1 cup water
2 tablespoons butter, softened
3 cups Gold Medal™ Better for Bread™ flour
3 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
2 1/2 teaspoons bread machine yeast
3/4 cup raisins

Steps:

  • Measure carefully, placing all ingredients except raisins in bread machine pan in the order recommended by the manufacturer. Add raisins at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
  • Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan and cool on wire rack.

This makes a lovely tea bread, and is kneaded in the bread machine. You can also hand knead the dough.

1 egg
¼ cup water
½ cup evaporated skim milk
1 teaspoon salt
1 ½ teaspoons canola oil
3 cups bread flour
1 teaspoon ground cardamom
3 tablespoons white sugar
1 teaspoon active dry yeast

Steps:

  • Place all ingredients into bread machine in the proper order for your machine. Use the Dough cycle.
  • At end of the Dough cycle, remove dough from the machine. Place on a lightly floured board, and let it rest, covered, for about 10 minutes.
  • Shape dough into a loaf, and place it in a 9 x 5 inch greased bread pan. Cover, and let rise for 45 minutes.
  • Just before baking, brush the top of the dough with a little milk, and slash a line down the center. Bake at 375 degrees F (190 degrees C) for 30 to 35 minutes. Remove from pan, and cool on a wire rack.

1 cup warm whole milk (110 degrees F (43 degrees C))
⅓ cup warm water (110 degrees F (43 degrees C))
½ cup white sugar
2 tablespoons melted butter
1 (.25 ounce) package active dry yeast
3 ½ cups all-purpose flour, or as needed
½ cup white sugar
1 ½ tablespoons ground cardamom
3 tablespoons ground cinnamon
½ cup melted butter
½ cup raisins
½ cup chopped walnuts
1 egg
1 tablespoon water
½ cup sliced almonds
¼ cup pearl sugar

Steps:

  • Whisk together the warm milk, warm water, sugar, and 2 tablespoons melted butter in a mixing bowl until the sugar has dissolved. Sprinkle yeast over top, and set aside for 5 minutes.
  • Once the yeast is foamy, stir in the flour, adding more if needed to make a stiff dough. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place into an oiled bowl, cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Combine 1/2 cup sugar with the cardamom and cinnamon in a small bowl; set aside. Deflate the dough and turn it out onto a lightly floured surface. Roll the dough into a 9x13-inch rectangle, and brush with 1/2 cup of melted butter. Sprinkle with the cardamom sugar, raisins, and walnuts. Roll into a log, pinch the edges closed, and place onto a parchment paper-lined baking sheet. Cover with a cloth, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • With a sharp knife score the top layer of the roll with V-shapes that don't quite meet in the middle the whole length of the roll, this will make the bread look braided, and is very pretty, but could be skipped. Beat the egg with 1 tablespoon of water in a small bowl. Brush the egg wash over the top of the bread. Sprinkle with almonds and pearl sugar.
  • Bake in the preheated oven until the bread is golden-brown and sounds hollow when tapped on the bottom, 30 to 35 minutes. Cool completely on a wire rack before slicing.

This is an old recipe that I have scaled down for use with a bread machine(to make the dough only). Called Lassy Bread in Newfoundland, it is sweet with molasses and chock full of raisins. Best served warm or toasted with butter. Note: Edited to correct errors - thanks to reviewer

1/2 cup warm water
1/2 cup milk, warm but not hot
1/4 cup molasses
2 teaspoons active dry yeast
2 tablespoons vegetable oil
1 egg, beaten
1 teaspoon salt
3 cups all-purpose flour
1 teaspoon cinnamon
1 cup golden seedless raisins

Steps:

  • Add all the ingredients except the raisins to the breadmaker and run on the dough cycle, for my breadmaker this is the order given and the dough cycle lasts 90 minutes. Note: I like to mix the warm water, milk and molasses and "proof" the yeast in it for about 10 minutes before adding the remaining ingredients.
  • When the dough cycle has finished start it again, and add the raisins, let it run for 5 to 10 minutes to mix all the raisins in and then stop it.
  • Make dough into a smooth loaf and place in a greased 9" x 5" loaf pan.
  • Cover with plastic wrap and let raise until doubled.
  • Bake in a preheated 350F oven about 35-45 minutes, loaf should be golden and sound hollow when tapped.

1 1/4 cups sugar
1 egg
1 1/2 teaspoons almond extract
2/3 cup milk
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 cup melted margarine

Steps:

  • Beat sugar, egg, extract, and milk, add flour and baking powder, finally add margarine.
  • Pour into bundt cake pan sprayed with cooking spray (or specialized Scandinavian cake pan).
  • Bake at 350 degrees for 40-50 minutes.
  • Edges must be golden brown.
  • Cool in pan before removing.
  • Bread will break if removed too soon.
  • Sprinkle with confectionary sugar.
  • Cool cake in pan before removing as it can break apart.
  • Variation: before pouring batter into pan, sprinkle sliced almonds on the bottom.

2 cups bread flour
1/2 teaspoon ground cardamom
3/4 teaspoon salt
4 teaspoons granulated sugar
2 tablespoons nonfat dry milk powder
1 teaspoon nonfat dry milk powder
2 teaspoons unsalted butter
1/2 cup water
1 teaspoon vanilla extract
1 large egg
1 teaspoon lemon juice
1/3 cup golden raisin
1/3 cup slivered almonds

Steps:

  • All ingredients must be at room temperature. Add ingredients in your bread machine owner's manual. (Mine says add liquids first).
  • Add fruit and nuts at the appropriate moment. (Mine beeps).
  • Set bread machine on basic bread making setting. Crust light.
  • If desired, dust bread with confectioners' sugar after bread has cooled.
