CHEESY CAULIFLOWER BREADSTICKS RECIPE
Gooey melted mozzarella combined with savory garlic and herbs makes this Cheesy Cauliflower Breadsticks recipe the perfect go-to when you want a low carb version of cheesy garlic bread.

- Preheat the oven to 350F. Line an 8 by 8-inch or 9 by 9-inch baking dish with parchment paper. Spray the parchment paper with olive oil cooking spray.
- If you're making your own cauliflower rice, use a cheese grater to grate fresh cauliflower.
- Put the cauliflower rice in a large microwave-safe bowl and microwave for 8 minutes on high. Cool slightly.
- Meanwhile, heat a small skillet over medium heat. Add the olive oil and once hot, add the garlic. Cook until fragrant, about 1 minute, stirring constantly. Remove from the heat.
- To the bowl with the cauliflower, add the garlic, eggs, 1/2 teaspoon dried Italian herb seasoning, salt, black pepper, and 3/4 of the shredded mozzarella. Stir to combine.
- Spread the cauliflower mixture into the bottom of the prepared baking dish, spreading it out evenly.
- Bake until the loaf is set and starting to turn golden, about 30 minutes.
- Line a baking tray with foil, parchment paper, or a silpat liner, and spray it with olive oil cooking spray. Place the prepared baking tray on top of the baking dish and flip it upside-down, so the cauliflower loaf is now upside-down on the prepared baking tray. Bake until golden, about 10 minutes.
- Spread the remaining 1/4 of the shredded mozzarella and the remaining 1/4 teaspoon dried Italian herb seasoning on top.
- Broil a couple minutes until the cheese is melted and golden in spots.
- Cut into 8 breadsticks. Serve warm, topped with Parmesan and parsley along with marinara sauce if desired.

- Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
- Preheat oven to 425°F (218°C).
- On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
- Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.
- Bake for 12-15 minutes or until the edges are golden brown. If desired, turn the oven to broil for the last minute to really brown the top.
- Slice into breadsticks and serve plain or with marinara sauce. Cover leftover breadsticks tightly and store in the refrigerator for up to 1 week. Reheat as you prefer. Baked breadsticks can be frozen up to 3 months.

- Stir together pizza crust mix (dry), hot water, oil and honey in medium bowl until dough forms. Brush top of dough lightly with vegetable oil; cover and let rest in warm place (about 85°F) 15 minutes.
- Heat oven to 400°F. Grease cookie sheet.
- Turn dough onto smooth surface; dust dough lightly with flour if necessary. Divide dough into 24 parts. Roll and shape each part into rope about 12 inches long for thin breadsticks or about 9 inches long for thick breadsticks. Place about 1 inch apart on cookie sheet. Cover and let rise 20 minutes.
- Brush with egg white; sprinkle with sesame seed. Bake about 12 minutes or until deep golden brown. Remove from cookie sheet. Serve warm.

- Place 1/2 cup of warm water and yeast in a medium bowl and whisk together briefly. Allow the yeast enough time to bubble up and become active. This should take a few minutes. If the yeast is inactive, you may need to replace the yeast and try again.
- Add room temperature water and oil to the yeast mixture, and stir to combine.
- Place the flour and salt in a food processor, and pulse to combine.
- Add the yeast mixture through the tube of the food processor and process. The dough will form into a ball. Process until the dough is smooth and elastic.
- Place the dough in a bowl that has been sprayed with non-stick spray, and cover with plastic wrap. Let the dough rise until doubled in size, up to 2 hours.
- Preheat the oven to 375°F.
- Gently pat out the dough on a floured surface into a rectangular shape.
- Cut the dough into two equal portions down the middle. Then make about 8 cuts horizontally across the dough.
- Roll each portion of dough into a breadstick.
- Spray a baking sheet with non-stick spray and place the dough strips onto the baking sheet.
- Bake for about 18 minutes or until the breadsticks become golden.
- Mix the melted butter and the garlic salt.
- Brush the garlic sauce over the breadsticks and sprinkle Parmesan cheese on top.

- 1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 2. Open the can of pizza dough and spread it out on a large flat surface in a rectangle shape. 3. Use a pizza cutter to cut the dough in half lengthwise and then into 1" strips. 4. Twist each piece of dough twice to create a spiral design. Place the strips of dough onto the prepared cookie sheet.
