CHEESY BREADSTICKS MADE FROM PIZZA DOUGH

Cheesy Breadsticks Made from Pizza Dough image

Made from 6 ingredient homemade pizza dough, these easy cheesy breadsticks are a completely irresistible side dish or snack. You can freeze half of the dough for another night. Only 15 minute bake time!

Provided by Sally

Categories     Appetizer

Time 2h30m

Number Of Ingredients 7

1 lb store-bought or homemade pizza dough*
2 Tablespoons (30g) unsalted butter, melted
1 teaspoon garlic powder or 2 minced garlic cloves
1 teaspoon Italian seasoning blend or dried basil
1 and 3/4 cups shredded mozzarella cheese*
optional: sprinkle of cornmeal for dusting the pan
optional: marinara or pizza sauce for dipping

Steps:

  • Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
  • Preheat oven to 425°F (218°C).
  • On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
  • Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.
  • Bake for 12-15 minutes or until the edges are golden brown. If desired, turn the oven to broil for the last minute to really brown the top.
  • Slice into breadsticks and serve plain or with marinara sauce. Cover leftover breadsticks tightly and store in the refrigerator for up to 1 week. Reheat as you prefer. Baked breadsticks can be frozen up to 3 months.

CHEESY GARLIC BREADSTICKS

Cheesy Garlic Breadsticks image

The BEST Cheesy Breadsticks that are easy to make and even better than take-out!

Provided by Lauren Allen

Categories     Appetizer     Side Dish

Time 1h25m

Number Of Ingredients 11

1 1/8 teaspoons active dry yeast
1 teaspoon granulated sugar
3/4 cup warm water
1 1/2 Tablespoons olive oil
3/4 teaspoon salt
1/2 teaspoon white vinegar
1 1/2 - 2 cups bread flour (, or all-purpose flour)
1 1/2 Tablespoons salted butter
2 cloves garlic (, minced)
1/3 cup freshly grated parmesan cheese
1 1/4 cups shredded mozzarella cheese

Steps:

  • In a large bowl or stand mixer combine 1/2 cup of the warm water with the sugar and yeast. Stir to combine and let rest for 5 minutes. Add the remaining 1/4 cup warm water, olive oil, salt and vinegar.
  • Begin mixing on medium-low speed and gradually add the flour --knead for a few minutes, or until the dough is smooth and elastic (it should be slightly sticky, but not so sticky that it sticks to your clean fingertip). Mine is usually ready with 1 1/2 cups flour) Cover the bowl with a dry towel and allow to rest in a warm place for 1 hour.
  • Preheat oven to 475 degrees F with a pizza stone inside or upside down cookie sheet inside.
  • Gently punch the dough down. Place a large piece of parchment paper on your counter and use your hands (or a rolling pin, but it's easier with your hands) to spread the dough into a rectangle about 1/3 inch thick.
  • Mix melted butter and garlic in a small bowl then spread mixture evenly over dough, all the way to the edges. Top with parmesan and mozzarella cheeses.
  • Transfer the dough (still on the parchment paper) onto the hot pizza stone in the oven. Bake for 8-12 minutes or until golden and bubbly.
  • Serve with dipping sauces like marinara sauce or ranch.

BREADSTICKS (GRISSINI) RECIPE

Breadsticks (Grissini) Recipe image

Classic crispy Italian bread sticks, great as a snack or for dipping. These are simple to make and taste just like they came from a restaurant!

Provided by Shiran

Number Of Ingredients 8

2 ¾ cups (380 g) bread flour or all-purpose flour
1 teaspoon instant dry yeast
3/4 cup plus 1 tablespoon ((195 ml) warm water)
¼ cup (60 ml) olive oil
2 tablespoons (30 g) unsalted butter, melted and slightly cooled
1¼ teaspoons fine salt
Olive oil (, melted butter, or water, for brushing)
Sesame seeds or Parmesan cheese (, for sprinkling)

Steps:

  • Using a mixer fitted with the dough hook, mix all ingredient on low speed until well combined, 2-3 minutes. Increase mixer speed to medium-low and mix for another 5 minutes. Cover bowl with plastic wrap and let sit for one hour at room temperature.
  • Preheat oven to 375F/190C. Line two baking sheets with parchment paper.
  • Divide dough into 24 pieces, each weighing about 25g. Roll each piece into a log that is roughly 25cm long (or 30cm if you like them extra thin) and ½-1 cm wide, depending on how thick you want them. Keep in mind that they will expand during baking. Place on prepared baking sheets, allowing sufficient space between each stick. If you like, brush them with oil or water and sprinkle with Parmesan cheese or sesame seeds.
  • Bake for 20-25 minutes or until light golden and crisp. While the first batch is baking, cover the other baking sheet with plastic wrap until it's ready to go into the oven.
  • Allow breadsticks to completely cool on a wire rack. They will keep in an airtight container for up to 5 days.

BREADSTICKS

Breadsticks image

Provided by Food Network

Categories     appetizer

Time 4h20m

Yield 4 servings

Number Of Ingredients 14

6 ounces pizza dough, recipe follows, or use store bought
Chili Garlic Oil, recipe follows
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves
2 tablespoons red pepper flakes
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing
1 whole head garlic (about 2 1/2 ounces, cloves separated and peeled)
2 cups extra-virgin olive oil
1 tablespoon red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or aluminum foil.
  • Roll the pizza dough out on a lightly floured surface into a long, thin strip. The dough should be about 4-inches wide, 14-inches long, and less than 1/8-inch thick. Brush the surface of the dough with the oil. Sprinkle with the Parmesan, thyme, and red pepper flakes. Using a pizza cutter, slice the dough into 1/4-inch strips. Place on the prepared baking sheets. The strips can be laid straight or curved into designs. You can also twist 2 strips together. Leave 1/2-inch space between breadsticks.
  • Alternately, roll out the dough very thinly and pass through the fettucine cutter of a pasta machine.
  • Bake until browned and crispy, 10 to 15 minutes.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • In a small saucepan, combine the garlic cloves and olive oil and bring to a simmer. Reduce the heat and simmer until the garlic begins to turn brown, 10 to 15 minutes. (Do not let the garlic get too brown or the oil will have a bitter taste.)
  • Remove from the heat and cool to room temperature. Add the red pepper flakes and infuse for at least 2 hours to allow the flavors to blend. Refrigerate in a covered container for up to 2 weeks.

  • Meanwhile, in the bowl of an electric stand mixer add 2 cups flour and salt. Use the standard paddle attachment, not a bread hook. Turn on low and add very hot water. Mix to combine.

  • Add 1 tsp salt and 4 cups flour to your mixer bowl. I like to add the first 2 cups of flour and then slowly add the additional tow cups. If needed add a little over. You want the dough to pull away from the sides of the mixture and not be super sticky.Let the dough rise for 15-20 minutes.
  • Take 8 tablespoons of butter and disburse it around a 12x17 Jelly Roll pan and place in the oven for a few minutes to melt the butter the oven.
  • After the dough has risen for 15-20 minutes, place it onto a floured countertop and roll it out with a rolling pin a little bit smaller then your jelly roll pan.Use a pizza cutter, to then cut the dough into breadsticks. I like mine about 1.5" wide approx.

  • Add another 1 1/2 cups flour. The dough should pull away from the sides of the bowl but still be very slightly sticky to the touch. Add remaining 1/4 cup of flour, only if needed. Knead mixture for 5-7 minutes.
  • Transfer dough to a large, greased bowl and cover tightly with plastic wrap. Allow to rest until double in size, about 1.5 hours.
