A tasty crumb coating seasoned with Parmesan cheese and Italian herbs gives the turkey slices a delicious flavor. The thin turkey slices take just a few minutes on the stovetop, so be careful not to overcook them. -Rhonda Knight, Hecker, Illinois

1 cup dry bread crumbs
1/4 cup grated Parmesan cheese
2 teaspoons Italian seasoning
3/4 cup 2% milk
8 turkey breast cutlets (2 ounces each)
1/4 cup olive oil

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese and Italian seasoning. Pour milk into another shallow bowl. Dip turkey in milk, then roll in crumbs. , In a large skillet, cook turkey in oil over medium heat for 4-5 minutes on each side or until juices run clear. Drain on paper towels.

I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

1 cup Italian seasoned dry bread crumbs
¼ cup grated Parmesan cheese
4 turkey breast cutlets, 1/4 inch thick
½ cup fat free sour cream
1 tablespoon extra virgin olive oil

Steps:

  • Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
  • Heat the oil in a skillet over medium heat. Place turkey in the skillet and cook 5 to 7 minutes on each side, until lightly browned and cooked through.

1 lb turkey breast, slices
salt and pepper
2 eggs
1 cup Italian style breadcrumbs
2 tablespoons olive oil
2 tablespoons butter or 2 tablespoons margarine
lemon wedge

Steps:

  • Season turkey with salt and pepper. Mix eggs in a shallow dish. Place bread crumbs in another shallow dish.
  • Dip both sides of turkey in egg and then into crumbs.
  • Heat 2 tablespoons oil and 2 tablespoons butter in a large skillet over medium high heat. Add slices, not crowding, and cook until golden brown on bottom, about 3-5 minutes.Turn and cook other side until golden, about 2 minutes.
  • Remove to plate and repeat with remaining slices, adding more butter and oil as needed. Serve with lemon.
