Steps:
- In bread machine pan, put all ingredients in order suggested by manufacturer.
- Select dough setting.
- When cycle is completed, turn dough onto a lightly floured surface.
- Divide dough into 24 portions.
- Shape dough into balls.
- Place in a greased 13 inch by 9 inch baking pan.
- Cover and let rise in a warm place for 30-45 minutes.
- Bake at 350 degrees for 13-16 minutes or until golden brown.

- Soften butter in a microwave.
- Place the milk, butter and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Put your machine on the "Dough" setting and press the start button. In our bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts. Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
- Divide the dough into 12 equal parts.
- Roll the dough pieces into balls and then press them down slightly into semi-"patties" on a baking sheet.
- Use a pastry brush & coat each dough ball/patty with olive oil.
- Cover the dough ball/patties with a slightly wet cloth to protect from the dough for dust, etc.
- Let the dough sit for at least 40 minutes. During this time, the yeast will rise and the dough will slowly expand into a round roll shape.
- Preheat oven to 350 degrees before you begin to bake your rolls.
- Remove the cover. Do not move the dough on the baking sheet.
- Optional - Sprinkle a little salt on top of dough before baking. It should stick to the olive oil.
- Place the baking sheet in the oven.
- Bake for 20-25 minutes or until golden brown. Baking time may vary depending on the size & shape of your bread rolls. To ensure even coloring, turn the baking sheet around in the oven at the 10 minute mark. Remember to wear oven mitts as the oven will be very hot.
- Remove the baking sheet and place rolls on a cooling racks. Wear oven mitts. Let the rolls cool down for 5-10 minutes.

- Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto a baking sheet with one quick but careful motion.
- Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

- Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.
- Remove risen dough from the machine, deflate, and turn out onto a lightly floured surface. Divide the dough into twelve equal pieces, and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, mix together the egg white and 2 tablespoons water; brush lightly onto the rolls. Bake in the preheated oven for 15 minutes, or until the rolls are golden brown.

BUTTERHORN BREAD MACHINE ROLLS
My daughter's number one favorite food I make are these soft, buttery rolls from "Bread Machine Magic." I have made these a million times and could do it in my sleep. The dough is a cinch to work with and they turn out exactly the same every time. Leftovers are great with jam. This bread dough makes a delicious kid-friendly pizza crust, too. - Place all ingredients except melted butter in pan.
- Select Dough Only setting and press start.
- When dough has risen long enough, the machine will beep.
- Remove dough from pan.
- Divide dough into 3 equal balls.
- Roll out each ball, one at a time, into a 9 inch circle (don't worry if you can't get it exactly 9 inch).
- (Note: I always start rolling my dough and let it rest for awhile and resume rolling. The resting helps relax the dough).
- With pizza cutter (works great!)or sharp knife, divide each circle into 8 wedges, as if cutting a pizza.
- Starting at the wide end, roll up each wedge toward the point.
- Cover and place in a warm oven (turn oven onto warm setting for 2 minutes and turn off, to make a good environment for dough).
- Let rise for 30 to 40 minutes until doubled.
- Remove sheet from oven to preheat oven!
- Preheat oven to 375 degrees.
- Bake for 12-15 minutes until golden.
- Remove from oven.
- Brush rolls lightly with melted butter.

BUTTERY PAN ROLLS (FOR THE BREAD MACHINE)
From a Favorite Brand Name Recipes book. I've made too many yeast roll recipes to count but these are my hands down favorite. I make them for all holiday meals and whenever bringing dinner to someone. It's really easy with the bread machine and everyone loves them. It's a lot of butter but don't scrimp, they're well worth it! I've doubled the recipe and either baked in two pans or in a 13x9 pan. If you do this, just watch the baking time and make sure the middle rolls are cooked through.

Steps:
- Reserve 5 T melted butter.
- Put all other ingredients in bread machine according to manufacturer's directions.
- Program dough setting, press start.
- Pour half of remaining butter into 8-inch square baking pan, tilt to coat bottom with butter.
- Drop batter by rounded tablespoonfuls into pan, making 16 rolls.
- Drizzle remaining butter over rolls.
- Cover loosely with plastic wrap and let rise in a warm place until almost doubled, about 30 minutes.
- Preheat oven to 400.
- Uncover rolls and bake 12-15 minutes or until golden (check middle roll for doneness).
- Cool slightly in pan on wire rack.

GREEN ONION GARLIC NAAN BREAD
I am going to show you how to make naan Chef John-style-when I want it fast and I don't want to use yeast and wait for a dough to rise but I also want it just as good as if I did. While I originally tried this method to save time, it produces what might be my favorite style of naan. It really is incredible whether you use garlic and green onions, or not. As naan are made, they must be stacked and wrapped in a kitchen towel to keep them soft and supple.

- Place bread flour in a bowl. Add salt and baking powder and give it a good whisk until evenly combined.
- Add in Greek yogurt gently, followed by garlic and green onions. Take a wooden spoon and slowly start mixing everything together. Keep mixing, stirring, and pressing until a shaggy dough forms.
- Transfer dough to a work surface and use your hands to press dough together. Knead for a few minutes until dough becomes elastic and a little bit sticky. Add a bit more flour as necessary but try to keep extra flour at an absolute minimum. Knead until dough is a little bit stretchy, 3 to 5 minutes.
- Wrap in plastic and allow to rest on the counter for 15 to 20 minutes.
- Take a bench scraper and cut into 6 equal pieces. Take 1 portion and roll into a ball. Place onto a generously floured surface. Use a rolling pin to roll out nice and thin, about 1/8 inch or less. It's ok if the naan is not a perfect circle. You will need extra flour for rolling out as the dough is sticky, but try to use as little as possible.
- Heat a cast iron skillet over medium-high heat until hot. Transfer dough circles into the hot dry skillet and cook until little bubbles form on the surface and the underside is lightly browned, about 1 minute. Flip naan over and cook for 1 more minute. Press down slightly with a spatula to increase the heat during cooking. Flip over twice more and cook for an additional 15 seconds per side, but make sure not to overcook to preserve the texture. Naan should still be flexible when you remove it from the skillet onto a plate.
- Cover with a kitchen towel to keep warm and moist while you cook the other naan breads. Stack all 6 naan breads on top of each other and keep covered with a kitchen towel.
- When you are finished cooking all 6 naan breads, unstack breads and brush the first naan bread on both sides with a little bit of melted butter. Stack second piece of naan on top and only brush the top side. Keep stacking and buttering all the naan breads. Fold each naan into a triangle and serve.
