BREADLESS STUFFING QUICHE



Breadless Stuffing Quiche image

If you are counting carbs or just craving the flavors of Thanksgiving stuffing, this recipe is for you! I love serving this on a bed of arugula leaves!

2 tablespoons olive oil
2 large onions, diced
1 cup diced celery
1 (14 ounce) can chicken broth
2 cloves garlic, minced
2 tablespoons minced fresh parsley
2 tablespoons minced fresh sage
2 tablespoons minced fresh rosemary
2 tablespoons minced fresh thyme
3 eggs, beaten
½ cup feta cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie pan.
  • Heat oil in a saucepan over medium-high heat. Saute onions in the hot oil until softened and lightly browned, about 5 minutes. Add celery and cook until soft, about 5 minutes; stir in chicken broth, garlic, parsley, sage, rosemary, and thyme. Simmer broth mixture until it thickens slightly, about 10 minutes. Remove saucepan from heat and pour broth mixture into a bowl. Set it aside to cool, about 10 minutes.
  • Stir eggs and feta cheese into broth mixture; pour into the prepared pan.
  • Bake in the preheated oven until set, 25 to 35 minutes.

After the holidays, I had an extra turkey breast in my freezer. Since starting the 'South Beach Diet,' I couldn't figure out how I could make a great stuffing for phase one. I think I have come close. This is a lot better than I even though it would be!

2 tablespoons olive oil
1 (4 ounce) package sliced fresh mushrooms
2 cloves garlic, chopped
½ cup diced celery
⅓ cup diced onion
½ cup water
1 ½ cubes chicken bouillon
2 (12 ounce) cans garbanzo beans, drained and rinsed
1 egg
2 teaspoons dried sage
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a glass baking dish with cooking spray.
  • Heat the olive oil in a large skillet. Cook the mushrooms, garlic, celery, and onion in the olive oil 3 to 5 minutes. Add the water and bouillon; cook and stir until the bouillon is dissolved.
  • Combine the garbanzo beans, egg, sage, salt, and pepper in a bowl. Mash together with your hands until thoroughly mixed; stir in the vegetable mixture; transfer to the prepared baking dish. Cover with aluminum foil.
  • Bake in preheated oven 30 minutes; remove the foil and bake uncovered another 10 to 15 minutes.

Low Carb & Gluten Free Turkey Stuffing/Dressing image

12 oz roll of mild sausage
1/2 cup onion, chopped
1 cup celery, chopped
1 head cauliflower, chopped
1/2 cup white wine
1/4 cup walnuts, chopped
1/4 cup parsley, chopped
1 tsp fresh sage, minced
salt and pepper to taste

Steps:

  • Cook the sausage in a large saute pan, breaking it up into small pieces. Add the onions and celery to the pan and cook for about 5 minutes or until softened.
  • Add the cauliflower and cook for about 8 minutes. You want it to brown and caramelize a bit, so don't stir too often. Add the white wine and cook on medium heat until no liquid remains in the bottom of the pan.
  • Add the walnuts and cook for about 2 minutes. Remove from the heat and stir in the parsley and sage. Season with salt and pepper to taste.
  • Try not to eat it all before your guests arrive!

1 cup dried cranberries (chopped)
2 ounces cheddar cheese (Cabots or Cracker Barrel)
1 small onion (diced)
1 tablespoon fresh rosemary (chopped)
1 tablespoon olive oil

Steps:

  • Heat olive oil in pan over medium heat.
  • Add diced onion, cook until soft (about 10 minutes).
  • Add apples to pan, cook for 1 minute.(Stirring).
  • Add cranberries and rosemary, cook for 1 minute.(Keep stirring!).
  • Remove from heat, toss in cheese and mix.
  • Serve immediately.
