BREADED SPAM® STEAKS
I got this recipe from my boyfriend (being a guy, he eats anything fried). This is a good snack to make when you get the munchies. It can be made in any quantity you need.

Steps:
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Gently press the luncheon meat slices into the flour to coat and shake off the excess flour. Dip into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded luncheon meat slices onto a plate while breading the rest; do not stack.
- Deep fry the luncheon meat a few slices at a time until hot and golden brown, 3 to 5 minutes. Drain on a paper towel lined plate before serving.

- Place the beef roast into the freezer for several hours, until very firm and almost frozen. Slice the beef about 1/8 inch thick across the grain. You can also ask the butcher to slice it very thinly for you.
- Whisk the eggs and water together in a bowl. Spread the bread crumbs out onto a large sheet of aluminum foil, and sprinkle with garlic powder, salt, and Parmesan cheese. Mix all the crumb ingredients together until well combined. Dip each piece of beef into the egg mixture, then thoroughly coat with crumbs. Place the coated slices onto a sheet of foil on a baking sheet, and separate them with waxed paper as you dip and coat the beef.
- Heat the vegetable oil in a large, heavy skillet until shimmering, and pan-fry the beef slices until golden brown, about 2 minutes on the first side and 1 minute on the second side. Fry 2 or 3 slices per batch.

My mother-in-law used to make this while my hubby was growing up and it was passed onto me with a little tweaking. Serve this with a crisp salad, favorite pasta, along with some italian bread.

- Combine first 7 ingredients in medium sauce pan.
- Allow to simmer approximately 15 minutes on med-high heat, then reduce to low to keep warm.
- Slice roast into 1/8" slices.
- (Doing this when the roast is still half frozen is the easiest).
- Dip roast slices in egg, then in breadcrumbs seasoned with the Parmesan.
- Heat Olive Oil to 375 degrees in fry pan or deep fryer also works well.
- Fry roast slices approximately 3-4 minutes for each side until golden brown.
- Layer paper towel in serving dish along with fried slices of roast to provide proper drainage of olive oil.
- Serve roast slice with sauce on the side for dipping.

- Begin heating oil in skillet on medium heat on the stove top.
- In shallow casserole or pie dish, stir together breadcrumbs and spices, set aside.
- In another shallow casserole or pie dish, whisk eggs until well blended, set aside.
- Sprinkle flour on both sides of each steak.
- Working with one steak at a time (using gloves, if you like), dip each steak in egg then in breadcrumb mixture. Set steaks aside on a baking sheet so they're not touching.

BREADED PORK STEAK
In Spanish this dish is called bistec de puerco empanizado, translation: breaded pork steak, and it's super easy to make.

- Add the salt, garlic powder, onion powder and black pepper to a small bowl and mix well to combine.
- Sprinkle the pork steaks on both sides with about half of the seasoning mix.
- Use a large baking sheet (or a large piece of parchment paper) add the flour to one side and the cracker meal (or breadcrumbs) to the other. Season the cracker meal with the remaining seasoning and mix with a fork.
- Add the eggs to a large bowl and scramble using a fork or whisk, sprinkle with a little salt.
- Working with one piece of pork at a time, lightly coat it in the flour on both sides, shake off the excess flour.
- Next, dip the pork in the egg mixture; make sure the pork is evenly moist.
- Now, place the pork in the cracker meal or breadcrumbs, make sure there is an even coating and gently shake off the excess.
- Place the pork on a pan or plate and repeat with the remaining pieces. If you are stacking the pork, use a piece of parchment paper in between so that the coating doesn't stick to itself and flake off.
- Cover the bottom of a large, deep skillet with about a ¼ of an inch of oil. Heat the oil over medium-high. When the oil is hot, but not smoking, add 1 or 2 pieces of pork, do not overcrowd the pan.
- Fry the pork for about 2-3 minutes per side, turn and repeat until they're golden brown.
- Remove the pork from the skillet and place it on a baking sheet that is lined with a cooling rack. Fry the remaining pieces.

- Drain the tofu, and cut into your steak sized pieces. I like cutting it into two large steaks by slicing the block it in half lengthwise, but you could cut it into more pieces for smaller crispier tofu.
