BREAKFAST BAGEL SANDWICHES (OAMC)
While searching for a great make ahead breakfast I tried this and it worked great! Hope you enjoy it too :)

Steps:
- Slice each bagel in half.
- Lightly butter each side.
- To cook eggs, lightly grease a mug or small bowl or ramekin; beat eggs in that bowl and microwave 30 seconds; remove egg in one piece and repeat for remaining eggs. Or take Swan Valley Tammi's idea and pre-cook the bacon, chop it up and add it to the eggs. Pour into greased muffin tins. Bake at 400 degrees Fahrenheit for 12 minutes so all 12 egg/bacon 'patties' are done at the same time.
- On the bottom half of the bagel place cooked egg.
- Top each egg with approximately 1 Tablespoon grated cheese.
- Stack bacon on top.
- Complete sandwich with top of bagel.
- Cool slightly; wrap in plastic wrap individually; place in a large labeled zipper freezer bag.
- To serve, remove 1 bagel sandwich from bag and remove wrapping.
- Place upside down in microwave and heat for 30 seconds.
- Place right side up and microwave for 30 seconds more or until heated through. **Time may vary in your microwave**.
- Eat warm.

- First prepare the sauce by combining the mayonnaise with the dill mustard in a small bowl. Set this aside until you are ready to use it.
- To prepare the eggs it's best to make one at a time in a small 6-inch skillet. If you have more than one of these small pans, you can save a little time.
- First preheat pan over low heat. Add 1/4 teaspoon of butter. Add 1/2 teaspoon of minced green pepper along with 1/2 teaspoon minced white onion to the pan and saute for a couple minutes, or until softened.
- Beat an egg in a small bowl with a whisk until it is smooth, but not foamy. Add a pinch of salt and pepper to the egg.
- Add the egg to the pan with the vegetables. Swirl the pan so that the egg spreads out.
- As the egg begins to cook, use a spatula to pull in a couple of the edges so that raw egg flows around from the top onto the hot pan. Cook for 2 to 3 minutes, then fold over one of the edges of the egg using a spoon or fork. Fold it down about an inch. Fold the opposite end over as well. Then fold the remaining two edges over, creating a small rectangular or square mini-omelet.
- Repeat with peppers, onions and one egg EACH until you have four square mini omelets.
- Flip the little omelets over and turn off the heat.
- Press the sausage into four 2-ounce patties approximately the size of the bagel. Cook the sausage in a large skillet over medium heat until brown. Drain when done.
- Slice a bagel in half and place it with the faces up on a baking sheet. Grill the faces of the bagel halves in your oven set on broil until golden brown. You may also use a toaster oven for this step, but be sure to place the sliced bagel halves onto a small baking sheet or on aluminum foil.
- When the bagels are toasted, spread about 1/2 tablespoon of the sauce onto the face of the top bagel half. Place a slice of American cheese onto the face of the top bagel half. Place a slice of Monterey Jack cheese over the face of the bottom bagel half. Place a sausage patty on the cheese on the bottom bagel half. Place the finished omelet onto the sausage on the bottom half of the sandwich.
- Finish by flipping the top half of the sandwich over onto the bottom. Heat for 15 seconds in microwave if needed to warm.

Steps:
- Place bagel in toaster and toast as desired.
- Over medium heat, fry egg in frying pan.
- Turn off heat but, leave pan on burner.
- Place meat on top of egg and then the cheese on top of the meat.
- Cover with a lid and let the heat melt the cheese.
- Butter toasted bagel.
- Place egg, meat, and cheese pile on one half of bagel and top with the other half.
- Slice in half and enjoy!

- Scramble eggs in a large skillet. If you want a uniform shape, cook in greased canning rings.
- Assemble sandwiches with one egg, one slice of meat, one slice of cheese.
- Wrap each sandwich individually in plastic wrap, then freeze and place in zip-top bags.
BREAKFAST SANDWICHES - OAMC
Other than the processed cheese slices, everything about these sandwiches is healthier than the store-bought kind. I tried using regular cheddar cheese instead of the processed slices, but it just wasn't the same, so processed cheese it is! I got lucky and happened to have a round cookie cutter that is the exact same size as my English muffins (3.5-inches) and a perfectly sized casserole dish (10.5x14-inches) for cooking my eggs in. I'm able to do three rows of four, and the only "extras" are the little diamond shapes between the circles, which I usually wrap up in a tortilla with ham and cheese for a bonus breakfast burrito for my fiance. The 'Zaar-calculated nutrition info does not match my calculations, which are: 350 calories, 11.6 g fat, 210 mg cholesterol, 1082 mg sodium, 32 g carbs, and 24.8 g fat.

Steps:
- Preheat oven to 350 degrees.
- Whisk together the eggs and stir in salt, pepper, onion, and bell pepper.
- Pour into a casserole dish that has been sprayed with non-stick cooking spray.
- Bake in preheated over for 15 minutes.
- Stir.
- Bake for 15 more minutes.
- Remove from oven and let cool slightly.
- Cut out 12 "egg circles" with a cookie cutter; place on bottom halves of the English muffins.
- Top with ham, cheese, and top of English muffin.
- Wrap sandwiches in foil, then freeze.
- To serve, allow to defrost in the fridge overnight. Alternatively, you can defrost for a few minutes in the microwave.
- Microwave on high for about a minute, or until heated through and cheese is melted.
