KIM'S GARLIC BREADSTICKS

These are great breadsticks to make. They taste great and are easy to make. If you are an Olive Garden® lover, then you will LOVE these.

2 ¼ teaspoons active dry yeast
2 tablespoons white sugar
¼ cup warm water
4 ¼ cups all-purpose flour
1 ¼ cups warm water
2 tablespoons butter, softened
1 tablespoon salt
3 tablespoons melted butter
¼ teaspoon garlic powder
½ teaspoon kosher salt

Steps:

  • Dissolve yeast and sugar in 1/4 cup warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 15 minutes. Add flour, 1 1/4 cup warm water, 2 tablespoons softened butter, and 1 tablespoon salt; knead until dough is well mixed and soft, about 3 minutes.
  • Roll dough into a 2-foot log. Cut into 16 equal pieces, about 1 1/2 inches wide. Knead each piece and shape into a 6-inch breadstick. Arrange breadsticks on a baking sheet; let rise for about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix 3 tablespoons melted butter and garlic powder together in a bowl; brush onto breadsticks.
  • Bake breadsticks in the preheated oven until golden brown, about 15 minutes. Immediately brush with remaining melted butter mixture; sprinkle with 1/2 teaspoon kosher salt.

1/4 cup oil
3 cups bread flour

Steps:

  • Make dough using your favorite method- bread machine, mixer or by hand.
  • Roll out into a 10x12 inch rectangle.
  • Cut into strips about 3/4 inch wide.
  • Give each strip a twist and place on a greased cookie sheet.
  • Let rise for at least 20 minutes or more if you have time.
  • Bake at 375 for 10-15 minutes.
  • Brush with butter and sprinkle with garlic salt and parmesan cheese.

3 cups bread flour

Steps:

  • In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , When cycle is completed, turn dough onto a lightly floured surface. Divide into 20 portions. Shape each into a ball; roll each into a 9-in. rope. Place on greased baking sheets. Cover and let rise in a warm place for 40 minutes or until doubled. , Bake at 350° for 18-22 minutes or until golden brown. Remove to wire racks to cool. Brush warm breadsticks with butter.

Steps:

  • Combine 1-1/2 cups flour, yeast, sugar and salt. In a small saucepan, heat milk, 1/4 cup water and butter to 120°-130°. Add to dry ingredients; beat on medium speed just until moistened. 1 cup + 2 Tbsp warm water ((110 - 115 degrees))
1 1/4 tsp active dry yeast
2 Tbsp granulated sugar, (divided)
3 - 3 1/2 cups all-purpose flour ((scoop and level to measure))
1 3/4 tsp salt
3 Tbsp vegetable oil (or olive oil)
2 Tbsp butter
1/4 tsp salt ((or to taste))
1/4 tsp garlic powder

Steps:

  • In the bowl of an electric stand mixer whisk together warm water, yeast and 1/2 tsp granulated sugar until yeast has dissolved. Allow to rest 10 minutes.
  • Add in remaining 1 Tbsp + 2 1/2 tsp granulated sugar, 1 1/2 cups flour, 1 3/4 tsp salt and vegetable oil, then fit mixer with paddle attachment and blend mixture until well combine.
  • Switch mixer to dough hook attachment, add in remaining 1 1/2 cups flour and knead mixture on low speed, adding up to 1/4 cup additional flour as needed, and knead until dough is smooth and elastic*.
  • Transfer dough to a large buttered mixing bowl, cover with plastic wrap and allow to rest in a warm place free from draft until double, about 1 1/2 hours.
  • Punch risen dough down, divide into 12 equal portions (2 ounces each by weight), keep them covered with plastic wrap as you work. Roll each piece into a 9 inch rope on a lightly floured surface, then transfer to two parchment paper lined baking sheets.
  • Cover and let rise 1 hour. Preheat oven to 425 during the last 10 minutes of rising.
  • Bake in preheated oven 11 - 13 minutes until golden**. Meanwhile, in a small bowl whisk together 1/4 tsp salt and garlic powder.
  • Remove breadsticks from oven and run a stick of butter over hot breadsticks (using 2 Tbsp, or brush with melted butter) and immediately sprinkle with garlic salt mixture.

4 1/4 cups all-purpose flour, plus more for dusting

1/8-1/4 teaspoon garlic powder
1 pinch dried oregano

Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.

6 ounces pizza dough, recipe follows, or use store bought
Chili Garlic Oil, recipe follows
1/4 cup grated Parmesan
2 tablespoons fresh thyme leaves
2 tablespoons red pepper flakes
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing
1 whole head garlic (about 2 1/2 ounces, cloves separated and peeled)
2 cups extra-virgin olive oil
1 tablespoon red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or aluminum foil.
  • Roll the pizza dough out on a lightly floured surface into a long, thin strip. The dough should be about 4-inches wide, 14-inches long, and less than 1/8-inch thick. Brush the surface of the dough with the oil. Sprinkle with the Parmesan, thyme, and red pepper flakes. Using a pizza cutter, slice the dough into 1/4-inch strips. Place on the prepared baking sheets. The strips can be laid straight or curved into designs. You can also twist 2 strips together. Leave 1/2-inch space between breadsticks.
  • Alternately, roll out the dough very thinly and pass through the fettucine cutter of a pasta machine.
  • Bake until browned and crispy, 10 to 15 minutes.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • In a small saucepan, combine the garlic cloves and olive oil and bring to a simmer. Reduce the heat and simmer until the garlic begins to turn brown, 10 to 15 minutes. (Do not let the garlic get too brown or the oil will have a bitter taste.)
  • Remove from the heat and cool to room temperature. Add the red pepper flakes and infuse for at least 2 hours to allow the flavors to blend. Refrigerate in a covered container for up to 2 weeks.

1 package regular or fast-acting dry yeast (2 1/4 teaspoons)
2/3 cup water
1 tablespoon granulated sugar
1 teaspoon salt
1/4 cup olive or vegetable oil
2 to 2 1/4 cups Gold Medal™ Better for Bread™ bread flour or Gold Medal™ all-purpose flour
2 tablespoons olive or vegetable oil
1 large egg
1 tablespoon water
1 1/2 teaspoons coarse salt or sesame seed

Steps:

  • Spray cookie sheets with the cooking spray. In a large bowl, place the yeast. In a 1-quart saucepan, heat the water over medium heat until warm and an instant-read thermometer reads 105°F to 115°F. Pour water over yeast; stir until yeast is dissolved. Stir in the sugar, 1 teaspoon salt, 1/4 cup oil and 1 cup of the flour. Beat with an electric mixer on medium speed until smooth. With a wooden spoon, stir in enough of the remaining flour, about 1/2 cup at a time, until dough is soft, leaves side of bowl and is easy to handle (dough maybe slightly sticky).
  • Sprinkle flour lightly on a countertop or large cutting board. Place dough on floured surface. Knead by folding dough toward you, then with the heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn and repeat. Continue kneading about 5 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy. If dough is sticky, lightly flour your hands. Shape dough into a uniform roll that's 10 inches long. Cut roll crosswise into 32 equal parts. Roll each part into a pencil-like rope, 8 inches long for thick breadsticks or 10 inches long for thin breadsticks. Place 1 inch apart on cookie sheets. Brush with 2 tablespoons oil. Lightly spray sheets of plastic wrap with cooking spray; cover dough loosely with the plastic wrap, sprayed side down. Let rise in a warm place 20 minutes.
  • Place an egg separator over a small bowl. Crack open the egg, letting the yolk fall into the center of the separator and the egg white slip through the slots into the bowl. Cover and refrigerate egg yolk up to 4 days to use in another recipe.
  • Move the oven rack to the middle position of the oven. Heat the oven to 350°F. In a small bowl, beat the egg white and 1 tablespoon water slightly with a fork or wire whisk. Brush mixture over breadsticks, using a pastry brush; sprinkle with coarse salt. Bake 1 cookie sheet at a time 20 to 25 minutes or until breadsticks are golden brown. Remove from cookie sheets to cooling rack. Serve warm or cooled.

These quick and easy homemade breadsticks are the perfect for those times when you want homemade bread but don't want to spend hours making it!

1 ½ cups warm water (about 105 F)
1 tablespoon active dry yeast
2 tablespoons granulated sugar
3 ½ cups all-purpose flour (plus extra for sprinkling. Please see the note below about the flour. )
1/2 teaspoon salt
3 tablespoons butter (melted)
1 teaspoon Italian seasoning
1/2-1 teaspoon garlic salt
1/4 cup Parmesan cheese (optional)

Steps:

  • In the bowl of a stand mixer (or in a large bowl), stir together the warm water, yeast, and sugar. Let stand for 5-10 minutes or until foamy.
  • Mix in flour and salt. The dough should clear the sides of the mixing bowl and feel slightly sticky but shouldn't come off on your fingers if you pinch it.
  • Knead dough for three minutes.
  • Cover, and let the dough rest for 10 minutes.
  • Grease an 11X17-inch baking sheet with nonstick cooking spray.

1½ tsp salt

1 tsp garlic powder
1 tsp garlic salt
1 tsp italian seasoning

Steps:

  • In a large bowl, add the sifted flour and create a well in the center.
  • Combine together the warm water, melted butter and salt. Pour mixture in the well.
  • Sprinkle yeast and sugar over water, gently stir and allow yeast to activate (about 5 minutes).
  • Mix the dough until well incorporated. Cover the dough and let rise for an hour.
  • Shape twelve breadsticks and place onto a baking sheet. Allow to rise an additional 30 minutes.
  • Bake at 375°F for 14-16 minutes, or until breadsticks are golden.
  • Combine melted butter, garlic powder, garlic salt and Italian seasoning. With a pastry brush, generously brush the breadstick with the garlic butter.

Steps:

  • Preheat oven to 450°F
  • Combine dry ingredients and gradually add milk to form a soft dough (only use as much as you need).
  • Knead gently 3 or 4 times on a floured surface.
  • Roll out into a rectangle and cut into 12 sticks.
  • Put the melted butter into a large baking dish, and turn the bread-sticks to coat them with the butter.
  • Bake for 14 to 18 minutes, serve immediately

Classic crispy Italian bread sticks, great as a snack or for dipping. These are simple to make and taste just like they came from a restaurant!

2 ¾ cups (380 g) bread flour or all-purpose flour
1 teaspoon instant dry yeast
3/4 cup plus 1 tablespoon ((195 ml) warm water)
¼ cup (60 ml) olive oil
2 tablespoons (30 g) unsalted butter, melted and slightly cooled
1¼ teaspoons fine salt
Olive oil (, melted butter, or water, for brushing)
Sesame seeds or Parmesan cheese (, for sprinkling)

Steps:

  • Using a mixer fitted with the dough hook, mix all ingredient on low speed until well combined, 2-3 minutes. Increase mixer speed to medium-low and mix for another 5 minutes. Cover bowl with plastic wrap and let sit for one hour at room temperature.
  • Preheat oven to 375F/190C. Line two baking sheets with parchment paper.
  • Divide dough into 24 pieces, each weighing about 25g. Roll each piece into a log that is roughly 25cm long (or 30cm if you like them extra thin) and ½-1 cm wide, depending on how thick you want them. Keep in mind that they will expand during baking. Place on prepared baking sheets, allowing sufficient space between each stick. If you like, brush them with oil or water and sprinkle with Parmesan cheese or sesame seeds.
  • Bake for 20-25 minutes or until light golden and crisp. While the first batch is baking, cover the other baking sheet with plastic wrap until it's ready to go into the oven.
  • Allow breadsticks to completely cool on a wire rack. They will keep in an airtight container for up to 5 days.

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
  • Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.
