ITALIAN BREAD BOWLS
These cute little bread bowls are a great way to serve soup in the wintertime. I usually serve a hearty potato soup when I have the time to bake them. They freeze for up to 1 month, if desired.

Steps:
- In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- Add salt, oil and 4 cups flour to the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well with an electric mixer at medium speed after each addition.
- When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
- Punch dough down, and divide into 8 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.
- Preheat oven to 400 degrees F (200 degrees C). In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash.
- Bake in preheated oven for 15 minutes. Brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.
- To make bowls: Cut a 1/2 inch thick slice from top of each loaf; scoop out centers, leaving 3/4-inch-thick shells. Fill bread bowls with hot soup and serve immediately.

- Pre heat oven to 180c (350f).
- Slice the top off the bread rolls using a serrated knife and set these "lids" aside.
- Using your fingers, scoop out the centre of the roll and reserve for another use (making your own breadcrumbs!).
- Combine the melted butter (4 tbsp), crushed garlic (2 large cloves), salt (if using) and finely chopped parsley (1 tbsp if using) in a small bowl. Using a pastry brush, brush this butter mixture around the inside of the rolls, plus both sides of the lids you set aside earlier.
- Sprinkle the grated parmesan onto the cut side of the lids (these will be garlic bread dippers) and around the inside of the rolls. Tilt the rolls slightly as you go, the parmesan will stick to the butter.
- Place the bowls and lids (cut side up) onto a lined baking tray and bake for 20 minutes or until golden.

Steps:
- Using a Bosch or Kitchen Aid mixer, put yeast, sugar, salt, hot water, and olive oil in the mixer.
- Gradually add the flour until the dough has sufficiently scraped everything off the sides of the mixing bowl. Continue to mix on low for 8-10 minutes.
- Remove and cover with plastic wrap - let the dough rise until doubles in size (about 30 minutes).
- Grease 2 cookie sheets and sprinkle with corn meal.
- Punch down the dough and make tennis ball-size dough balls (about 8-12, depending on how large you want your bread bowls).
- Place on cookie sheet with no more than 6 to a cookie sheet (don't let them touch). Let them rise for another 30 minutes.
- Bake each cookie sheet at 400 for 18 minutes.

- In a small mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- In a large mixing bowl, combine the yeast mixture with the whole wheat flour, salt and one cup of the bread flour; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
- Place into a lightly oiled bowl, and turn to coat the whole surface with oil. Cover, and let rise in a warm place until doubled, about 45 minutes.
- Punch down the dough, and let rest 10 minutes. Divide into 4 balls. Place on cookie sheets, and flatten into disks. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F (190 degrees C).
- Lightly beat the egg white with the water and brush the risen loaves with this mixture. Bake at 375 degree F (190 degree C) for 40 to 50 minutes. When done bread should sound hollow when thumped on bottom. Remove from oven, and let cool.
- Cut a circle out of the top of each loaf, and remove that part of the crust. Either remove the soft bread beneath, or compress it to form a bowl.

- Stir yeast and granulated sugar into the water. Set aside to proof.
- In a large bowl, measure out 4 1/2 cups of flour with the salt. Stir. Add in the melted butter and stir to cool {if the butter was still warm from being melted.}
- Pour in the yeasty water mixture and stir with the dough hook to combine. You may have to scrape as you go to incorporate all of the flour. Once the dough comes together, keep sprinkling in flour until dough cleans the sides of the bowl and it is sticky to the touch but won't stick to your hands. {I added in 5 3/4 cups total.}
- Knead 6 minutes. Grease ball of dough and bowl generously, cover with plastic wrap, and set in a warm spot to rise 1 hour or until doubled in size.
- Punch down dough, divide into eight equal portions, form into balls, and place on the baking sheet to rise another 30 minutes to an hour.
- Preheat oven to 350 degrees. Brush bread bowls with beaten egg {optional step} and bake 15-20 minutes until golden brown. Remove from oven and cool 20 minutes.

LENTIL SOUP IN BREAD BOWLS

- Cook the pancetta in a heavy-bottomed 4- to 5-quart pot over medium heat, stirring occasionally with a wooden spoon, until crisp and the fat has rendered, about 10 minutes. Add the onion and jalapeño pepper. Season with salt and sweat until soft and translucent, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute.
