Brazilian Peanut Fudge image

You can make this easy fudge-like sweet using salted peanuts if you like. This will give it a slightly salty bite which is common in Brazil.

1 (8 ounce) jar roasted peanuts, skins removed
1 (8 ounce) package tea biscuits (such as Marie Biscuits)
2 tablespoons white sugar
1 (14 ounce) can sweetened condensed milk

Steps:

  • Line a 9-inch square dish with waxed paper.
  • Pulse the peanuts and biscuits together in a food processor until the mixture resembles coarse flour. Add the sugar and pulse to mix. Pour the sweetened, condensed milk into the mixture and process until the mixture forms a ball that pulls away from the sides of the food processor bowl.
  • Transfer the mixture to the prepared dish and press with your hands into an even layer. Allow to sit at least 15 minutes, up to overnight. Remove from the dish and cut into squares to serve. Store in air-tight containers between uses.

9 whole graham crackers
1-3/4 cups dry-roasted peanuts
2 tablespoons sugar
1 can (14 ounces) sweetened condensed milk
1/2 teaspoon vanilla extract
Dash Himalayan sea salt

Steps:

  • Line a 9-in. square baking pan with parchment, letting ends extend up sides. Place graham crackers and peanuts in a food processor; pulse until just ground. Add sugar; process 10 seconds. Add sweetened condensed milk, vanilla and salt; pulse until dough comes together., Press dough into prepared pan. Refrigerate, covered, at least 4 hours or overnight. Lifting with parchment, remove from pan. Cut into bars. Store in an airtight container.

These little Brazilian chocolate candies-called brigadeiros- that look like truffles but are much simpler to make.

1 (14-ounce) can sweetened condensed milk
4 tablespoons cocoa powder
1/4 teaspoon salt
3 tablespoons unsalted butter
1 teaspoon vanilla extract
Chocolate sprinkles

Steps:

  • Pour the condensed milk into your heaviest pot. Stir in the cocoa powder and the salt.
  • Cook, stirring constantly, over low heat. Keep the mixture barely at a boil to prevent burning and sticking.
  • Cook for 10 to 15 minutes, stirring constantly until the mixture becomes very thick and shiny and starts to pull away from the bottom and sides of the pan.
  • Remove from the heat and stir in the butter and vanilla.
  • Chill in the refrigerator for 20 to 30 minutes. With buttered hands, roll the mixture into 1-inch balls.
  • Roll each ball in the chocolate sprinkles and place in a paper cup.
  • Chill until ready to serve.

Nonstick cooking spray, for the foil
2 cups semisweet chocolate chips
One 14-ounce can sweetened condensed milk
1/2 cup peanut butter
1/2 cup kettle-cooked chips, lightly crushed
1/2 cup thin pretzel sticks, lightly crushed

Steps:

  • Line an 8-inch square baking pan with aluminum foil. Coat the foil with cooking spray.
  • In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk. Cook, stirring, until melted and smooth, 6 to 8 minutes. Pour the mixture into the prepared baking pan and spread to even out the surface. Top with spoonfuls of the peanut butter. Using a skewer or butter knife, swirl the peanut butter into the chocolate mixture. Sprinkle over the crushed chips and pretzels. Let the fudge cool for 30 minutes on the counter, then lightly cover and refrigerate for 1 hour.
  • Lift the foil out of the pan and peel it from the fudge. Cut into small squares to serve.
