Southern Fried Cabbage With Sausage image

This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

8 bratwurst
1 cup water
1 cup beer
1 tablespoon olive oil
½ red onion, thinly sliced
½ head red cabbage, sliced
¼ head green cabbage, sliced
½ cup apple cider vinegar
1 tablespoon brown sugar
2 teaspoons paprika
1 teaspoon sea salt
1 teaspoon ground black pepper
½ teaspoon ground allspice
German or deli-style mustard

Steps:

  • Prick each brat with the tip of a knife a few times on each side.
  • In a large skillet, place brats and add water and beer to the pan to reach halfway up the sides of the brats.
  • Cook over medium heat for 15 to 20 minutes, turning once.
  • Increase heat to medium-high and cook another 5 to 10 minutes or until liquid evaporates. Remove sausages to a plate to hold.
  • Add olive oil, onion and red and green cabbage to the pan and stir well, cooking over medium-high heat for 3 minutes.
  • Add vinegar, brown sugar and seasonings, stir well and reduce heat to medium.
  • Cover and cook for another 5 minutes. Stir once more.
  • Meanwhile, warm hot dog buns in a 400-degree oven for about 10 minutes, taking care not to brown.
  • Spread mustard on each bun, top with a brat and spoon warm cabbage saute on top.

Steps:

  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic to pan, cook until fragrant and soft, about 3 minutes.
  • Add cabbage to pan and toss well to coat in butter.
  • Generously season with salt.
  • Let cabbage reduce by half, about 10 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly.
  • Slice smoked polska kielbasa into thin rounds and add to pan with cabbage and onions.

1 large sweet onion
1 package (19-1/2 ounces) turkey bratwurst links, casing removed and cut into 1-inch pieces

  • Poke holes in the beer bratwurst and pre-cook the package in the microwave for about 4 minutes. (This gets alot of the grease out.) After pre-cooking, cut the bratwurst into 1/2 inch slices and set aside.
  • Put onions, bell peppers, and cabbage in a pot with oil. Cover and cook on medium for about 30 minutes. Check it often and stir.

Kosher salt and freshly ground black pepper
1 apple, thinly sliced

Steps:

  • Place a large cast-iron skillet over medium-high heat. Add vegetable oil and heat until shimmering.
  • Carefully place the brats in the skillet and cook, turning occasionally, until browned on all sides, 6 to 8 minutes. Add apple juice and reduce heat to medium-low. Cover the skillet and cook until the sausages are cooked through, about 10 minutes more. Remove the sausages and set aside, leaving any cooking liquids in the skillet.
  • Add the onions and cook, stirring occasionally, until they have softened and browned slightly, about 5 minutes. 5 bratwurst sausages
1/4 c apple cider vinegar
1 Tbsp sugar
2 Tbsp water
3 Tbsp olive oil
1 Tbsp mustard (i used beer & brat mustard)
2 large red potatoes
1 Tbsp vegetable oil
1 medium onion chopped
1/2 head green cabbage sliced thin
salt and pepper to taste

Steps:

  • 1. In large skillet brown bratwursts. Remove to plate and place in oven at 200 degrees. Do not clean the pan.
  • 2. In medium bowl whisk vinegar, sugar, water, olive oil and mustard.
  • 3. Poke potatoes several times with prongs of a fork Wrap loosely in paper towels and microwave on high for 2 minutes. Allow to cool for a few minutes. Cut potatoes in large bite size chunks. Add potatoes to Ziploc bag and add 1 tablespoon vegetable oil. Shake to coat. Heat same skillet over medium heat. Add potatoes and cook for 3-5 minutes; stirring several times. Turn heat to medium low. Add onions to skillet with potatoes and cook 10 minutes or until potatoes are starting to brown; stirring several times. Add cabbage to skillet; cook for 10 minutes. Stirring several times. Pour 1/4 of the mustard vinegar sauce in pan with potato/cabbage mixture cooking 1-2 minutes before repeating. Repeat process until all the sauce is gone.
  • 4. Add brats back to the pan and warm for 1-2 minutes. Salt and pepper to taste.
