I came up with this recipe one day when I needed something quick and healthy for lunch but didn't want to go through a lot of trouble. -Nita Graffis, Dove Creek, Colorado

4 teaspoons butter, softened
6 plain bagels, split
6 slices deli ham
6 slices cheddar cheese
2 ounces cream cheese, softened
1/8 teaspoon salt
1/8 teaspoon pepper
1 large tomato, sliced
1 medium ripe avocado, peeled and sliced

Steps:

  • Spread butter over cut sides of bagels. Place buttered sides up on an ungreased baking sheet. Broil 4-6 in. from the heat for 3-4 minutes or until lightly browned. Set aside bagel tops., On the bottom of each bagel, place a slice of ham and cheddar cheese. Broil 3-4 minutes longer or until cheese is melted., Meanwhile, spread bagel tops with cream cheese; sprinkle with salt and pepper. Layer bottom halves with tomato and avocado. Replace tops.

A strata -- literally, "layers" -- is a savory bread casserole. Essentially, you pour an egg mixture over bread and cheese and let soak in overnight.

Unsalted butter, for greasing dish
1 pound Italian loaf, crust removed, cut crosswise into 1/2-inch slices
1 cup diced Virginia ham (1/4-inch dice)
2 cups grated Swiss cheese
2 tablespoons minced chives
3 small tomatoes, cored and sliced into 1/4-inch rounds
8 large eggs
4 cups milk
2 tablespoons Dijon mustard
2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Butter a 9-by-13-inch baking dish. Arrange half of the bread slices in the bottom of the dish. Sprinkle with half of the ham, cheese, and chives. Add another layer of bread and cover it with the remaining ham, cheese, and chives. Arrange the tomato slices on top.
  • In a large bowl, whisk the eggs, milk, mustard, salt, and pepper until well combined. Pour mixture over the bread and cheese layers. Cover and refrigerate overnight.
  • Preheat oven to 350 degrees. Let strata come to room temperature (about 25 minutes). Bake strata, uncovered, until golden and fluffy and a knife inserted comes out clean (60 to 70 minutes). Let stand 20 minutes before serving.

2 garlic cloves, minced
2 tablespoons vegetable oil
4 medium tomatoes, peeled, seeded and chopped
1 cup diced fully cooked ham
1/2 teaspoon salt-free seasoning blend
1/4 teaspoon pepper
1/8 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a skillet, saute garlic in oil until tender. Add tomatoes; simmer for 5 minutes. Stir in ham and seasonings. Cook 8 minutes longer or until heated through. Drain pasta; add to ham mixture.

8 large tomatoes, thinly sliced
2 cups cooked ham, chopped
4 tablespoons mayonnaise
2 tablespoons fresh parsley, chopped
6 cups fresh white breadcrumbs
3 cups cheddar cheese, shredded
4 tablespoons butter, melted

Steps:

  • Preheat oven to 375°F.
  • Combine ham, mayo, and parsley.
  • In a separate bowl, combine breadcrumbs, cheese and melted butter.
  • In a greased 9x13-inch baking dish, place 1/3 of the tomatoes, top with 1/3 of the ham mixture, cover with 1/3 of the breadcrumb mixture.
  • Repeat process, creating 2 more layers.
  • Bake 45-50 minutes until golden brown and bubbling.
  • Let sit 10 minutes before serving.

  • Arrange the bread slices, overlapping, in the baking dish. Tuck the cherry tomatoes and ham in and around them.
  • Whisk the milk and eggs together, and season with salt and pepper. Pour over the bread and gently push the slices down in the liquid. Leave to stand for 5 mins. Scatter the cheese over the top, then bake for 35-40 mins until golden and just set. Serve with a crisp green salad.
