Steps:
- Using an electric mixer or food processor, beat or process braunschweiger, chili sauce, horseradish and hot pepper sauce until well mixed. Cover and refrigerate until mixture firms up, for approximately 1 hour.
- In a medium-sized mixing bowl, mash cream cheese with mayonnaise until smooth and spreadable. Turn liverwurst mixture out onto a sheet of foil and mold it into a ball. Using a small spatula, frost with cream cheese mixture. Decorate with sliced stuffed green olives.

- 1. Combine softened cream cheese and braunschweiger, blend well with a fork.
- 2. Add relish, garlic salt and worcestershire sauce, mix well.
- 3. With your hands, pat into a ball or loaf, roll in the chopped pecans and chill

- DIRECTIONS Place the cream cheese, liverwurst, cheese, and spices in a food processor. Pulse to combine. Spread out plastic wrap and place the cheese mixture on the plastic, cover and form it into a ball. Place the cheese ball into the refrigerator and let it chill until firm 1-2 hours. Place the bacon and nuts on parchment paper. Roll the cheese ball in the bacon, and nuts, if using, until covered. Serve with your favorite crackers.

- Let braunschweiger and cream cheese set at room temperature until softened.
- Mix braunschweiger, onion, chili sauce and 3oz of cream cheese together until well combined.
- Form into a ball and refrigerate for 1 hour to firm ball.
- After 1 hour, remove ball from refrigerator and carefully spread the 5oz of cream cheese over top.
- Lay sliced olives over the surface.
- Chill then serve with crackers.

- 1. Into my Large stand mixer I add the braunschweiger and cream cheese, onions, beer and worcestershire sauce. I mix it very well so there are not big clumps of braunschweiger or cream cheese.
- 2. I turn it out onto waxed paper or parchment. I form the ball or make smaller ones for gifts to share, at this point. Using the leftover creamcheese for frosting the balls, them garnish them how ever I think is neat. Use capers, green or black olives, parsley...basically anything savory.
- 3. Place wrapped into the refrigerator for 5 hours to set up!!! You will get loads of compliments and raves for the recipe!!!
BRAUNSCHWEIGER AND NUT BALL
My grandmother made this appetizer for family get togethers ever since I was a child, and I now make it every Christmas Eve for the family. It's very easy to make and even the kids like it. I have used chopped pecans, but the walnuts are my favorite. Serve with crackers.

- Soak the liver in water in the fridge for 1-2 days, changing the water as often as you can remember. In the bowl of a food processor or high speed blender, pulse all the ingredients except the baking powder and breadcrumbs, then puree until as smooth as possible, it should a smooth puree, and be loose enough to pour.
- If you're using store-bought bacon, consider using a blender to ensure it becomes smooth. Transfer the liver puree to a bowl, add in the breadcrumbs, stir well to combine and allow rest, covered, for at least 30 minutes.
- Sift the baking soda to break up lumps, then beat into the meat mixture. Using a scoop, or two large spoons, form dumplings about the size of small golf balls, or 22 grams, and poach in the stock for 10 minutes at a gentle simmer, then remove, and add to soup (see note).
