OKTOBERFEST CASSEROLE
In northeastern Ohio, we love German flavors. This delicious casserole is a trifecta mashup of my favorite dishes. It combines the flavors of classic cheesy hash brown casserole with bratwursts and sauerkraut, pretzels and beer cheese. It takes less than 10 minutes to mix and takes only one bowl. It's sure to please everyone any time of the year. —Sarah Markley, Ashland, Ohio

OKLAHOMA COMFORT FOOD: BRATS, CABBAGE AND GREEN BEAN CASSEROLE
This unusual combination of ingredients in a pot came to us through a friend by way of her mother. Our friend's mom takes food to families who have suffered a death in the family. They take all sorts of things but this always goes first. It is tasty. She uses kielbasa but we use brats. We also use Splenda instead of sugar. It freezes and reheats well.

- Preheat oven to 350°F. Sear the sausages in a pan with a little oil. Once browned on both sides, add in the beer, deglaze the pan and bring to a simmer. Simmer for 15 minutes until mostly cooked through but a little pink in the center.
- Meanwhile, grate the cheese and mix it with the cream cheese. It will be clumpy and hard to mix, but that's okay.
- Line the baking dish with hashbrowns and press them down to form a crust. Strain the beer from the sausages into a measuring cup. Put the sausages onto a cutting board and let them sit for 5 minutes. Whisk the beer into the cheese mixture to form the sauce.

- Lower the heat to medium and sauté the onion until soft and just beginning to caramelize. Stir in the drained sauerkraut.
- Add the brown sugar, caraway seeds and bay leaf. Add the beer and stir everything well. Bring to simmer. Season with salt and pepper.
- Simmer uncovered for 15-20 minutes until most of the braising liquid evaporates. Nestle the browned bratwursts within the simmering sauerkraut and braise together to cook them through. If using pre-cooked do so at the very end, if using raw braise add them to the skillet in the beginning.
