BREADED LAMB CHOPS

Breaded Lamb Chops image

This is a combination of features from a number of recipes I've tried over the years, plus a few touches of my own. The choice of American lamb chops over New Zealand or Australian chops is due only to their larger size, not better quality. If you choose to use chops from Down Under, you may want to serve 3 chops per person instead of just 2, or 12 chops total. Prep time includes browning, cooling, and marinating time

Provided by Toby Jermain

Categories     Lamb/Sheep

Time 5h30m

Yield 4 serving(s)

Number Of Ingredients 19

8 american lamb chops, about 1 to 1 1/4 inch thick, excess fat trimmed, rinsed and patted dry
garlic granules
onion powder
salt & freshly ground black pepper
1 pinch cayenne pepper
Worcestershire sauce
extra virgin olive oil
Dijon mustard
1 cup balsamic vinegar
1/2 cup red wine vinegar
2 bunches mint, picked over, washed, spun dry,and finely chopped,2 tbsp leaves reserved and chopped just before servin
salt & freshly ground black pepper (optional)
3 cups fresh breadcrumbs, preferably a combination of sourdough and whole-wheat rolls
4 cloves garlic, finely minced
1 bunch mint leaf, chopped
1/2 bunch parsley, leaves only,chopped
1/2 cup finely minced green onions or 1/2 cup onion
salt & freshly ground black pepper
extra virgin olive oil

Steps:

  • Chops: Prepare Mint Sauce befor starting the lamb chops so it has a maximum amount of time to steep.
  • Season lamb chops to taste with granulated garlic and onion, salt, pepper, and cayenne to taste, and rub all over with Worcestershire sauce.
  • Allow to marinate, refrigerated, for at least 4 hours or overnight.
  • Prepare breading, cover, and set aside at room temperature.
  • About 1 hour before serving, sear chops on all sides in a little olive oil over high heat until browned on all sides, about 1 minute per side.
  • Allow chops to cool enough to handle.
  • Brush all over with Dijon mustard,, and press a generous layer of the breadcrumb mixture all over the chops.
  • Set the chops upright on the bone end in a lightly oiled ovenproof casserole, and refrigerate until 30 minutes before serving.
  • Place in a preheated 450degF, reduce heat to 400degF, and bake until breadcrumb mixture is nicely browned.
  • Drizzle chops lightly with Mint Sauce if desired, and serve remainder of sauce on the side.
  • Serve with oven fried rosemary potatoes and asparagus or spinach braised with garlic, onions, and toasted pinenuts.
  • Mint Sauce: Place all ingredients in a small glass bowl, except the 2 Tbsp of reserved mint leaves.
  • Mash mint against the side of the bowl with a fork or spoon to bruise and crush.
  • Allow to set at room temperature, stirring occasionally, while meat marinates.
  • Strain shortly before serving, pressing on solids to extract as much liquid as possible.
  • Season to taste with salt and pepper if desired.
  • Chop reserved leaves, and stir into liquid just before serving.
  • Serve at room temperature.
  • Breading: To prepare breading, grate bread fairly coarsely, or pulse a few times in a processor; pull out larger pieces, and chop or process them some more.
  • You don't want the crumbs powdered.
  • Toss together everything except olive oil, and season generously to taste with salt and pepper.
  • Drizzle with olive oil, and toss and toss, and drizzle and drizzle until nicely moistened.
  • Cover, and set aside.

BREADED LAMB CUTLETS,

Breaded Lamb Cutlets, image

Crispy coated lamb cutlets, another of those quick easy recipes that taste good without a lot of effort. Just a simple mid week meal for the family.

Provided by The Flying Chef

Categories     Lamb/Sheep

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

12 lamb cutlets
1 cup panko breadcrumbs, flakes (Japanese breadcrumbs you can use regular crumbs. I just love these as they come out more crisp than )
1/2 cup grated parmesan cheese
1 1/2 tablespoons fresh basil, chopped fine
1 1/2 tablespoons fresh parsley, chopped fine
2 eggs, beaten lightly
flour
olive oil

Steps:

  • Trim off any excess fat from each cutlet, flatten slightly with a meat mallet.
  • Combine breadcrumbs, parsley, basil and cheese. Coat cutlets in flour dip into egg then coat completely in breadcrumb mixture.
  • Lay cutlets flat on a tray or plate in a single layer, place in refrigerator for 10 Min's this makes them easier to handle.
  • Heat a couple of tablespoons of oil in fry pan add lamb ( you may need to use a couple of pans) Cook until browned on both sides turn the heat down and continue cooking until cooked as desired, turning occasionally, I do this instead of finishing in the oven as the coating tends to lose its crispiness.
  • I have allowed for three cutlets per person so make 16 if you want four per person.
  • Serve with mash, roasted or boiled potato and vegetable.

BREADED LAMB CUTLETS

Breaded Lamb Cutlets image

This central European dish brings the breading technique to lamb, a meat with enough flavor and tenderness to taste great underneath a crunchy exterior. While cuts of meat from the loin or leg can be used, the medallions of meat from the rack are far superior in texture. It's not unusual to finish the dish with a sprinkle of white wine sauce, but you can skip that and simply squeeze some lemon juice over the lamb; that's what I usually do.

Yield makes 4 servings

Number Of Ingredients 11

Twelve 1-inch-thick medallions of lamb, cut from 2 boneless racks (about 1 1/2 pounds) or the equivalent amount from the loin or leg
3 tablespoons extra virgin olive oil
1 teaspoon ground cumin, plus more to taste
1 tablespoon chopped fresh thyme
2 garlic cloves, peeled and crushed
2 eggs, lightly beaten
Bread crumbs for dredging, preferably fresh (page 580), or panko (Japanese bread crumbs, page 8)
Salt and black pepper to taste
1/2 cup dry white wine
Chopped fresh parsley leaves for garnish, optional
2 lemons, cut into wedges, for serving

Steps:

  • Preheat the oven to 200°F. If using medallions from racks, press to a 1/2-inch thickness with the palm of your hand. If using cuts from the loin or leg, place the meat between sheets of wax paper and pound to a 1/2-inch thickness with a mallet or rolling pin. Place a nonstick skillet over medium-high heat and add the oil, cumin, thyme, and garlic.
  • When the oil shimmers, remove the garlic and discard. Dip the lamb pieces into the egg, press into the bread crumbs on both sides, and add to the skillet. Do not crowd-you will have to cook in batches. When the meat is in the skillet, season it with salt and pepper and sprinkle it with a pinch of cumin.
  • Brown one side, then flip and brown the other; adjust the heat so that each side takes about 2 minutes. The meat should remain rare. Remove the pieces, drain, and then transfer to a warm platter in the oven. When all the pieces are done, drain the oil from the pan, leaving the browned bits, and then add the wine to the pan. Allow the mixture to simmer until it reduces by half, 3 to 5 minutes.
  • Garnish the lamb with the parsley if you like and serve it alongside the wine sauce and lemon wedges.

Time 30m

Yield 4 servings

Number Of Ingredients 8

12 1-inch-thick medallions of lamb, cut from the rib, leg or loin
3 tablespoons extra virgin olive oil
2 eggs, beaten
Panko or other bread crumbs
Salt and freshly ground black pepper
1 teaspoon ground cumin
Chopped parsley for garnish
2 lemons, cut into wedges

Steps:

  • Preheat oven to 200 degrees. If you are using rib or loin slices, pound them lightly with heel of your hand until they are about 1/2 inch thick. If you are using leg slices, put them between 2 pieces of wax paper or plastic wrap and pound with a mallet or rolling pin until they are about 1/2 inch thick. Put a large nonstick or well-seasoned skillet over medium-high heat and add half the oil.
  • When oil shimmers, dip a piece of lamb in eggs, then press both sides into bread crumbs. Put the slices in the skillet; do not crowd. Season with salt, pepper and cumin.
  • As each slice browns, flip it. Adjust heat so that each side browns in about 2 minutes. Keep finished pieces warm in the oven. Add the remaining oil to the pan when necessary. Serve with parsley and lemon slices.

LAMB CUTLETS REFORM BY ALEXIS SOYER: SWEET AND SOUR LAMB CUTLETS

Lamb Cutlets Reform by Alexis Soyer: Sweet and Sour Lamb Cutlets image

Alexis Soyer invented this dish at the Reform Club - maybe the late arrival of a tricky and hungry club member, as well as an ingenious chef who had to make the most of what he had in his kitchen, might explain the creation of this somewhat strange concoction. But the tangy sweet and sour sauce works and is one of Soyer's best-known dishes. It's in danger of becoming a forgotten classic, but I think it's worth reviving. I suppose it goes back to the days of disguising inferior cuts of meat - the gentleman's club equivalent of the fish finger or fried chicken in a basket! The recipe has been altered over time - but this is pretty close to the original. I wouldn't suggest using cheap meat of course, but coating the cutlets in breadcrumbs keeps them juicy and seals in the flavour. It is best to keep the garnish separate, so it can be eaten as it is or mixed into the sauce. About Alexis Soyer: Celebrity chefs are nothing new. One who really was the Jamie Oliver of his time, was Alexis Soyer. He was involved with charity work as well as being a popular figure on the culinary circuit, chef de cuisine of the Reform Club and author of many cookery books. During the potato famine of 1847 he went to Ireland to help victims by setting up soup kitchens - he claimed he could provide 100 gallons of soup for £1 including expenses. Like high-profile chefs today he was often asked to cook for large numbers at prestigious events and in June 1838 rose to the challenge of cooking breakfast for 2,000 people for Queen Victoria's coronation. He designed the Reform Club's kitchens, installing advanced technology gas ovens, which became a bit of a tourist attraction and source of envy among his peers.
