Steps:

  • Cut the bagels in half.
  • Layer the cheeses over one-half of a bagel.
  • Top with the second bagel half.
  • Melt butter in a skillet.
  • Use a sandwich press.
  • Grill for 3 minutes on each side.

1 package Southeastern Mills Peppered Gravy
1 pound ground pork, thawed
1 egg, lightly beaten
2 teaspoon Better Than Bouillon® Ham Base
1 teaspoon Better Than Bouillon® Chili Base (optional for a spicier sausage)
1.5 teaspoon ground sage
.5 teaspoon ground cumin
.5 teaspoon black pepper
5 eggs (whisk eggs together with water, season to taste with salt and pepper)
1 tablespoon water
4 of your favorite bagels

Steps:

  • Prepare Peppered Gravy mix according to package instructions and set aside.
  • In a medium bowl, add ground pork, egg, Ham Base, sage, cumin and pepper, mix to combine.
  • Divide meat mixture into 4 equal portions; shape each portion into a thin patty.
  • Coat a large non-stick skillet with cooking spray, heat over medium heat.
  • Place patties in skillet; do not over crowd, cook until done, about 10-15 minutes, turn occasionally. To ensure proper doneness, use an instant read thermometer.
  • Coat a second non-stick skillet with cooking spray, heat over medium heat, add eggs, cook and stir until scrambled.
  • Place patties on toasted and buttered bagels, and generously top with scrambled eggs and Peppered Gravy Mix.

1 stick (8 tablespoons) salted butter, softened
6 everything bagels, split
2 medium yellow onions, halved and sliced
1/4 cup mayonnaise
2 tablespoons yellow mustard
Hot sauce, as needed
Kosher salt and freshly ground black pepper
1 pound bulk hot breakfast sausage
1 pound bulk maple breakfast sausage
12 slices Cheddar
6 large eggs

Steps:

  • Put a cast-iron skillet over medium-low heat. Butter the cut sides of the bagels. Lay the bagel halves in the skillet butter-side down and toast until golden, 2 to 3 minutes. Set aside.
  • In the same skillet, throw in the sliced onions and 1 tablespoon of the butter and cook slowly, stirring occasionally, until the onions are soft and golden, about 20 minutes. Remove to a plate.
  • Meanwhile, in a small bowl, mix together the mayonnaise, mustard, some hot sauce and 1 teaspoon each salt and pepper. Set aside.
  • Mix together the hot and maple sausage in a medium bowl. Form the mixture into six 1/2-inch-thick patties, slightly bigger than the diameter of the bagels (since the burgers will shrink during cooking).
  • Put the same skillet over medium heat, add the sausage patties and fry on both sides until cooked through, 5 to 7 minutes. Top each patty with 2 slices of Cheddar and cover the skillet with a lid to facilitate melting, 1 to 2 minutes.
  • In a separate nonstick skillet over medium-low heat, fry the eggs in 1 tablespoon of butter and sprinkle with salt and pepper. Cook until set on one side, then flip and cook the second side to desired doneness.
  • Build the sandwiches by spreading the mayo/mustard mix on the bottom half of each bagel, then top with a sausage patty, some caramelized onions and a fried egg. Spread more of the mayo/mustard mix on the top half of the bagels and place on top of the eggs to finish. Serve warm or wrap in foil to transport.

  • Using a sharp knife, chop the salmon until it's in small chunky pieces. Alternately, you can also add it to a food processor and pulse it a few times until chopped through. Transfer to a large bowl and add in the bread crumbs, mayo, lemon juice, salt, pepper, red pepper flakes, and herbs. Give it a mix until just combined. Divide into four equal portions and then shape each into a large 1/2-inch patty. Place on a baking sheet lined with parchment paper and chill for at least 30 minutes or up to 1 hour.
  • Set a large non-stick skillet over medium-high heat with half of the oil. Once hot, place two of the patties in and cook until crispy and browned, with an internal temperature of 125° to 130°, about 4 to 5 minutes per side. Transfer to a wire rack set over a baking sheet. Add in the remaining oil to the skillet and cook the remaining two patties in the same way.
  • To assemble the burgers, spread each toasted bagel half with cream cheese. Place a salmon burger on top of each bottom half of the bagels. Top with tomato slices, red onion, cucumber, capers and fresh dill. Place the top half of the bagel on and serve immediately. Enjoy!
