~ salt and pepper, optional
~ flour
~ 1 - 2 eggs, beaten
~ seasoned bread crumbs
~ oil

Steps:

  • Season the meat with salt and pepper to taste if desired. Heat 4 - 5 tbsp oil in a large skillet. Roll the meat in the flour then the beaten eggs and finally in the bread crumbs. Place in the hot oil and fry until slightly browned on all sides. Place a cooking rack on a baking sheet. Place the meat on the rack, cover with foil and bake at 350 degrees until tender, 45 - 60 minutes.
