Breadmaker Hot Cross Bun Loaf- if you love hot cross buns, this sliced loaf version is for you. Make this spiced fruity loaf in the breadmaker and enjoy toasted with lots of butter. Perfect Easter breakfast.

575g strong white flour
250ml milk
125g mixed dried fruit
100g caster sugar
45g butter
1 egg
1 1/2 tsp fast action yeast
1 tsp salt
1 tsp ground ginger
1 tsp cinnamon
1 tsp mixed spice
1 tsp nutmeg
1 tbsp caster sugar
1 tbsp boiling water

Steps:

  • Add the yeast to the breadmaker pan.
  • Add all ingredients except the dried fruit to the pan.
  • Add 25g of the mixed fruit.
  • Set the breadmaker to the raisin loaf setting (around 4 hours)
  • At the beep, add the rest of the mixed fruit.
  • Turn the loaf out onto a cooling rack.
  • Mix the caster sugar and boiling water in a jug.
  • Use a pastry brush to brush the glaze over the top of the loaf.
  • When cooled, slice , toast and serve with butter.

A spicy bread loaf, filled with sultanas, raisins and mixed peel. Inspired by the classic Easter Hot Cross Bun.

300 ml milk
75 g unsalted butter, melted
1 large egg, beaten
250 g plain or all-purpose flour
250 g strong plain bread flour
50 g light brown sugar
½ teaspoon salt
1 teaspoon ground ginger
½ teaspoon ground cloves
2 teaspoons ground cinnamon
Zest of one large orange
Zest of one lemon
2 teaspoons dried yeast (suitable for breadmakers)
175 g sultanas
175 g raisins
25 g mixed peel
2 tablespoons plain or all-purpose flour
2 tablespoons milk
2 tablespoons apricot jam

Steps:

  • Place the milk, melted butter, and beaten egg into the bowl of your bread machine. Add the flour, sugar, salt, spices, and zest on top of the liquid. You will also need to add the yeast to the bowl, or to the yeast dispenser if your bread maker has one.
  • Set the bread maker to a setting where it will mix and rise the dough, without baking it. Leave the bread maker to work until the dough is well risen. Whilst you are waiting, line a 2lb loaf tin with baking parchment.
  • Remove the dough from the machine and place on a well floured surface. Knead the sultanas, raisins, and mixed peel into the dough. Place the dough into the pre-lined loaf tin and cover with a piece of lightly oiled clingfilm or plastic wrap. Leave somewhere warm to rise for one hour.
  • About half an hour before the dough will be ready, preheat the oven to 200°C / 390°F (180°C fan). To make the batter for the decoration, place the flour and milk into a small bowl and mix together well until you have a thick paste. Spoon this batter into a piping bag and set aside.
  • Once the dough has almost doubled in size, remove the clingfilm or plastic wrap from the top of the loaf. Pipe a cross pattern on top of the loaf with the batter, and then place the loaf in the oven for 35-40 minutes, until golden brown.
  • Once the loaf has finished baking, remove from the tin fairly quickly and place on a wire rack. Heat the apricot jam in the microwave for 20 seconds or so, and then brush over the top of the warm loaf. Leave to cool completely.

1 egg, plus
1 egg yolk
3/4 cup milk
1/3 cup butter
6 tablespoons sugar
1 1/2 teaspoons lemon rind, grated
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 teaspoon salt
3 cups flour
1 tablespoon yeast
1/2 cup raisins or 1/2 cup candied fruit
1/2 cup icing sugar
1 tablespoon milk
1/2 teaspoon lemon juice

Steps:

  • Put all ingredients except fruit into bread machine.
  • Set for dough.
  • Add fruit at signal.
  • Lightly oil 9x13 pan.
  • When dough is ready, remove and punch down.
  • Cut into 18-24 pieces.
  • Roll each into a ball.
  • Place balls 1/2" apart in pan.
  • Cover and rise in warm place until doubled (about 1 hour).
  • Cut cross into top with sharp knife.
  • Bake 12-15 minutes @ 375.
  • Make glaze adding sugar or milk to make consistency to drizzle but not run.
  • Let rolls cool slightly and drizzle icing in cuts.

1/3 cup evaporated milk
1 egg
2 tablespoons sugar
3 tablespoons butter or 3 tablespoons margarine
1/2 teaspoon salt

3 cups bread flour
1 1/2 teaspoons bread machine yeast
1/2 cup chopped or snipped pitted dates
1/4 cup chopped mixed candied fruit
1/2 cup sifted powdered sugar
2 teaspoons evaporated milk
1/4 teaspoon vanilla extract

Steps:

  • Measure all ingredients except dates, candied fruits and frosting into bread machine pan in the order that the bread machine manufacturer suggests.
  • Process in sweet bread or dried fruit/nut cycle; if machine does not have these cycles, use basic bread cycle on lightest crust setting.
  • Add dates and candied fruits at the signal or 5 to 10 minutes before the last kneading step ends.
  • Remove baked bread from pan; cool on wire rack.
  • Drizzle or pipe frosting on bread to make a cross.
  • Powdered Sugar Frosting: In small bowl, combine sifted powdered sugar, 1 to 2 teaspoons evaporated milk and vanilla extract.
  • Stir until smooth.
