Gooey melted mozzarella combined with savory garlic and herbs makes this Cheesy Cauliflower Breadsticks recipe the perfect go-to when you want a low carb version of cheesy garlic bread.

Olive oil cooking spray
3 cups cauliflower rice (see Notes)
2 teaspoons extra-virgin olive oil
5 cloves garlic (crushed)
2 large eggs (lightly beaten)
3/4 teaspoon dried Italian herb seasoning (divided)
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces pre-shredded part-skim mozzarella cheese (divided)
2 tablespoons freshly-grated Parmesan cheese (for topping)
1/2 tablespoon minced fresh parsley (for garnish)
1/2 cup no-sugar-added marinara sauce (for serving (optional))

Steps:

  • Preheat the oven to 350F. Line an 8 by 8-inch or 9 by 9-inch baking dish with parchment paper. Spray the parchment paper with olive oil cooking spray.
  • If you're making your own cauliflower rice, use a cheese grater to grate fresh cauliflower.
  • Put the cauliflower rice in a large microwave-safe bowl and microwave for 8 minutes on high. Cool slightly.
  • Meanwhile, heat a small skillet over medium heat. Add the olive oil and once hot, add the garlic. Cook until fragrant, about 1 minute, stirring constantly. Remove from the heat.
  • To the bowl with the cauliflower, add the garlic, eggs, 1/2 teaspoon dried Italian herb seasoning, salt, black pepper, and 3/4 of the shredded mozzarella. Stir to combine.
  • Spread the cauliflower mixture into the bottom of the prepared baking dish, spreading it out evenly.
  • Bake until the loaf is set and starting to turn golden, about 30 minutes.
  • Line a baking tray with foil, parchment paper, or a silpat liner, and spray it with olive oil cooking spray. Place the prepared baking tray on top of the baking dish and flip it upside-down, so the cauliflower loaf is now upside-down on the prepared baking tray. Bake until golden, about 10 minutes.
  • Spread the remaining 1/4 of the shredded mozzarella and the remaining 1/4 teaspoon dried Italian herb seasoning on top.
  • Broil a couple minutes until the cheese is melted and golden in spots.
  • Cut into 8 breadsticks. Serve warm, topped with Parmesan and parsley along with marinara sauce if desired.

Made from 6 ingredient homemade pizza dough, these easy cheesy breadsticks are a completely irresistible side dish or snack. You can freeze half of the dough for another night. Only 15 minute bake time!

1 lb store-bought or homemade pizza dough*
2 Tablespoons (30g) unsalted butter, melted
1 teaspoon garlic powder or 2 minced garlic cloves
1 teaspoon Italian seasoning blend or dried basil
1 and 3/4 cups shredded mozzarella cheese*
optional: sprinkle of cornmeal for dusting the pan
optional: marinara or pizza sauce for dipping

Steps:

  • Prepare pizza dough through step 3. Punch the risen dough down to release the air bubbles. Divide in half. (Make a pizza with the other half or freeze half of the dough for another time. See dough recipe for freezing instructions.)
  • Preheat oven to 425°F (218°C).
  • On a lightly floured work surface or on a piece of parchment paper or a silicone baking mat sprinkled with cornmeal (I skipped the optional cornmeal in the video above), roll the dough out into a 9×13 inch rectangle. The dough will want to be round, so do your best to shape it into a thin rectangle around this size- doesn't have to be perfect.
  • Combine the butter, garlic, and Italian seasoning together in a small bowl. Brush over shaped dough. Cover evenly with shredded cheese.
  • Bake for 12-15 minutes or until the edges are golden brown. If desired, turn the oven to broil for the last minute to really brown the top.
  • Slice into breadsticks and serve plain or with marinara sauce. Cover leftover breadsticks tightly and store in the refrigerator for up to 1 week. Reheat as you prefer. Baked breadsticks can be frozen up to 3 months.

3/4 cup very warm water (120°F to 130°F)
1 tablespoon vegetable oil
1 tablespoon honey
1 egg white, slightly beaten
Sesame seed, poppy seed or coarse salt

Steps:

  • Stir together pizza crust mix (dry), hot water, oil and honey in medium bowl until dough forms. Brush top of dough lightly with vegetable oil; cover and let rest in warm place (about 85°F) 15 minutes.
  • Heat oven to 400°F. Grease cookie sheet.
  • Turn dough onto smooth surface; dust dough lightly with flour if necessary. Divide dough into 24 parts. Roll and shape each part into rope about 12 inches long for thin breadsticks or about 9 inches long for thick breadsticks. Place about 1 inch apart on cookie sheet. Cover and let rise 20 minutes.
  • Brush with egg white; sprinkle with sesame seed. Bake about 12 minutes or until deep golden brown. Remove from cookie sheet. Serve warm.

1/2 cup warm water (~100° to 110°F)
2 1/2 teaspoons instant yeast (1 package)
1 1/4 cups water
2 tablespoons olive oil
4 cups (22 ounces) bread flour (plus more for working the dough)
1 1/2 teaspoons salt
3 tablespoons butter (melted)
1/2 teaspoon garlic salt
3 tablespoons grated Parmesan cheese

Steps:

  • Place 1/2 cup of warm water and yeast in a medium bowl and whisk together briefly. Allow the yeast enough time to bubble up and become active. This should take a few minutes. If the yeast is inactive, you may need to replace the yeast and try again.
  • Add room temperature water and oil to the yeast mixture, and stir to combine.
  • Place the flour and salt in a food processor, and pulse to combine.
  • Add the yeast mixture through the tube of the food processor and process. The dough will form into a ball. Process until the dough is smooth and elastic.
  • Place the dough in a bowl that has been sprayed with non-stick spray, and cover with plastic wrap. Let the dough rise until doubled in size, up to 2 hours.
  • Preheat the oven to 375°F.
  • Gently pat out the dough on a floured surface into a rectangular shape.
  • Cut the dough into two equal portions down the middle. Then make about 8 cuts horizontally across the dough.
  • Roll each portion of dough into a breadstick.
  • Spray a baking sheet with non-stick spray and place the dough strips onto the baking sheet.
  • Bake for about 18 minutes or until the breadsticks become golden.
  • Mix the melted butter and the garlic salt.
  • Brush the garlic sauce over the breadsticks and sprinkle Parmesan cheese on top.

2 tsp everything bagel seasoning

Steps:

  • 1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. 2. Open the can of pizza dough and spread it out on a large flat surface in a rectangle shape. 3. Use a pizza cutter to cut the dough in half lengthwise and then into 1" strips. 4. Twist each piece of dough twice to create a spiral design. Place the strips of dough onto the prepared cookie sheet. Tip: press the ends of the dough firmly to the parchment paper lined baking sheet so that they stay in place and don't unwind. 5. In a small bowl, beat the egg with a whisk or fork. Use a pastry brush to wash the top of each breadstick with egg. 6. Sprinkle the egg washed dough with everything bagel seasoning. 7. 7 to 8 cups stale bread crust trimmings
Kosher salt and freshly ground black pepper
1/4 cup finely grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
