24 ounces frozen shredded potatoes
salt and pepper
12 eggs
2 cup half and half
1 teaspoon season salt
1 1/2 cup cheddar cheese (grated)
1 1/2 cup pepper jack cheese (grated)
2 cup chopped ham (Or your preferred meat, sausage would also be great)

Steps:

  • Grease a 9x13 inch pan. Add the frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
  • In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  • Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  • Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.

1 pkg O'Brien Southern Diced Potatoes
2 cups mild cheddar cheese (shredded)
8 slices bacon, cooked and cut into smaller 1/2 inch pieces to put on top of casserole
salt & pepper to taste

Steps:

  • Preheat oven to 375 degrees
  • Melt the butter in a large skillet and saute the diced poblano pepper until browned, almost blackened. Add the frozen hash browns, some salt and pepper and toss together.
  • Tip into a buttered baking dish and top with the cheese and lastly bacon.
  • Bake until hot and bubbly, about 30 minutes.

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed

1-1/2 cups 4% cottage cheese
1-1/4 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

2 1/2 lbs. red potatoes ((5 large), cut cubes just over 1/2-inch)
1/3 cup olive oil
1 tsp salt, (then more to taste)
1 tsp freshly ground black pepper
3/4 tsp garlic powder
3/4 tsp paprika
1/2 tsp onion powder

Steps:

  • Preheat oven to 450 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.
  • Place potatoes in a mound in center of baking sheet. Drizzle with olive oil.
  • Sprinkle potatoes with salt, pepper, garlic powder, paprika and onion powder. Toss well to evenly coat in oil and spices.
  • Spread potatoes even into a single layer. Bake in center of preheated oven 15 minutes.
  • Remove from oven, toss and continue to bake until just tender, about 15 minutes longer.
  • Move oven rack about 5-inches from broiler.
  • Broil potatoes about 2 - 3 minutes until slightly browned (keep a close eye on them and don't walk away they can brown quickly!).
  • Remove and toss, continue to broil until golden brown and crisp on opposite side a minute or two longer. Serve warm.

6 slices bacon
1/2 cup diced onion
2 russet potatoes (peeled and diced)
1 green pepper (chopped)
1 red pepper (chopped)
1/4 cup water
1 cup black beans (drained and rinsed)
3 green onions (chopped)
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon ground pepper
10 eggs
1/4 cup half and half
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese

Steps:

  • Preheat oven to 350.
  • In a large skillet, cook slices of bacon until crispy. Remove cooked bacon from pan, drain excess grease on paper towels and cool before crumbling. Set crumbled bacon aside.
  • In the same pan with the bacon grease, add chopped onion, tiny diced potatoes, and chopped up green and red peppers. Heat all together for about 5 minutes on medium heat until onion is tender.
  • Add water and cover pan.
  • Heat vegetable mixture for 10-12 minutes, stirring occasionally until potatoes are soft and tender.
  • Remove from heat and add drained black beans, green onion, cooked bacon and all of the spices. Mix well.
  • In a separate mixing bowl, combine eggs and half and half. Whisk together well.
  • Fold in half of each of the shredded cheese and pour entire mixture over the vegetables in the skillet.
  • Use a spatula to evenly distribute the eggs and sprinkle top with remaining shredded cheese.
  • Bake cowboy breakfast casserole for 30 minutes or until center is set.
  • Let casserole stand for 10 minutes before serving.

Nice combonation of sausage, eggs and cheese. I didn't have any potaoes and was concerned it wouldn't be as tastey or as filling without them so that is where the Bisquick comes in. I will be honest, I did not even get to try a bite (long story) but it was gone with no leftovers so I guess it wasn't bad :) This also can be made the day before and refrigerated.

1 lb sausage, cooked and crumbled (any flavor you like best)
1 cup shredded cheddar cheese (I ended up using more like 2 cups)
1 medium onion, chopped
6 -8 white mushroom caps, sliced
1 cup Bisquick baking mix
5 eggs, beaten
2 cups milk
salt

Steps:

  • Spray 9x13 inch baking dish (glass is best).
  • Layer cooked sausage, cheese, raw onion and mushroom in dish.
  • Mix Bisquick, salt and eggs. Beat well.
  • Add milk and stir until smooth.
  • Pour over mixture in dish. (can be covered and refrigerated at this point).
  • Bake covered at 350 degrees F for 35 minutes (add 5-10 if refrigerated).

  • In a large non-stick skillet (I like this one) over medium heat, cook sausage, onions, mushrooms, and garlic until sausage is no longer pink and mushrooms have given off some of their liquid, about 10 minutes. Throughout cooking, stir to crumble sausage and break up mushrooms. (You can leave the mushrooms in larger slices or break them into almost unnoticeable little pieces as you crumble the sausage.) Drain the liquid.
  • In a 9x13 pan coated with cooking spray, layer potatoes (there is no need to thaw them), sausage mixture, 1 cup cheese, green peppers, tomatoes, and green onions.
  • In a medium bowl, combine eggs, milk, parsley, salt, basil, and pepper. Whisk thoroughly to combine, then add remaining 1 cup of cheese and whisk again.
