BAKED ORANGE-GLAZED CHICKEN
One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

- Meanwhile, mince the carrot, shred the radicchio, slice the scallions and separate the cilantro leaves from their stems.

- Season the chicken with salt to taste, then divide the chicken between the rolls. Top with the shredded radicchio, minced carrots and sliced scallions. Garnish with the cilantro leaves and a sprinkle of sesame seeds before placing the roll tops on the sliders. Serve.
BREADED ORANGE GLAZED CHICKEN
Adopted from Kraft Magazine. A nice change of pace from the standard baked breaded chicken. Usually I don't worry about how to serve a dish but they recommended making a really light dressing and placing the chicken on a bed of spinach leaves with this dressing. It was yummy and I'm glad I took that extra step.

Steps:
- Preheat oven to 350˚F. Season both sides of the chicken pieces with salt and pepper.
- In a small bowl, combine apricot preserves, orange juice, red wine vinegar, 1 tablespoon olive oil, and minced garlic. Mix with a whisk until well combined, and set aside.
- Heat an oven-proof skillet over medium-high heat. Heat the remaining 1 tablespoon oil, then when the oil is shimmering hot, add the seasoned chicken parts. Cook until golden brown on the first side, about 4 minutes.
- Turn the pieces over, then pour the apricot sauce evenly over top. Transfer the skillet to the preheated oven and cook 10-15 minutes more, until the chicken is cooked through. Check often, because different parts cook at different rates!
- Serve the chicken with sauce drizzled on top. Garnish with sliced green onions or herbs, if you like. Remember? No rules, be creative. We like to serve this with rice.

- Place cut up chicken pieces in a large zip lock baggie. Pour into the baggie the Buttermilk and let the chicken marinate in the refrigerator for about 30 min.
- Place chicken in a single layer of the air fryer basket that has been sprayed with Olive Oil. I don’t recommend stacking the chicken but a little overlaying is fine. Then spray the chicken with Olive oil so it will get crispy.
- In a skillet mix together the Orange Marmalade, minced garlic, orange juice, ginger, soy sauce, red pepper flakes, apple cider vinegar and sriracha sauce. Heat on stove on medium until bubbly.
