FRIED PORK TENDERLOIN AND SAWMILL GRAVY

2 1/2 lb pork tenderloin cut into 3/4 inch thick pieces
3/4 cup all-purpose flour
1 tsp seasoning salt (plus additional as needed to your taste)
1/4 tsp ground black pepper
1/4 cup oil
6 Tbsp butter (divided)
1/4 tsp dried tarragon
1/4 tsp poultry seasoning
2 1/4 cups milk

Steps:

  • Slice the pork tenderloin into 3/4 inch thick pieces.
  • In a shallow bowl, mix together all purpose flour, seasoned salt and black pepper until blended. Reserve 1/4 cup for the gravy and set aside.
  • Use the remaining 1/2 cup to dust both sides of the sliced pork tenderloin.
  • Heat 1/4 cup of olive oil and 3 Tbsp of butter in a large skillet over medium-high heat.
  • Brown the tenderloin in batches cooking for around 4 minutes on each side. Adjust depending on thickness. Remove to a platter and keep warm.
  • To make grav: Reserve 2 Tbsp of pan drippings and add 3 Tbsp of butter.
  • Sprinkle the 1/4 cup reserved flour into the pan and stir to combine. Cook for about 1 minute scraping any brown bits from bottom of pan.
  • Gradually whisk in the milk, tarragon and poultry seasoning.
  • After all of the milk has been added, bring to a boil to thicken, then immediately lower the heat whisking constantly. Let the gravy slowly bubble for 5 minutes, stirring occasionally, over low heat. Adjust salt and black pepper to your taste.
  • You may adjust the consistency adding more milk to thin, if desired. Serve immediately drizzled over pork tenderloin.

1/2 cup water

A quick, easy and delicious pork tenderloin recipe, quickly cooked in the oven and served with a peppercorn gravy.

1 - 1 1/4 lb. pork tenderloin (silver skin and any visible fat removed)
Salt
Olive oil
1 Tbsp butter
1/4 cup onion (very finely chopped)
2 - 3 tsp. crushed peppercorns (black, green or red peppercorns, or a mixture *See Notes)
1/4 - 1/3 cup red or white wine (or omit and use a bit more broth)
1 cup chicken or beef broth (*see Notes)
1/2 tsp Dijon mustard
1/2 tsp fresh thyme leaves (or a pinch of dried thyme leaves)
1/4 cup heavy cream (35% b.f. or omit for a non-creamy sauce, *see Notes)
Salt (to taste)
2 Tbsp cornstarch
1 Tbsp water

Steps:

  • Preheat oven to 425F.
  • Prepare the pork tenderloin by removing the silver skin and any visible fat. Season with some salt and set aside.
  • Heat an oven-proof skillet on the stove-top over medium-high heat. Add a splash of olive oil and heat. Add the pork tenderloin and cook, turning as needed, until it is seared and golden on all sides.
  • Place skillet with the pork into the preheated oven and cook until the pork reaches an internal temperature of 145F, when measured in the thickest part of the meat, about 20-25 minutes.
  • While pork is cooking, gather and measure out your sauce ingredients and have handy.
  • Remove skillet from oven. Remove pork to to a cutting board to rest and loosely tent with a piece of aluminum foil.
  • Place the hot skillet back on the stovetop over medium-high heat. To the skillet, add butter and melt, scraping up in bits in the bottom of the pan. Add the onions and peppercorns and stir until the onions are starting to colour, about 1 minute. Add the wine and cook, stirring, until mostly evaporated, about 1 minute. Add the broth, Dijon mustard and thyme. Reduce heat to medium and allow sauce to simmer/reduce for a few minutes to blend the flavours and reduce slightly. Add cream, if using and stir to combine and warm through. Taste the sauce and season with salt, as needed. To thicken the gravy, combine cornstarch and water in a small bowl, stirring until smooth. Add a bit at a time to your hot gravy, stirring well after each addition, until desired thickness is achieved.
  • Cut pork tenderloin into slices and spoon hot gravy over-top, to serve.

This easy combo of roasted pork tenderloin, pan gravy and a quick dressing makes for a special dinner or date-night meal (with leftovers) that's ready in under an hour.

6 tablespoons unsalted butter
1/2 onion, finely diced
1 stalk celery, finely diced
6 cups dried bread cubes
2 teaspoons poultry seasoning
1 1/2 to 2 cups chicken broth
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh parsley, plus more for garnish
2 teaspoons chopped fresh thyme
1 1/2 to 2 pounds pork tenderloin
Leaves from 3 sprigs fresh thyme, stems discarded
Leaves from 1 sprig rosemary, roughly chopped, stems discarded
Kosher salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
1/2 shallot, minced
1 tablespoon all-purpose flour
3/4 cup cold beef broth
1/2 teaspoon soy sauce
Kosher salt and freshly ground black pepper
2 tablespoons heavy cream

Steps:

  • For the dressing: Preheat the oven to 350 degrees F.
  • Melt 4 tablespoons of the butter in a large ovenproof skillet over medium-high heat. Continue to cook until the butter begins to bubble and smoke. Add the onion and celery and cook, stirring, until softened, 1 to 2 minutes. Add the bread cubes and poultry seasoning to the skillet and stir and fold the bread to toast it, 3 to 4 minutes. The bread should start to brown and should smell amazing.
  • Turn off the heat and drizzle in about 1 cup of the broth and fold it into the bread. Drizzle in enough more broth to moisten the dressing but not make it soggy. Taste and season with salt and pepper as needed. Once you're happy with the flavors, stir in the parsley and thyme.
  • Dot the top of the dressing with the remaining 2 tablespoons butter. Cover the skillet with foil and bake for 20 minutes. Uncover and continue to bake until browned, about 10 minutes longer.
  • For the pork: Preheat the oven to 350 degrees F. Sprinkle the tenderloin with the thyme, rosemary, salt and pepper. Press the seasonings firmly onto the pork.
  • Heat a large cast-iron skillet or other ovenproof sauté pan over medium-high heat. Swirl in the oil. When the first wisp of white smoke appears, add the pork and sear until golden brown on all sides, about 8 minutes total.
  • Transfer the skillet to the oven. Roast for 5 minutes, then flip the pork and return the skillet to the oven. Roast until an instant-read thermometer inserted into the thickest portion of the pork reaches 135 degrees F. Remove from the oven, transfer the pork to a cutting board and tent loosely with foil. Let rest until the internal temperature reaches 140 degrees F for a nice medium, 8 to 10 minutes. (If you want the pork a little more well done, remove from the oven at 140 degrees F and let rest until 145 degrees F.)
  • For the quick gravy: Place the hot pan the pork cooked in back over medium-high heat. Toss in the butter and shallot and cook, stirring frequently, until the shallot is light brown and fragrant, 2 to 3 minutes. Stir in the flour, scraping any browned bits from the bottom of the pan. Stir for another minute, making a rough roux. Slowly stir in the cold broth. Bring to a boil, then reduce the heat so the gravy just simmers. Cook for about 1 minute, stirring constantly. Stir in the soy sauce and salt and pepper to taste. Finish by stirring in the cream.
  • Slice the pork and serve it with the dressing and gravy, and garnish with chopped parsley.

2 (1 1/4 pound) fully trimmed pork tenderloins, cut into 8 pieces
salt and freshly ground black pepper to taste
2 tablespoons all-purpose flour, or as needed
2 eggs, beaten
3 cups panko bread crumbs
2 tablespoons butter
⅓ cup diced dill pickles
1 jalapeno pepper, seeded and minced
1 bunch green onions, chopped, green tops reserved
1 pinch cayenne pepper, or to taste
1 ½ tablespoons all-purpose flour
1 ½ cups cold milk, or more as needed
1 teaspoon Worcestershire sauce, or to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup vegetable oil for frying
salt to taste

Steps:

  • Place pork between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound pork with the smooth side of a meat mallet to a thickness of 1/2 inch.
  • Place pork pieces on a plate and season both sides generously with salt and black pepper. Sprinkle 2 tablespoons of flour over pork pieces, lightly coating both sides. Pour eggs over pork, turning to coat.
  • Transfer pork pieces to a bowl filled with panko bread crumbs. Press bread crumbs firmly into the meat on both sides. Transfer breaded cutlets to a clean plate, cover with plastic and refrigerate for 15 minutes.
  • Melt butter in a skillet over medium heat. Stir in pickles, jalapeno pepper, and green onions; cook and stir until onions have softened, about 3 minutes.
  • Sprinkle in 1 1/2 tablespoon flour. Cook and stir for 3 minutes.
  • Slowly stir in 2 to 3 tablespoons cold milk, whisking constantly. Stir in remaining milk, Worcestershire sauce, and black pepper. Simmer on low for 5 minutes. Taste and adjust seasoning.
  • Heat half the vegetable oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

1 ½ pounds pork tenderloin
2 eggs
¼ cup milk
½ cup Italian-style dried bread crumbs
1 pinch garlic salt
2 teaspoons dried oregano
salt and pepper to taste
1 tablespoon vegetable oil

Steps:

  • Slice tenderloin into 1/4 inch rounds. Place rounds between sheets of plastic wrap and pound until thin.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat eggs and milk together and pour into a shallow dish or bowl. Set aside. In a separate dish or bowl combine breadcrumbs with garlic salt, oregano, salt and pepper. Mix all together. In a large skillet heat oil over medium high heat. Meanwhile, dip tenderloins in egg mixture, then coat with bread crumb mixture. When oil is hot, add coated tenderloin to skillet and fry until golden brown on both sides (not cooked through)!
  • Place browned tenderloin in a 9x13 inch baking dish lined with aluminum foil. Fry any leftover eggs and bread crumbs together for 'breadings'. Add 'breadings' to baking dish. Cover tightly and bake in the preheated oven for about 45 minutes or until meat has reached an internal temperature of 145 degrees F (63 degrees C).

1 lb pork tenderloin
3 eggs
Italian seasoned breadcrumbs
2 (8 ounce) packets brown gravy mix
2 cups milk
1/2 cup butter, possible more (for frying)

Steps:

  • Cut up the tenderloin about 3/4 of an inch each piece.
  • Then bang them out with a meat mallet/tendorizer or heavy pan.
  • Get a piece of wax paper and lay them out.
  • Scramble the eggs in one bowl, then get another bowl for the bread crumbs.
  • dunk in egg and bread crumbs once/twice. Depends on your taste.
  • Place on another sheet of wax paper.
  • Melt the butter in a frying pan or electirc pan (and olive oil is you choose).
  • Make sure there is enough to coat the pan.
  • Fry each side until golden brown.
  • Take your brown gravey and milk and mix together well.
  • When frying is complete poor gravy mixture over the tenderloin.
  • Cover pan and simmer for about 20 minutes.

One of my family's favorites. If you aren't a garlic fan, pass on this one. A diet breaker, but worth it. Pork tenderloin are often sold 2 to a bag, so they are perfect for this dish. Serve extra gravy with mashed potatoes.

2 (1 pound) pork tenderloins
¾ cup butter
6 cloves garlic, minced
1 (16 ounce) can sliced mushrooms, drained
1 tablespoon balsamic vinegar
1 (14 ounce) can chicken broth, or as needed
¼ cup all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub salt and pepper over all sides of pork tenderloins; nestle tenderloins next to each other in a 9x13-inch baking dish.
  • Melt butter in a saucepan over medium heat; add garlic and mushrooms. Bring to a boil, reduce heat to medium-low, and simmer, stirring frequently, until sauce is fragrant, about 5 minutes. Stir vinegar into mushroom sauce. Pour mushroom sauce over tenderloins, letting sauce seep between the two tenderloins.
  • Bake in the preheated oven until tenderloins are lightly pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer tenderloins to a serving dish.
  • Drain the drippings, including mushrooms, from the baking dish into a measuring cup, scraping the bottom to get all the brown bits. Remove 1/4 cup of the fat from the mixture and pour into a saucepan. Add enough chicken broth to the drippings to make 2 cups; whisk flour into drippings until incorporated. Stir broth-drippings mixture into the saucepan with fat over medium heat until thickened, about 5 minutes; season with salt and pepper.
  • Slice tenderloins into medallions and top with half the gravy. Pour the remaining gravy into a gravy boat for serving.

1/3 cup cornbread/muffin mix
