EMMANUEL'S BAKED ARTICHOKE HEARTS

2 (15-ounce) cans artichoke hearts in water, 6 to 8 count, drained
1 tablespoon extra-virgin olive oil, 2 turns of the pan, plus a drizzle to coat baking dish
1/4 ripe lemon
1 tablespoon butter
3 cloves garlic, chopped
6 flat anchovies fillets
1 cup Italian style bread crumbs, 3 handfuls
1/4 cup chopped flat leaf parsley
1/4 cup grated Parmigiano-Reggiano, a couple of handfuls
Coarse black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Turn drained artichokes upside down to get all the liquid out. Halve artichoke hearts, lengthwise. Drizzle a small casserole dish with a little extra-virgin olive oil, and spread it around the dish with a pastry brush. Arrange the halved artichoke hearts with tops up, bottoms down, in a layered pattern in the dish. Squeeze the juice of 1/4 lemon over the hearts.
  • Preheat a small nonstick skillet over medium heat. Add oil and butter to the skillet. When butter melts into oil, add garlic and anchovies. Using the back of a wooden spoon, work anchovies into oil as they break up. When anchovies have dissolved into oil, add bread crumbs to the pan and lightly toast, about 2 to 3 minutes. Add parsley, cheese and black pepper, stir to combine and remove pan from heat. Top artichokes with an even layer of bread topping and set in the middle of oven. Bake 10 minutes until artichokes are warm and topping is deep golden brown in color.

one large jar of artichoke hearts in water (33 oz)
flour for coating
1 egg
1 tbsp grated Parmigiano or Pecorino cheese
salt and pepper
breadcrumbs, for coating
dried thyme
dried parsley
salt and pepper
oil for deep frying

Steps:

  • Drain the artichoke hearts into a colander, then gently squeeze the water out of them. Beat the egg with the grated cheese and a shake of salt and pepper. Place some flour into a low rimmed bowl, put the beaten egg next to it and in a third bowl, place some breadcrumbs mixed with a sprinkle of parsley, thyme, salt and pepper. Begin to dip each artichoke heart into the flour, then egg, then breadcrumbs, until all are coated. Set on a plate. Heat the oil, and when hot begin frying the breaded artichoke hearts. Fry until golden brown. Place on a paper towel lined plate to drain. Serve hot as an appetizer or side dish.

6 whole artichokes
3 slices Italian bread, cubed
1 clove garlic, minced
⅛ cup chopped fresh parsley
¼ cup grated Romano cheese
½ teaspoon dried oregano
5 tablespoons vegetable oil, divided
salt and pepper to taste

Steps:

  • Snip the pointed tips of artichoke leaves, and cut off the stems. Wash and drain. Holding artichoke firmly by base, firmly rap the top of it on a hard surface; this will open it so it can be stuffed.
  • In a medium bowl combine bread cubes, garlic, parsley, Romano cheese, oregano, 2 tablespoons vegetable oil, salt and pepper; mix well.
  • Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Add enough water to reach half way up artichokes and add 3 tablespoons oil.
  • Bring to a boil over high heat; reduce heat to low and simmer, covered, for 1 hour, or until leaves pull out easily.

This deep fried artichoke hearts recipe is perfect for any party or family gathering. Tender artichoke hearts are coated in seasoned breadcrumbs and fried in oil until golden brown!

1 can Artichoke Hearts (12 hearts), see note 1
½ cup All-Purpose Flour, see note 2
1 tablespoon Parmesan Powder (or finely grated Parmesan)
Salt, a pinch
Black Pepper, a generous pinch
1 Egg (medium or large)
½ cup Breadcrumbs, see note 3
1 tablespoon Parmesan Powder (or finely grated Parmesan)
1 tablespoon Dried Basil
Oil for frying, see note 6

Steps:

  • Drain the artichoke hearts and place them onto a few sheets of paper kitchen towel for a few minutes.
  • Meanwhile: Prepare 3 bowls (or plastic containers). Put flour + Parmesan + salt + pepper in 1; egg in second one (beat it with a fork); and breadcrumbs + Parmesan + basil into the third bowl. Mix all well.
  • Now, squeeze gently each artichoke heart, to get rid of the liquid that is trapped inside them.
  • Coat each of them in flour mixture, egg and breadcrumbs and place onto a plate (or paper kitchen towel).
  • Heat the oil in a small pot (see note 6) and deep fry the artichoke hearts until nice crispy and golden brown (about 3-4 minutes per batch).
  • Best served warm with a dip of your choice (see note 7).

1 cup fresh breadcrumbs, toasted
1 tablespoon extra-virgin olive oil
1 tablespoon chives, cut into 1/2-inch lengths
1/2 teaspoon minced lemon zest
1 clove garlic, minced
1/2 cup grated Gruyere cheese
Kosher salt and ground black pepper
2 artichokes, trimmed, with top 1/4 cut off

Steps:

  • Preheat oven to 400 degrees.
  • Combine breadcrumbs, oil, chives, lemon zest, garlic, and cheese. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Cut off the top quarter of the artichokes lengthwise, and remove the chokes.
  • Season artichokes with 1/2 teaspoon salt. Divide the bread mixture among the four artichoke halves, packing it into the cavities.
  • Place artichokes in a pan just large enough to hold them. Add about 1/2 inch of water, and cover tightly with foil.
  • Bake until the artichokes are tender and the breadcrumbs are golden brown, about an hour.

2 eggs
½ cup milk
1 (15 ounce) can artichoke hearts, drained and quartered
1 ½ cups seasoned dry bread crumbs
2 cups oil for frying, or as needed
¼ cup grated Parmesan cheese for topping

Steps:

  • Heat oil in a deep-fryer or heavy deep skillet to 350 degrees F (175 degrees C).
  • In a small bowl, whisk together eggs and milk. Place seasoned bread crumbs in a separate bowl. Dip artichoke hearts in the egg mixture, then roll in bread crumbs until they are fully covered.
  • Deep-fry for 2 to 3 minutes, until deep golden brown. Remove to paper towels to drain excess oil. When all the pieces have been fried, place on a serving tray and sprinkle with Parmesan cheese.

Steps:

  • Drain and season artichoke hearts with salt and pepper.
  • While working, heat oil over fairly high heat.
  • Dredge artichokes in egg and then bread crumbs.
  • Deep fry about 3-4 minutes, turning frequently, or until golden.
  • Drain on paper towels and serve with lemon wedges.
  • Note:If using fresh artichoke hearts, soak in lemon water, to avoid oxidation.

14 round salted butter crackers
4 fresh basil leaves
2 tablespoons finely grated Parmesan cheese
1 tablespoon fresh flat-leaf parsley leaves
1/4 teaspoon garlic salt
One 24-ounce jar marinated quartered artichoke hearts, drained
Marinara sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
  • In a food processor, combine the crackers, basil, cheese, parsley and garlic salt and process to fine crumbs (the texture of breadcrumbs). Roll the artichoke hearts in the cracker crumb mixture and place on the prepared baking sheet.
  • Bake until the cracker crumbs are golden brown, about 30 minutes. Arrange the artichokes on a serving platter with toothpicks. Serve with marinara sauce for dipping, if desired.
