APPLE ENGLISH MUFFIN BREAKFAST ROUNDS



Apple English Muffin Breakfast Rounds image

This is a great recipe that I stumbled upon on Genius Kitchen over a decade ago. I've modified it for special diets, and added some personal notes.

Yield 4 servings

Number Of Ingredients 6

4 dairy-free English muffins, split (see English Muffin Note below)
½ cup peanut butter, almond butter, or sunflower seed butter (for nut-free)
1 red apple, cored, halved, and thinly sliced (optionally peeled)
¼ cup packed brown sugar (see Sweetener Note below)
2 tablespoons dairy-free buttery spread
¼ teaspoon ground cinnamon

Steps:

  • Toast the English muffins.
  • Spread 1 tablespoon of the nut or seed butter onto the split side of each English muffin half.
  • Top each half with a few apple slices.
  • In the microwave or in a small saucepan over medium-low heat, melt the brown sugar, buttery spread, and cinnamon together. If using the microwave, just heat in 15 to 30 second intervals and stir frequently. Cook just until smooth.
  • Drizzle as much of the cinnamon mixture over the apple slices as you would like.
  • Leftover cinnamon mixtures can be stored in an airtight container in the refrigerator and warmed to use on future mornings!

You can adjust all ingredients to taste, this makes a great weekday breakfast, and keeps you going all morning...so yummy. This makes a great breakfast for kids!

8 tablespoons peanut butter (use tablespoons)
4 English muffins, split and toasted
1 large red apple, cored and sliced
1/4 cup brown sugar, packed
2 tablespoons butter
1/4 teaspoon cinnamon

Steps:

  • Spread about 1 heaping tablespoon peanut butter onto each toasted English muffin half.
  • Top each one with a few apple slices.
  • In the microwave, melt together butter, brown sugar and cinnamon, stirring frequently until smooth.
  • Drizzle the cinnamon mixture over the apple slices.
  • Delicious!

This is one of the best breakfasts I have had; I even eat them for a snack. Even if you don't care for peanut butter that much you might LOVE these!

2 English muffins
2 tablespoons packed brown sugar
1 tablespoon butter
1/4-1/2 teaspoon cinnamon
4 teaspoons peanut butter (or more to your liking)
1/2 gala apples, cored and sliced

Steps:

  • Toast English muffins; meanwhile heat brown sugar, butter and cinnamon together for a few seconds in microwave or until completely melted.
  • Stir.
  • Spread peanut butter on muffins and then top with apple slices.
  • Spread sugar mixture on top of apple slices.
  • Enjoy.
  • You can sprinkle a little lemon juice on the half of apple that you don't use and keep in the fridge until next use.
