EASY BREADED FISH FILLETS

Steps:
- Heat oven to 350°F. Spray shallow baking pan with nonstick cooking spray. In shallow dish or pie pan, combine croutons, cheese, parsley flakes and paprika; mix well. In another shallow dish, combine egg, lemon juice and water; beat well.
- Cut fish fillets into serving-sized pieces. Dip in egg mixture, tucking thin ends of fish under to form pieces of uniform thickness. Dip fish in crouton mixture, patting gently to coat; place in sprayed pan. Spray fish with cooking spray for about 5 seconds.
- Bake at 350°F. for 10 to 15 minutes or until fish flakes easily with fork.

- (For best results prepare using frozen fillets) Heat a dry nonstick skillet over medium high heat. Add panko bread crumbs; toast, stirring until crumbs are lightly browned. Transfer toasted bread crumbs to a medium size bowl. Add parmesan, parsley, salt, black pepper and cayenne pepper. Stir in 1 tablespoon of olive oil. Set aside. Wipe out skillet. Heat skillet to medium high heat and add remaining olive oil. Add Alaskan Pollock fillets and cook 5 minutes. Turn over fillets and heap with crumb mixture. Cover and cook another 3-5 minutes. Garnish with lemon wedges and serve.
BAKED POLLOCK
I'm always looking for ways to enjoy baked fish. This recipe works not just for pollock but for just about any fish fillet. Cook time will depend on the thickness and size of your fillets. I used frozen pollock fillets, thawed.

- Preheat oven to 350 degrees.
- Cover half sheet pan with foil and spray with non stick cooking spray.
- Mix all ingredients except fish.

- Brown slightly with broiler if desired.

Steps:
- First make the sauce by mixing all the ingredients together, then set aside. In a large bowl, make the batter by tipping the flour, sugar and some salt and pepper into a bowl, then gradually whisking in the beer until smooth.
- Heat the oil in a deep fryer or heat about 5cm of oil in a wok until a drop of batter sizzles and crisps up quickly. Dredge a few chunks of fish in the batter, then deep-fry for 3-4 mins until golden. Remove, using a slotted spoon, then drain on kitchen paper. Repeat until all the fish is used. Serve the fish with the sauce for dipping and lime wedges for squeezing over.

- Season fish fillets with herbs, salt, and pepper. Place on the prepared baking sheet.
- Mix sour cream, Parmesan cheese, and melted butter together in a small bowl. Apply sour cream mixture to each fillet.
- Bake in preheated oven until fish flakes easily with a fork, 15 to 25 minutes.
