- Place the chicken in a shallow, non-metallic dish and cover with all the other ingredients and mix everything together. Cover and chill for at least 2 hrs, or overnight if possible. Bring to room temperature 1 hr before grilling.
- Thread half the thighs onto 2 large metal skewers, or wooden ones soaked in water for 10 mins. Repeat with the remaining thighs and another 2 skewers. Heat an outdoor barbecue until very hot, or use an oven grill. Place on the grill for 6 mins on one side, then turn over and cook for 4 mins. Cook for a few mins more on each side if they are large - keep the heat on medium so they don't burn. Remove and keep warm under foil.

- Whisk vinegar, garlic, and paprika together in a large bowl. Add chicken and turn to coat. Let marinate in the refrigerate, at least 1 hour.

Churrasco is the national barbecue of Brazil, where spit-roasting has been raised to the level of art. Think whole meal cooked on a rotisserie and don't think of a barbecue season without it. Simply defined, churrasco is a Brazilian mix grill with the meats cooked on a rotisserie. Some people believe that the word churrasco comes from Spanish, socarras, meaning to burn or singe. You know, the socarrat, that burnt crusty part on the bottom of a paella pan that everybody wants. So from socarrat to churrasco? Well, it's an easy leap if you drink enough caipirinhas. It starts with a cut of beef you probably haven't heard of. It's called picanha in Brazilian and top capped sirloin in the U.S., and it's actually the top piece of sirloin with this thick cap of fat. Another recipe I found in Steven Raichlen's "The Barbecue Bible" and this is what he states about the recipe: "The United States isn't the only place where beer and barbecue are inextricably interwoven. In Rio de Janeiro, I came across this savory grilled chicken, which owes its exceptional succulence to a two-day bath in beer. Try, if possible, to find a Brazilian beer if you can: Antarctica (a pilsener-style brew) will produce a mild-flavored chicken; Xingu Black Beer (a dark bitter stout) will produce a bird with a rich, malty flavor. Serve with Crazy Rice or Brazilian Black Beans with Bacon. Note: Time doesn't include the 6 - 48 hours for marinating.

- Combine the beer, oil, mustard, paprika, and pepper in a large nonreactive bowl and whisk thoroughly to blend. Stir in the onion, garlic, and bay leaves.
- Rinse the chicken pieces under cold running water, then drain and blot dry with paper towels. Add to the marinade in the bowl and turn to coat. Cover and let marinate, in the refrigerator, for 6 hours or up to 2 days (the longer the better), turning the pieces occasionally.

If you get flare-ups, move the chicken to the safety zone until the flames die down. During the first 10 minutes only, brush several times with the reserved marinade.

After watching Brazil come back from 2-0 to beat the US 3-2 in soccer last weekend, I got an itch to try some Brazilian BBQ. If figured if I can't rejoice in victory, at least I can enjoy the food they'll serve at their parties! This Brazlian chicken is really tender and delicious...and uses beer, one of my favorite BBQ ingredients. You won't be disappointed!

- Combine the beer, oil, mustard, paprika, and pepper in a large bowl and whisk. Stir in onion, garlic, and bay leaves Put chicken and marinade in a large ziplock back, remove air, and seal. Refrigerate for at least 6 hours, preferably up to 2 days. Preheat grill on high on one side and medium on the other. When ready to cook, remove chicken from marinade and reserve excess marinade. Season generously with kosher salt. Oil the grill grate and arrange chicken skin side down on hot side of grill. Cook about 4-5 minutes or until charcoal starts to flame. Move to the cooler side and continue grilling another 6-7 minutes until skin is nicely browned. Turn the pieces skin side up and move back to the hotter side. Brown the underside well, about 4-5 minutes, then move back to the cooler side to finish grilling for about 6-7 mintues. Total cooking time will be 20-24 minutes, and chicken will be cooked to perfection! (This cooking method tip is adapted from The Barbecue Bible). Transfer to a serving plate and serve immediately!
