Steps:
- Heat grill to medium-high heat.
- Cut steak crosswise into 6 pieces, then cut each piece across the grain into 4 slices. Place steak pieces in medium bowl. Add 2 Tbsp. Worcestershire sauce; mix lightly. Thread steak pieces onto 8 skewers alternately with sausage and onions.
- Blend remaining ingredients, including remaining Worcestershire sauce, in blender until smooth.
- Grill kabobs 10 min. or until steak is medium doneness, turning frequently. Serve with chimichurri sauce.

STEAK GAUCHO-STYLE WITH ARGENTINIAN CHIMICHURRI SAUCE

- Preheat a grill.
- Place all chimichurri sauce ingredients in a blender or food processor and pulse until well chopped, but not pureed. Reserve.
- Dissolve cayenne pepper and salt in 1 cup hot water. Transfer to a squeeze container.
- Place the steak directly over a hot grill, baste with the chimichurri grilling sauce, and grill until the outer portion of the meat reaches the desired degree of doneness. Remove the steak from the grill and slice long strips from the outer edges of the steak. Instruct guests to pick up a steak slice from the cutting board with their fingers, place it on a slice of baguette, and enjoy. Return the remaining steak to the grill, baste, and grill until more of the steak is cooked. Remove and repeat the slicing and serving procedure until steak is consumed. For extra spicy steak, baste 2 or 3 additional times with the cayenne pepper mixture during grilling process. Spoon chimichurri sauce over steak. (Also brilliant on any grilled fish or chicken)

- In a medium mixing bowl, whisk together the lime juice, red wine, onion, garlic, olive oil, salt and pepper. Add the kebab meat. Cover and chill for at least an hour. Stir this once or twice if the meat isn't completely submerged.
- Once the marinating is complete, thread pieces of the meat onto skewers. I usually do three pieces on each skewer. Continue until all the meat has been used.
- Heat a grill pan over medium heat on the stove. Add the kebabs and cook, flipping once, for about 4-6 minutes per side to desired doneness. Alternatively, these can be cooked on a grill.

- Prepare the grill for two-zone (or direct/indirect grilling) method with lump charcoal. (While the grill is coming to temperature is a great time to make the chimichurri.)
- Starting with the fat cap side, carefully remove excess fatty layers so the fat cap is about 1/4 inch thick. Then flip the roast over and remove any silver skin or pockets of fat that are on the underside of the roast.
- Make X marks across the fat cap. This will not only allow the rub to get into the fat layer, it also helps when grilling the skewers as the fat renders and falls into the fire.
- Slice the roast into about 2-inches thick slices aiming to keep each slice even. You will likely get five steaks.
