until potatoes are soft and tender.
- Remove from heat and add drained black beans, green onion, cooked bacon and all of the spices. Mix well.
- In a separate mixing bowl, combine eggs and half and half. Whisk together well.
- Fold in half of each of the shredded cheese and pour entire mixture over the vegetables in the skillet.
- Use a spatula to evenly distribute the eggs and sprinkle top with remaining shredded cheese.
- Bake cowboy breakfast casserole for 30 minutes or until center is set.
- Let casserole stand for 10 minutes before serving.

Nice combonation of sausage, eggs and cheese. I didn't have any potaoes and was concerned it wouldn't be as tastey or as filling without them so that is where the Bisquick comes in. I will be honest, I did not even get to try a bite (long story) but it was gone with no leftovers so I guess it wasn't bad :) This also can be made the day before and refrigerated.
